Every lunch box that I make I put much thought into it and like I said million times before I talk to my kids what would they like.  Of course “pasghetti” as my son would say when he was little, with sauce are always welcome in their lunch boxes. 

Before I go any further I want to talk again about safety! Putting hot/warm meals into any container is not recommended. Please, make sure that your box if you are packing lunch for you or your family is appropriate for it.

Check on the bottom or before purchasing your lunch container: 

Q: What Box is safe for me and my child?

A: Look for the boxes that have clear written label that they are BPA FREE just in case if they are plastic- 
BPA stands for bisphenol.  BPA is an industrial chemical that has been used to make certain plastics and resins since the 1960s.
Seeking out BPA-free products may not always be easy to do. Some manufacturers do label their products as BPA-free, but some do not. If a product isn’t labeled, keep in mind that most aluminum cans or bottles have linings that contain BPA, while steel bottles or can do not. Polycarbonate plastic is generally hard, clear, lightweight plastic. It often has the No. 7 recycling symbol on the bottom. Pack fresh fruits, veggies and water or sugar-free beverage. 

TIP:

If Beef sauce and/or Pasta is from the night before preheating it, then let it cool down for at least 5 minutes or so before packing.

I pack it in the thermal container, safe to handle hot/warm meals. 

Make your lunch box rich and balanced. Giving kids fresh fruits and veggies will not only make lunch box bright, happy or beautiful but full of nutrition.

Give them choices, it’s not gonna be a waste because they talk with other kids and not even realizing that they are eating power food!

As the morning was quite foggy and the sun was peaking through, I sat down with my coffee and started brainstorming recipes.

I was thinking about the recipes that could help the sick from the cold this winter season.

It has been proven that Chicken noodle soup got healing properties. However, I wanted to make something more satisfying, rich and tasty.

There is nothing more comforting than a bowl of homemade soup on a cold day.

It is inexpensive and cooking is fairly simple. Not to mention full of good stuff to comfort you at the time of need of comfort.

Peas and Chicken Soup Recipe

I made this delicious soup the other day and the full pot was actually gone for lunch.

That’s what I love to see, not wasted food. My hubby grabbed a ladle and had one more bowl.

The taste is fantastic; not bland at all, so it does have a flavor and pretty good one.

Peas and Chicken Soup

Peas and Chicken Soup

A tasty recipe for comforting Peas and Chicken Soup.

Prep Time 10 minutes
Cook Time 40 minutes
Total Time 50 minutes

Ingredients

  • 1 tsp. Oil
  • 1/4 Yellow Onion chopped
  • 2 Garlic Cloves minced
  • 2 cups of Peas frozen
  • 2 Cups Chicken Broth
  • 1 Cup water more if needed
  • 1 Chicken Breast /if frozen slightly defrost
  • 1-2 Dry Bay Leaf
  • 1 Chicken Bullion
  • 1/2 inch Ginger chopped
  • 1 Carrot medium size/julienne or cut into smaller cubes
  • 2 Potatoes peeled and cut into larger cubes
  • Salt and Pepper to taste

Garnish:

  • Parsley
  • Red Chili Flakes

Instructions

  1. In the large pot heat oil and drop onion, saute for few minutes then add garlic, stir then add frozen peas.
  2. Add Chicken broth, water, bay leaf/s and chicken breast(you may cut the chicken into bite size pieces if desired), Stir and let it boil for 10 minutes, covered on medium high!
  3. At this point drop in Bullion, ginger, carrot, and potato; season it with salt and pepper and let it cook until chicken is cooked through and potatoes are tender about 25-30 minutes.
  4. Discard bay leaf, garnish with parsley and red chili flakes. Serve with rice on the side or bread.

Notes

If you wish to add mushrooms perhaps or extra veggies the taste will not go bad. A little bit of heat goes a long way, so I do recommend a pinch of red chili flakes, or cayenne pepper in the serving bowl.

Potato cooks faster than a carrot, so cut always carrots smaller than a potato to get it evenly cooked. Add Tofu instead of the chicken and use Vegetable stock and bouillon, if you are Vegetarian

This week I was asked to make a wacky grilled recipe using Mazola Corn Oil and I was thinking hard on this one, but everything I tried making was not wacky enough.

So I turned to the Mazola website and found a recipe for spicy grilled watermelon.

It sounded unique, but delicious and at the same time wacky. I never had grilled watermelon, so I was a little bit skeptical about the whole thing.

Honestly I am not a big fan of grilled fruits; however, since we’re being honest here, grilled watermelon did add balance, spiciness, sweetness, and juiciness to the salad.

Salad with Chipotle Grilled Watermelon

Prep Time 10 minutes
Cook Time 10 minutes
Total Time 20 minutes

Ingredients

  • 1/2 package Weber Chipotle Marinade Mix
  • 1/8 cup Oil
  • 1/2 medium watermelon, 2-inch slices cut into triangles
  • Green Salad
  • Tomatoes
  • English Cucumber
  • Lemon Juice
  • Salt and Pepper to taste
  • A drizzle of Oil
  • Toasted Croutons

Instructions

  1. Prepare chipotle marinade mix according to directions. 
  2. Coat all watermelon slices on each side with marinade; discard any remaining marinade. 
  3. Coat grill surface with corn oil. Preheat grill to its highest setting or to 500°F. Grill each side for about 5 minutes or until there is a nice slightly brown color with noticeable grill marks.
  4. Toss the salad with vegetables and season it with salt and pepper. Squeeze juice from fresh lemon and drizzle with a bit more Oil. 
  5. Cut the watermelon in cubes and croutons and add it to the salad.

Notes

You can use any vegetables that you desire and build the salad to your preferences.
