An air fryer is one of my favorite kitchen appliances, so I thought to use Mission® Tortillas and create these simple vegetarian air fryer mushroom and cheese taquitos.

 

Don’t you just love the way these taquitos look?

 

Not only are you going to love the taste and texture, but they are super easy to prep, plus you will not miss the meat factor at all.

 

Obviously, these are cooked in an air fryer, however, you can easily use your skillet or bake them in the oven.

I partnered with Mission Foods for this post, so I used Mission Foods tortillas to create this delightful vegetarian recipe, which can be turned into a vegan dish if you use plant-based cheese.

 

Ever since I started my low-carb journey, I began experimenting with different recipes, and I enjoyed making my meals using Mission Foods Carb Balance tortillas. I love that they are keto-friendly, soft, and taste so good! It’s the perfect solution for any picky eaters out there.

 

If you did not know already, you can find Mission tortillas in the bread or Mexican/multicultural foods aisle at Publix.

I like that they have so many options for anyone’s taste and dietary needs; gluten-free tortillas, protein tortillas, whole wheat tortillas, low-carb tortillas, low-calorie tortillas, and smaller street taco-sized tortillas.

 

Anyway, I thought it would be an excellent substitution for shredded taco chicken if I used King oyster mushrooms. I love mushrooms, so this was very flavorful.

 

Just in case you are unable to find King oyster mushrooms, I would suggest shiitakes, which are easier to find and less expensive, and just as delicious.

Air Fryer Mushroom and Cheese Taquitos

Ingredients

  • 8 Mission Fajita Tortillas Carb Balance
  • 3 King Oyster mushrooms, depending on the size
  • 1/8 cup olive oil + for brushing
  • 1 tbsp lime juice
  • 1 cup shredded Mexican cheese blend, or any other in hand

Homemade Taco Seasoning

  • 1/4-1/2 tablespoon chili powder
  • 1 teaspoon paprika
  • 1 teaspoon ground cumin
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon dried oregano
  • 1/4 teaspoon onion powder
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon salt, or to taste

Instructions

  1. Slightly wet a cotton kitchen towel and clean oyster mushrooms.
  2. Separate or cut off the mushroom top from the stem. We will use only stems for this recipe.
  3. Using a fork, apply pressure up and down lengthwise, all around.
  4. Then with fingers, pull apart oyster mushroom stems.
  5. Combine all the spice mix ingredients in a mixing bowl, mix well, add oil and like juice, and olive oil. 
  6. Add shredded mushrooms into a bowl with spices and coat well.
  7. Place on the baking sheet and bake or air fry at 350F for 7-10 minutes.
  8. After mushrooms are cooked (sometimes I like to cut them in hlaf becase they could be too long), add about 2-3 tablespoons of shredded cheese, a shredded Mexican blend of cheeses work best.
  9. Add seasoned mushrooms and roll tortilla into a thin roll; place in the baking sheet and continue.
  10. This makes 6 to 8 Mission Fajita size tortillas.
  11. Brush each rolled tortilla with olive oil and air fry at 375F for 10 minutes.
  12. Serve with pico de gallo and guacamole.

Notes

  • You may add 1 tablespoon of corn starch to taco seasoning if you wish.
  • You could use other Mission Tortillas; gluten-free tortillas, protein tortillas, whole wheat tortillas, low carb tortillas,
    low-calorie tortillas, or smaller street taco-sized tortillas.
  • Plan the amount of filling if your tortillas are larger.

Phyllo Triangles Stuffed with Cheese is a fantastic appetizer, and party food, or you could just eat it as a snack. I grew up eating this tasty treat just stuffed with cow cheese mixed with eggs, then stuffed in the homemade dough.

Many of you call this one Greek Tiropitas. However, people from the country that I grew up in know it as sirnica, gibanica, burek sa sirom, or pita sa sirom and all that means cheese pie which is savory. I will post a recipe for my tasty cheese pie which is, in my opinion, better than a pizza.

I love phyllo dough. It is so versatile and we can make so many sweet and savory dishes or desserts using these incredible sheets.

What do you make with phyllo dough sheets? Usually, I would make it stuffed with ground beef, also known as Burek or Börek simply because my lovely family requests that one the most.

That being said, I absolutely love it stuffed with shredded potatoes, which are sauteed with onions and well seasoned prior to stuffing it in the dough.

Oh, my mouth is watering as I was writing this one, which is probably the reason to make it asap.

Anyways, these are phenomenal to pack for school or work lunch. When my kids were actually taking lunches to school I would pack these for them. They are convenient and delicious hot or cold.

Also, if you do not want to bake all these triangles at once just pack in between wax paper or parchment paper and place in an airtight container then freeze.

They freeze beautifully, but I am not sure about cooked pastry. They probably do freeze well too.

You see, in my house, they never last too long so everything is eaten as soon as I serve them on the table. Well, most of the time we eat it for lunch just like this with some protein on the side as well as salad.

I am sure that you would be able to air-fry them too. Nevertheless, I have not tried that one yet, but if you by any chance air-fry them, please let us know. I would love to hear how they turned out.

Another great idea is that you could add sauteed or defrosted spinach to the cheese mixture; Just make sure to squeeze all the moisture out.

Recipe

Phyllo Triangles Stuffed with Cheese is an amazing appetizer, party food, or you could just eat it as a snack. Easy, simple, and delicious!

Ingredients

  • 1/2 lb. feta cheese, 1 pound block and you crumble the cheese yourself
  • 1 block cream cheese, softened
  • 2 tbsp sour cream (optional)
  • 3 eggs, beaten
  • 1/2 teaspoon ground black pepper
  • 1/2 lb. phyllo dough thawed, 20-24 sheets
  • 1 stick unsalted butter, melted
  • 2 tbsp oil

Instructions

  1. Start by mixing the eggs and cream cheese with an electric mixer, if possible. Add ground black pepper and crumbled feta cheese. It’s better to buy a block of cheese and crumble it yourself rather than using pre-crumbled feta. It only takes a few seconds, but trust me—it makes a big difference in texture and flavor!
  2. Now, take one sheet of phyllo dough and unwrap it. Typically, you’ll find two sheets in one package. These measurements are based on approximately 24 sheets, so please read the notes below for further clarification.
  3. Place all the sheets on a dampened cotton kitchen towel and cover them to prevent them from drying out. It’s best to work on a cutting board or a similar surface.
  4. Melt the unsalted butter and add two tablespoons of oil, mixing well. If you have clarified butter, you can use that instead. If not, using only oil will also work perfectly.
  5. Take one sheet of phyllo dough and lightly brush it with the butter mixture. Be careful not to press too hard—just a light brushing with your pastry brush will do. Place another sheet on top, and then use a sharp knife to cut the sheets lengthwise in half. This will give you two strips from two sheets of phyllo dough.
  6. Place about two tablespoons of the cheese mixture at the end of each strip. Fold the corner over to form a triangle, then continue folding from side to side until you reach the end of the strip. Place each folded triangle on a baking sheet and brush the tops with a little more butter. Repeat this process until you’ve used up all of the filling. Typically, I make around 12 to 14 triangles from one half of the phyllo pack.
  7. Preheat the oven to 350ºF and bake the triangles for 15–18 minutes or until golden brown. Allow them to cool slightly before serving. I usually serve these triangles with a side salad.

Notes

    • Phyllo (also spelled Filo or Fillo) comes in various sizes and thicknesses. For this recipe, use a 1-pound pack of sheets. Athens is the brand I typically use, which I find in the freezer section at Publix or Kroger, near frozen desserts, ice creams, pie shells, and whipped cream tubs.
    • Each pack contains two 8-ounce bags, with approximately 20 sheets per bag, each measuring 9 x 14 inches. However, I’ve noticed that some packs may vary in the number of sheets. For example, one of my packs had 24 sheets, which would be enough to make 14 triangles, while another pack contained only 18 sheets.
    • That being said, for this cheese mixture, you can make 12–14 triangles depending on how much filling you add to each. Remember, each triangle requires two sheets of phyllo. I hope this clears things up! If anything is still unclear, feel free to comment below.

Easy and Quick Salad Dressing

When it comes to lunch or dinner, one of my favorite multi-purpose salad dressings is this incredibly creamy dressing using Two Good plain low-fat yogurt.

I sincerely love it with romaine lettuce, radishes, and cherry tomatoes.

However, if you have some tomatoes and cucumbers, this dressing instantly makes one delicious salad. Perhaps use it to make a pasta salad.

Also, serve it on the platter with vegetables like peppers, carrots, cucumber, etc., you would be surprised how tasty it is.

Yogurt Lemon Dressing

  • 1/2 cup Two Good plain low-fat yogurt
  • 1/4 cup extra virgin olive oil
  • 2 Tbsp lemon juice
  • 1 tsp garlic, minced
  • 2 tsp. dried parsley
  • 1/4 tsp black pepper
  • Salt to taste

DIRECTIONS:

Mix ingredients in one medium-size bowl. Set aside for about 15 minutes to allow all flavors to develop.

A waffle breakfast board would not be complete without the signature

Ingredients

Waffles

  • 2 cups all-purpose flour
  • 1/2 teaspoon kosher salt
  • 1 1/2 Tablespoons baking powder
  • 1/4 teaspoon baking soda
  • 1 Tablespoon sugar
  • 1 2/3 cups milk
  • 2 eggs, mixed
  • 1/3 cup butter, melted
  • 1 teaspoon vanilla extract

Other Board Essentials:

  • Fresh Fruit; berries, bananas, pineapple, grapes, kiwi, etc.
  • Yogurt; Two Good®, Dannon® Activia®, Dannon® Danimals®, etc.
  • Syrup and Preservatives; maple syrup, honey, berry jam.
  • Nuts, granola, cereals, etc.
  • Parfaits; part granola or cereals, part fruit and equal part yogurt.

Instructions

  1. Preheat the waffle iron according to the manufacturer's instructions.
  2. In a bowl sift together flour, baking powder, baking soda, and salt. Set aside.
  3. In a second bowl use whisk or the electric mixer to beat together the
    egg yolks and sugar until sugar is completely dissolved and eggs have
    turned a pale yellow.
  4. Add melted butter and milk to the eggs and whisk to combine very well. Combine the
    egg-milk mixture with the flour mixture and whisk just until well blended. Do
    not over mix.
  5. In the third bowl beat the egg whites with an electric mixer until soft peaks form,
    few minutes or so.
  6. Gently fold egg whites into the waffle batter.
  7. Lightly brush butter on the waffle iron and pour enough batter in iron to just cover
    waffle grid.
  8. Close and cook as per manufacturer's instructions, until golden brown.

Assembly:

  1. If your waffles are large or regular size cut each waffle into 4 equal parts and place
    in the middle of the board.
  2. Place all the other products on the table into smaller serving bowls, around waffles.
  3. Make parfaits with granola, fruit, and yogurt using small glasses to showcase all the
    ingredients beautifully layered in the glass.
  4. Serve coffee, cream, as well as yogurts on the side as an option.
