Summer Quesadilla Burgers

Summer Quesadilla Burgers
Prep Time 10 minutes
Cook Time 15 minutes
Total Time 25 minutes

Ingredients

  • 1 lb (450 g) ground beef
  • 1 tsp (5 g) salt
  • ½ tsp (2 g) black pepper
  • ½ tsp (2 g) sweet paprika
  • ¼ onion (30 g), chopped
  • 2 to 4 slices per burger Borden Cheese Melts, American
  • 8 small/or medium flour tortillas
  • 8 tbsp (120 g) chili mayo/spicy mayo or guacamole
  • 4 tsp (20 ml) olive oil, if cooked in skillet

Optional toppings:

  • lettuce, tomato, jalapeños, salsa, Pico De Gallo, guacamole sauce, etc.

Instructions

Step 1:

  1. In a bowl, season ground beef with salt, pepper, minced onion, dried parsley and garlic powder. Form into patties. This makes 4 quarter pounder patties.
  2. Grill or cook in a skillet over medium-high heat for about 4 minutes per side, or until fully cooked (160°F/71°C internal temp).
  3. Set aside to rest. I like to make patties the size of my tortilla so you could smash them a bit to make them thinner, but wider, or you can use smaller tortillas.

Step 2:

  1. Brush tortillas lightly with olive oil.
  2. Spread a thin layer of spicy mayo on one side, then add cheese, one or two slices per tortilla.
  3. Add two on each tortilla gives you the ultimate cheesy burger quesadilla..

Step 3:

  1. Layer: tortilla, cheese, burger patty, toppings (if using), cheese, and tortilla with a bit of spicy mayo.

Step 4:

  1. Place the full quesadilla burger on a grill or skillet over medium heat.
  2. Press down gently with a spatula and cook for a minute or so per side, until golden and the cheese is perfectly melty.

Step 5:

  1. Slice and serve hot!
  2. I like cutting them into halves or quarters—it makes them easy to eat and shareable.

Notes

  • Use Borden American Melts for that classic gooey flavor, or Pepper Jack for a spicy kick.
  • Serve these with tortilla chips, grilled corn, or a crunchy cabbage slaw.
  • These reheat surprisingly well in the air fryer—perfect for next-day leftovers.
  • Make a batch of burgers ahead and set up a “quesadilla burger bar” for summer parties. Everyone can build their own!
