If somebody had told me that the viral TikTok Carrot Salad would become one of my favorite recipes this month, I would have dismissed it with a wave of my hand. But, to my surprise, it was indeed that good!

I couldn’t resist making a small change to the original recipe. After all, I wouldn’t be me if I didn’t put my own spin on things.

However, I must give credit where credit is due. I am bowing down to whoever created this incredible dish, so if you know who the is creator please do let me know. I have seen videos but I do not actually know who posted it first so let me know so I could tag them.

I do recall that the original recipe called for the addition of lime or lemon. However, I decided to switch it up and use Ponzu instead.

The tangy and citrusy flavor of ponzu perfectly complemented the sweetness of the carrots. It added a refreshing and unique twist to the salad that took it to a whole new level.

The TikTok Carrot Salad has truly won me over. Its simple yet vibrant combination of flavors, paired with the satisfying crunch of the carrots, make it a delightful dish to enjoy. Whether as a side dish or a light meal on its own, this salad has become a staple in my kitchen.

So, if you’re skeptical like I was, I urge you to give this TikTok Carrot Salad a try. Trust me, you won’t be disappointed.

Shaved carrots perfectly matched Japanese ponzu sauce along with sesame oil and furikake, which contains nori (dried seaweed), sesame seeds, sugar, and salt. Also, sometimes and often it includes some form of dried fish, typically bonito flakes.

Easy and tasty recipe for Viral TikTok carrot salad

Prep Time 10 minutes
Total Time 10 minutes

Ingredients

  • 2 large carrots
  • 1/4 cup ponzu sauce
  • 1 pinch of black pepper
  • 1 teaspoon sesame seed oil
  • 1 tablespoon furikake seasoning (or sesame seeds)

Instructions

  1. Wash and peel carrots.
  2. Using a veg wide peeler if available, "shave" carrots into thin ribbons. If a carrot is extra large or thick, slice it in half and try doing it that way.
  3. Pour ponzu sauce over it, season with salt and pepper, and drizzle with sesame seed oil. Mix well. Allow it to sit for about 10 minutes before serving. Sprinkle furikake over it just before serving.

Notes

If you do not have furikake, you can use toasted sesame seeds.

I like shopping at Asian markets, where I find extra thick carrots but regular ones will do as well, however, the carrot ribbons will look much smaller.

If you do not have ponzu sauce, try this sauce:

  • 4 tablespoons soy sauce (or tamari)
  • 2 tablespoons of lemon juice or lime juice
  • 1 teaspoon freshly grated lemon zest
  • 1/4 teaspoon sugar (or any other sweetener)
  • 1 teaspoon rice vinegar

I changed some things like making my avocado dressing for this salad and creating something that will please my taste buds and I hope yours also.

Just to add that this would be a fantastic option for vegetarians if you just omit the chicken, of course. You can for example roast some chickpeas or perhaps make some firm tofu. If you ask me that would be a wonderful meat replacement.

With that being said, you can use other protein instead of chicken such as steak. ahi tuna, or turkey burgers. Those are some ideas from the top of my head. You can truly be creative and make this salad even more delicious.

Copycat Chick-fil-A Market Salad is a simple and wonderful better for you lunch idea.

Ingredients

GRILLED CHICKEN:

  • 8-ounce chicken breast (apx.175g); 1 chicken breast
  • 1 tbsp. extra virgin olive oil
  • ¼ tsp kosher salt
  • ⅛ tsp ground black pepper
  • ¼ tsp paprika
  • ¼ tsp. garlic powder

SALAD

  • 2 cups spring mix salad chopped
  • ¼ cup blueberries
  • ½ cup strawberries, cut in half
  • ½ granny smith apple chopped
  • ½ gala apple or similar
  • ½ cup blue cheese crumbled, or feta (or omit)

AVOCADO- RANCH DRESSING

  • 1 ripe avocados, washed, cut in half, pit removed and flesh scooped out
  • ¼ cup mayo, I like one with olive oil
  • 1 tablespoon extra virgin olive oil
  • ⅛ cup buttermilk
  • 2 tablespoons lime juice (lemon works too)
  • ½ teaspoon garlic powder
  • ½ teaspoon onion powder
  • ½ teaspoon ground cumin
  • 1 tablespoon chopped cilantro
  • ¼ teaspoon dried dill
  • ⅛ teaspoon sea salt
  • ⅛ teaspoon black pepper
  • ¼-½ tablespoon water

OPTIONAL TOPPING

  • 1 tbsp. sliced almonds or walnuts
  • 1 tbsp. granola

Instructions

  1. Place the chicken breast on a platter and season with the seasonings. You can do this a night before to create even more flavor. The chicken should then be grilled for about 10 to 12 minutes, depending on the size and your grill, or until the breasts are fully done at internal temp of 165 degrees. I used indoor grill.
  2. You can start putting together the salad as the chicken grills. Combine lettuce with strawberries, blueberries, and apples. You can arrange everything in lines over the lettuce or lightly toss it with dressing before adding chicken, which I do if I am making it for myself.
  3. Slice the chicken into thin pieces or strips and place it on top of the salad, but you can lightly toss it in.
  4. Make Dressing by putting everything in a food processor a a blender. You can use a fork but the outcome will me different.
  5. Drizzle a bit of dressing over it and envoy!

Notes

I tried to strick to what was in my salad. However, with such a great dressing I thought addition of cheese is unnecessary. Also, you can add both types of apples because they do add different flavor, crunch and flavor. In my opinion granola is really not needed, but you do you and add if you like that idea.

You can grill chicken indoor/outdoor, or use pan or air fryer to cook it. Of course grilled chicken gives that extra flavor but if you do not have a grill, hey, cooking it in a pan is fine too.

Also, you may use any mixed greens you have or prefer. If you do not like lettuce use kale and cabbage.

Pork Steak Rolls with Cream Cheese, among other things, are comfort food that I could consume at least three times a week. My children are as captivated by it as I am.

Every time I return from my weekly grocery store runs, my youngest son requests me to prepare it.

The reason I don’t make it three times a week is that we can eat an entire platter of them in under 10 minutes.

It goes well with salads, pasta, rice, sandwiches, eggs, and fries. You name it, and these pork rolls may be filled with just about anything.

Because I know many of you don’t eat pork, I’d recommend trying it with chicken instead. Make sure to pound the chicken breasts until they’re thinner, then stuff them with cream cheese.

Pork Steak Rolls with Cream Cheese

So this pork roll was something I grew up enjoying. It’s a lot like Karaore’s schnitzels, which are rolled veal or pig steaks packed with Serbian “kajmak.”

In that way, it’s similar to whipped cream cheese, but it doesn’t taste like cream cheese; yet, we can use it in place of cream cheese in this dish, as I did.

It’s frequently accompanied by roasted potatoes and tartar sauce.

Also a fun fact, because of its phallic shape, the steak is also referred to as the maidens’ dream.

Chef Mica Stojanovic invented the dish in 1959 when he wanted to cook Chicken Kyiv for a prestigious visitor.  There was a shortage of poultry so instead of chicken, he used veal.

However, he was not entirely satisfied with the result, so he poured tartar sauce over it and garnished it with a slice of lemon and tomato slices, which resembled the Order of the Star of Karaoke medal in the end, and thus the steak was named after a Serbian revolutionary Karađorđe. source: Wiki

Easy way to create something very delcious. It goes well over pasta, rice, or potatoes.

Ingredients

  • 6-8 (1.5 lbs-2 lbs.) boneless pork loin; pork steak
  • 1 tablespoon salt
  • 1.2 tablespoon ground black pepper
  • 3-4 tablespoons cream cheese
  • 5 tbsp. all-purpose flour for dusting; use more if needed (for low carb almond flour)
  • 2 large eggs, well beaten
  • 1 1/2 cup breadcrumbs (pork rinds crumbs or almond flour for low carb)
  • 1/2 cup Oil, more if needed

Instructions

  1. Pound pork steaks with a meat tenderizer until they are thinner, then season with salt and black pepper on both sides.
  2. On each steak add about 1/2 tablespoon of cream cheese. Wrap the meat into the rolls. Place them in the baking pan and cover them, as seen in my pic above, and allow them to chill for 30 minutes in the fridge. You can also wrap it in the film (plastic wrap) or anything similar.
  3. After 30 minutes, coat each in the flour, dip them into beaten eggs, and finally, roll in bread crumbs. If bread crumbs are unsalted then add a generous of salt and pepper.
  4. Heat a skillet to medium-high, and fry in oil until golden in color. every 2 minutes turn around until the right color is reached. Please it on the plate lined with a paper towel so excess oil could be removed. I like to slice one in the middle just to ensure it's cooked through, however, pork is done when the internal temperature reaches 145°F. Keep in a warm oven until ready to serve.
