When it comes to easy meals Ground Beef Stuffed Spaghetti Squash could not be easier. It does take a bit more time to complete it, but nothing hard at all. I promise! 

My family actually really enjoyed eating spaghetti squash. It is low carb, and keto-friendly, which we prefer.

Well, my family did make a little fun of me because it seems that I can’t stop talking about the Ketogenic diet.

Simple, delicious and low-carb meal

However, when they went on it I was laughing at them because they could not stop taking either. Keto is magical and pretty much the only diet that worked for me.

Jokes on the side, I loved preparing this one so much. Well, I could never think that the spaghetti squash tasted this good.

I mean, it is a squash and I was never a huge fan of it until I tried this one. To be honest, I only loved the oven-roasted squash drizzled with some maple syrup. Maybe, sprinkled with cinnamon and sugar.

I am talking about regular squash like butternut, but this one is savory and absolutely delightful.

My amazing friend, Andrea, of @nashvillemade on Instagram, told me to slice it this way and I never looked back again. It is just fantastic!

I know that many people slicing it in half and you can do that but the roasting time takes far more time and this way looks more like portion size and cooks faster.

Ground Beef Stuffed Spaghetti Squash

Ground Beef Stuffed Spaghetti Squash

Simple low carb meal idea.

Prep Time 10 minutes
Cook Time 40 minutes
Total Time 50 minutes

Ingredients

  • 1 Medium Size Spaghetti Squash
  • Generous Pinch of Salt and Ground Black Pepper
  • A drizzle of Olive Oil

STUFFING

  • 1/2 tablespoon Organic Ghee
  • 1 pack Tennessee Pride Country Sausage No casting
  • 1 Pound Ground Beef
  • 2 Oz Cheddar Cheese (Per Squash Circle)
  • 1 oz Swiss Cheese, or any other on hand (Per Squash Circle)
  • 1 teaspoon Onion Powder
  • 1/4 teaspoon salt or to taste
  • 1/4 teaspoon Ground Black Pepper or to taste

Vegetable options:

  • 1 Red Pepper sauteed
  • 2 cup Broccoli Florets blanched or sauteed
  • Salt and Pepper to taste*

Instructions

  1. Preheat oven to 400F.
  2. Heat the whole Spaghetti Squash in the microwave, if available, for 30 seconds to 1 minute. This way it is easier to slice it, however, it is not neccecery. You can just use a really sharp knife. Once sliced into about 2 inch thick slices, scoop out the seeds.
  3. Season spaghetti squash with salt and pepper, then drizzle a bit of olive oil.
  4. Place the squash in the single layer, and roast for about 25-30 minutes. The squash is done when you can easily insert a fork into the flesh and shred the flesh into spaghetti-like strands.
  5. While waiting for the Spaghetti Squash to be baked or roasted, saute the meat; sausage and ground beef.
  6. Heat the skillet to medium-high heat and add ghee to melt.
  7. Saute Sausage and Ground beef, and add seasoning; salt, pepper, and onion powder. Cook until the meat is completely cooked through, for about 10 minutes.
  8. Pull the spaghetti squash out of the oven and shred the flesh into spaghetti-like strands.
  9. Add meat stuffing on top of the spaghetti-like strands, add cheese, shredded or slice it yourself, and place it back to the oven for an additional 10 minutes or until the cheese is completely melted.
  10. Meanwhile, saute or blanch vegetable/s of your choice. I used broccoli and red peppers to add a bit of natural sweetness, but you may use any on hand.
  11. Serve vegetables over the stuffed spaghetti squash and enjoy!

Notes

You can use any meat that you prefer or have. I used sausage and ground beef and it was delicious, but you may switch and use chicken and bacon, or just chicken. Even ground turkey would work.

In the case of vegetables, you can use whatever vegetables you wish. I loved this combo, especially red peppers for some natural sweetness to balance it out.

We have this at least once a week on our family movie night. Thankfully, Publix is just around the corner, so we can pick up ingredients pretty fast.

Supreme Bread Pizza

Most of the time I make this gourmet pizza with two types of bread, Italian and French.

My boys love this Supreme Bread Pizza with Publix bakery style French bread. However, my lovely daughter and I prefer Italian bread.

Also found at Publix bakery right next to the deli. With that being said, I thought to name it Supreme Bread Pizzas, which is rather appropriate.

You can literally use any bread that you have or prefer. I guess that is the beauty of this meal, as well as the point of my blog “Easy Cooking.”

On the other hand, my dear husband does not care; he just loves this pizza. It is a simple, easy and delicious dinner idea or Sunday football treats to share with your loved ones.

I loved using both Bertolli Olive Oil Extra Virgin Olive Oil, and Bertolli Olive Oil Extra Virgin Light Tasting Olive Oil.

Supreme Bread Pizza

For this particular recipe, I chose Bertolli Olive Oil Extra Virgin Olive Oil because it has that amazing flavor that I was promptly going for.

Supreme Bread Pizza

Recipe

Tasty Bread pizza recipe.

Prep Time 10 minutes
Cook Time 12 minutes
Total Time 22 minutes

Ingredients

  • 1 Bread Loaf Italian or French
  • 2 tablespoons Bertolli Olive Oil Extra Virgin Olive Oil plus one more drizzle
  • 2 cups Shredded Italian Pizza Blend Cheese
  • 1 Cup Tomato Sauce Olive Oil + Garlic
  • 1 cup Mini Pepperoni
  • 14 Hard Salami Slices
  • 1/2 cup Black Olive sliced.
  • 1/2 cup Green Pepper diced.
  • Herbs: Oregano Italian Herb Blend
  • Other Ingredients: Prosciutto Olives, Sauce for dipping, etc.

Instructions

  1. Preheat standard oven to 400 degrees Fahrenheit.
  2. Slice the bread in half, lengthwise, then drizzle about one tablespoon on each side. Gently press the bread a bit in the middle, just enough to stretch it and make room for the toppings.
  3. Add on about 1/4 cup of cheese on the bottom of each bread slice, then drizzle tomato sauce. If you want to use more sauce, you can. Add more cheese and the rest of the toppings. I add a bit of cheese first because it is like a barrier, so the bread doesn't get to soak with the sauce.
  4. Bake for 12-15 minutes in the preheated oven, or until the crust is somewhat crunchy, and the cheese is completely melted.
  5. Allow it to cool down for a couple of minutes before slicing. Drizzle just a bit of olive oil before serving.

Notes

You can add a different blend of cheese, sauce, as well as any toppings that you prefer. In the case of the bread: Italian, French, Cuban, flatbread, or slices of homemade bread would work just fine. Before baking, you can wrap it up and freeze for up to 3 months. Bake at 400 F for 20 minutes or until the pizza is completely thawed and cheese melted.

I feel like everyone loves quick, easy and fun pasta recipes. So this fall-inspired Mediterranean Pasta Salad falls right into quick, and easy dishes.

We love this delicious DaVinci Pasta, you can really taste the quality with each bite you take.

I have decided to share my recent favorite pasta salad; Mediterranean Pasta Salad.

The combination of flavors just works so well together. Actually, I made this with two types of pasta just to show you that it looks amazing whatever shape you use.

Mediterranean Pasta Salad

It is beautiful with Ditalini and Bowties, so use whatever DaVinci® Pasta you can find.

Although I would totally use spaghetti, with perhaps sauce such as Chicken Alfredo or a simple Bolognese. I just made my mouth to water.

My husband, Nebs, who is not a salad fan at all, said that he can eat this particular pasta dish at least a couple of times a week. I am pretty happy when I hear praise like that.

It is lighter, meatless and filling at the same time. We have three teen kids still at home so pasta is a staple of my house.

There are so many dishes that we can make using pasta. You know how they say: “Pastabilities are endless.”

Mediterranean Pasta Salad

It leaves a family fully satisfied, no matter what you make. With that being said, the beauty of pasta salad is that you can use whatever you wish to use, or whatever is in season.

This is really one fantastic recipe for Labor Day, or even make it over Thanksgiving. Perhaps you can use roasted sweet potatoes and some celery or broccoli for that extra crunch.

I have been using DaVinci pasta for quite some time. It has a really fantastic taste, and on top of it, my family loves it too, which is always a huge plus.

Mediterranean Pasta Salad

Tasty and easy meatless pasta salad.

Prep Time 10 minutes
Cook Time 20 minutes

Ingredients

  • 16 ounces dry pasta 1 pack DaVinci Ditalini Macaroni
  • 1/2 cup Kalamata olives sliced or halved
  • 1/2 cup Marinated Artichoke chopped
  • 1 cup Roasted Butternut squash
  • 4 ounces crumbled Feta cheese cubed
  • 5 Radish thinly sliced
  • 1/2 block Feta Cheese
  • Dressing:
  • 1 tablespoon Olive Oil Mayo
  • 1 teaspoon Olive Oil
  • 2 tablespoons Marinate from Artichokes
  • 1 teaspoon dried Oregano
  • Pinch of Red hot chili Pepper Optional

Instructions

  1. Peel and cube Butternut squash. Drizzle with olive oil and roast at 375 F until tender, for about 30-40 minutes. Leftover butternut squash could be placed in the fridge or a freezer.
  2. Cook pasta according to the package. Do not overcook it. When the pasta turns al dente, drain using a colander, then wash under cold water.
  3. Meanwhile, prepare add-ons for the pasta salad; kalamata olives, marinated artichokes radishes, and feta cheese.
  4. Combine ingredients for dressing by mixing together Olive oil Mayonnaise, reserved marinade from artichokes' jar, and oregano.
  5. Put everything together and drizzle dressing on top. Lightly toss until all of the ingredients are evenly coated with the dressing.
  6. Leftovers should be kept in the refrigerate.

Notes

You may use:

  • Roasted sweet potatoes. Just cube them and drizzle with olive oil, then bake at 375 F until the sweet potato is tender.
  • Cucumber instead of radish.
  • There are no rules on how to put the pasta salad together.
