Nothing could make me happier during hot summer days than good old BBQ, smoked sausages, grilled steak, etc. The list is pretty much endless.

Anything that’s coming from my grill or smoker is like the best thing in the world to me.

My family and I spend so much time outside during summer break grilling, and I assume many other families do the same.

Today I am sharing the best way to prepare Smithfield® Craft Collection™ Yuengling® Traditional Bratwurst.

They are smoked to perfection with Mesquite flavor of the pallets, then topped with sauerkraut (also cooked in my smoker in an iron skillet), then placed in a warmly toasted hoagie.

I mean can I hear you cheer, please? These were the bomb. My family couldn’t stop eating them and I am doing it next weekend because they keep asking for more. Who am I to say no, right?!

I was overwhelmed with the flavor in a good way; as well as the texture and overall perfection of the bratwurst.

My husband, who by the way lived for quite some time in Germany, can say that these are LEGIT and are really darn good sausages.

The Smithfield bratwursts are infused with real Yuengling Traditional Lager, are made with premium cuts of pork and a special blend of sweet and savory spices and no MSG.

It has roasted caramel malt for a subtle sweetness and pairs great with grilled food. I mean beer and brats are the perfect pairings, don’t you agree?

Yuengling beer is from America’s oldest craft brewery and it has an amazingly rich amber color.

Prep Time 5 minutes
Cook Time 30 minutes
Total Time 35 minutes

Ingredients

  • 2 packs Smithfield Craft Collection Yuengling Traditional Bratwurst
  • 1 jar Sauerkraut
  • 1 tbsp. Oil
  • 3 Cloves garlic
  • 1 tsp. Ground Black Pepper
  • Hoagie Bread Buns

Instructions

  1. Place the bratwurst on the grill.
  2. For the best results, cook on the lower temperature, between 300 and 350°F, for about 10 minutes on one side and 10 minutes on the other.
  3. Close the lid and allow the bratwurst to smoke for an additional 10 minutes.
  4. The internal temperature of the bratwurst should be 160°F.
  5. While the bratwurst are grilling, prepare sauerkraut.
  6. Heat up the iron skillet and sauté minced garlic on the drizzle of oil.
  7. Add sauerkraut and sauté for a couple of minutes. Let it cook on the grill for 10 minutes, then close the grill and smoke it for additional 10 minutes. Add a few pinches of ground black pepper. I like to cook sauerkraut just in time for when I need to smoke bratwursts, so they are both done at the same time.
  8. Last but not least, open up the hoagies and grill them for a minute or until you get nice grill marks.
  9. Serve immediately.

My family loved it too. Well, I do not make it often and we are not vegan or vegetarian, but I enjoy every few days a nice plant-based meal. I even crave salads!

To some of you, that might be strange but it is honestly true. Besides, broccoli and cauliflower are amazing in every possible way.

I wanted to stay with a completely vegan meal. Which is not mandatory, of course, since we are not vegans or vegetarians.

However, I wanted to go along with the theme and create our lunch so my family can actually see that vegan lunch can be delicious.

My boys are always running away from the idea but this turned around. We all truly enjoyed it.

I tossed some thawed organic broccoli and cauliflower with these meatballs. Also, I made this delicious veggie-packed spaghetti to go with it.

It was truly one remarkable meal. To be honest, you do not need a whole bunch of food to create an amazing meal for a family.

They will love anything that I make so I try to use simple ingredients to create a wonderful dinner.

Of course, you can eat it just like this, or you may serve it with rice, quinoa, or any type of pasta.

Meatless Meatballs with Cauliflower and Broccoli

Ingredients

  • 1/2 tbsp. Olive Oil
  • 6 Gardein Meatless Meatballs 3 per serving
  • 1 cup Frozen Broccoli
  • 1 cups frozen Cauliflower
  • Sprinkle: Lemon-Black Pepper Seasoning unsalted
  • Sprinkle: Red Chili flakes
  • Sprinkle: Dried Parsley
  • Sea Salt to taste

Garnish

  • A drizzle of Chili Oil
  • Fresh Italian Flat Leaf Parsley
  • Serve it with SuperGreen Pasta

Instructions

  1. Follow meatless meatballs cooking instructions according to a package. I prefer thawing the meatballs then just cooking them defrosted until light brown on hot oil for a couple of minutes, turning every 30-40 seconds.
  2. After meatballs are lightly brown toss them with (slightly) thawed Broccoli and Cauliflower. You could use raw, fresh vegetables, just make sure to blanch them just before tossing them with meatballs. Cook vegetables for a minute or two on medium-high heat.
  3. Season with seasoning to taste.

Notes

KITCHEN TIP: HOW TO THAW FROZEN VEGETABLES:

Put frozen vegetables in a colander or a strainer and run cold water over the vegetables until thawed. If you are thawing Spinach or kale, make sure to squeeze out excess water. I finish pasta at the same time I finish this dish so I could serve it together. This is also very easy to cook ahead and refrigerate for up to 2 days or freeze it for a month.

The reason why I do not keep broccoli and cauliflower longer than 2 days: It has a very particular smell if it stands in the fridge for too long.

I recommend no longer than 2 days. you can always freeze it and reheat. You can serve this with whatever you wish or eat it on its own. I like this green pasta very much.

Cook Time 15 minutes
Total Time 30 minutes

Ingredients

  • 1 tbsp. Oil
  • 1 lb. Ground Beef
  • 1 can Black Beans
  • 1 can Corn
  • 1 cup Taco sauce
  • 1/4 cup Tomato sauce
  • 6 to 8 medium size tortillas
  • 2 cups Mexican Cheese blend

Seasoning

  • 1/4 teaspoon Salt or to taste
  • 1/2 teaspoon Ground black pepper
  • 1/2 teaspoon Chili powder
  • 1/2 teaspoon Garlic powder
  • 1 teaspoon Cumin
  • 1/2 Tablespoon Onion powder

Instructions

  1. Preheat oven to 400F.

  2. Add oil and ground beef to the skillet, and saute until well done, about 4-5 minutes on medium-high heat.

  3. To cooked meat add black beans, corn, and seasoning. Stir well to combine and cook for a minute longer to just heat through the beans and corn.

  4. Add about a ladle of the mixture on the bottom of the baking pan and sprinkle just a bit of cheese to help that first layer kind of glue itself to each other.

  5. You can cut tortillas into smaller pieces, or look at my pictures to see how I did it.

  6. Add about one ladle or two on top of tortillas then sprinkle cheese, and keep layering.

  7. Make sure to have about ladle or two of the mixture for the last layer and enough cheese to cover from one end to the other end of the baking pan.

  8. Bake lasagna for 15 minutes or until the cheese is completely melted. We want just to marry the flavors and melt the cheese because everything else is cooked already.

  9. Take it out of the oven and serve with salad and/or sour cream. Garnish with chopped parsley or chopped scallions.

Notes

SUBSTITUTE INGREDIENTS:

You may use ground chicken or ground turkey instead of beef. You may use any beans on hands, preferably pinto or black beans. Instead of taco sauce, you can use salsa and instead of tomato sauce, you can use crushed tomatoes.

You can use any tortilla. I used homestyle, handmade small jalapeno tortillas from Sprouts Farmers Market, but you may use any on hand.

You can use Taco Cheese blend or shredded mild cheese instead of Mexican cheese blend. – You can FREEZE this before you bake it in the freezer/oven safe dish, or you can freeze it after it is baked. You can also keep it in the fridge for 3 to 4 days just for an easy meal. Heat and heat. – You can also make this as little as you want or double it. If you have a big family I would double it because it extremely tasty and versatile so you will go for seconds.
