If you told me I will love this Malaysian Roasted Cauliflower, I would tell you you are crazy. I love raw cauliflower as well as fried but I never thought I would be into this one at all, but it is so good. You must try it!!!

Anyway, I finally get in the mood to write. Literally finishing one small paragraph and my babies whom I love very much, just had to come into my office.

One by one in the rotation and ask for something; food, paper, glue sticks, what game should they play and the list is endless.

There is no winning that war, I tell you. I just turn everything off and make something for them to eat, that would shut them up right away.

Malaysian Roasted Cauliflower

This is one of the side dishes or snacks as I like to call it, I made for my family this past week.

Not only that my family, to my surprise, like it, but each time I’ve used whole cauliflower and it was eaten. I was happy because it is a healthy snack, and it is full of flavor.

Side dishes you might like

Malaysian Satay Seasoning is mainly used for Satay, of course. For seasoned and diced or sliced chicken, lamb, beef, pork, fish, or tofu, skewered and grilled meat, served with a sauce.

You can most defiantly make your own. You can combin coriander, turmeric, ginger, garlic powder, onion powder, cumin, lemongrass, some chili, etc. some salt and pepper, olive oil, lemon juice to give even more flavor and voila.

However, I thought how much flavor would give if I try it with cauliflower. I love cauliflower and my family, but I usually like it raw or fried. I, on the other hand, can eat it, however, it is made, and this one was a winner for sure.

The first look and I could tell it was something out of their comfort zone. However, when they tried it there were no complaints whatsoever. I jumped in my car soon after and bought three more cauliflower. It was that good! 

This video is pretty old, and I am just now updating a recipe and pictures. I will work on a new video in the upcoming weeks.

Steps

  • Trim off leaves and any brown spots, then separate cauliflower into smaller pieces and wash. Place in large mixing bowl. Pat dry with a paper towel as much as you can.

  • Add 1 teaspoon of Coarse salt and 1 tablespoon of Malaysian seasoning; mix, trying not to crumble cauliflower.
  • Add lemon juice and drizzle oil, then toss it to coat each piece.

  • Transfer it into a Roasting pan, or baking pan lined with parchment paper/mat etc. Try to keep it in a single layer, meaning separate pieces so they have a little space in between.
  • Roast for about 20 minutes, then shake a sheet pan and roast for additional 20 to 30 minutes. This also depends on how you like your cauliflower and on your oven. Also, to mention, If you are using AIR FRYER time will drastically change. air fry for 15 minutes and see how you like it. If you like it crunchier then air fry a bit longer.

Easy and Tasty Side dish: Malaysian Roasted Cauliflower

Prep Time 5 minutes

Ingredients

  • 1 Cauliflower medium size
  • 1 tsp. Coarse salt, or to taste
  • 1 tbsp. Malaysian Satay Seasoning; 1 teaspoon more for a stronger flavor

Instructions

  1. Preheat oven to 375°F (190°C).

This could be served as a side dish. Pair it with rice, chicken or fish. You can make a soup with roasted cauliflower.

I took a little break…not a real break, but ones I start to read a book my nose cannot get unglued from the pages. Some books I can read many times, just like watching certain movies and it feels as I am reading it or watching it for the first time.

I have a few favorite movies that I think I watched at least 50 times, if not more… I am a sucker for the periodical English movies!

But then again I can read Jane Austin books million times and never get tired. With few projects on my hand and a book, I kind of lost myself and neglected this corner. OK! I know you came for food…and I am talking about books and movies! Sorry…

Lunch Box: Yubu Chobap (Inarizushi)

What is Yubu-Chobap Or Inarizushi? 

This is Korean style Inarizushi. It is originated in Japan, so it is a Japanese type of sushi that Korea adapted. 

There is a slight difference but not much at all. If you never had it at the sushi bar or bought it already made, say in Publix or healthy food store, the taste is very delicious. Yubu = soybean curd (fried tofu) | Cho= vinegar | Bap = cooked grains (rice,beans,barley etc.).

Even though this is an instant version, and I didn’t tuck the rice into the fried soybean as you would normally see, by the way, I have an explanation why; it was still delicious and perfect for lunch boxes and make a great snack! Why didn’t I tuck it or turn around?  I wanted you to see how pretty it looks on the inside.  


So, when you get instant one, as I did -fried tofu pouches are packed into plastic and in liquid, which you squeeze out before filling it with rice. I know, I took the easy way out but let me tell ya, it saves so much time. It also comes with dried seasoning, sauce (vinegar, sugar, and salt),  

What I like to do, is adding many different vegetables, sometimes even leftover minced meat and mixing it with rice. It is that much more flavorful, healthier and of course delicious but possibilities what you can mix with the rice are endless.

Q: What Box is safe for me and my child?
A: Look for the boxes that have clear written label that they are BPA FREE just in case if they are plastic- 
BPA stands for bisphenol.  BPA is an industrial chemical that has been used to make certain plastics and resins since the 1960s. Seeking out BPA-free products may not always be easy to do. Some manufacturers do label their products as BPA-free, but some do not. If a product isn’t labeled, keep in mind that most aluminum cans or bottles have linings that contain BPA, while steel bottles or can do not. Polycarbonate plastic is generally hard, clear, lightweight plastic. It often has the No. 7 recycling symbol on the bottom. (source Katherine Zeratsky, R.D., L.D.from Mayo-clinic)


◾ When you are making food at night for the next day lunch boxes make sure about the box like mentioned above. Always preheat food after taking it out of the fridge, let it cool down a bit then close the lid. 


◾ IF you are using seasoned PANKO bread crumbs, be careful how much seasoning/salt you are using on chicken. If your breadcrumbs are plain to make sure to season it. TASTE and see!!! 


◾ For this, I used long grain rice, but it is best if you use short grain premium rice. The best results.

When you are making lunch box, please use what you have. It doesn’t take too much time to pack if you prepare at night, and if you have leftovers, lunch box will be done even faster. 


Of course, it doesn’t have to be exactly the same, I want to give you an idea and to encourage you to make it at least a few days out of the working/school week. The expression on the child’s face is priceless, and this goes beyond the PB&J sandwich.

Somebody recently said: “Your lunch-boxes are cute, but how do I make my child a hot meal?”


What I do after preparing everything at night, I preheat it in the morning what needs to be preheated. Then simply put it together. It is still warm, not as hot as you would get after cooking it right away, but let me tell ya, even a warm meal is better than cafeteria food. 


Offer a child color, choices for fresh fruits and vegetables, and last but not least talk to your child and see what he/she would like to eat the next day.  Your child can eat a homecooked hot meal when it gets home.

Besides, you can sometimes pack a lunch in the thermal lunch box, and it will, of course, keep the food warm.

Communication is the key because your child will be part and included in his healthy meal choices and it’s up to us parents to suggest healthier one.

Ingredients

  • 1 pk Instant Yubu Chobap kit
  • 2 cups Rice
  • 1/4 tsp. Salt
  • Vegetables that I used:
  • cooked peas 1/3 cup
  • shredded carrot 1/3 cup
  • 1/2 cup sweet peppers green, yellow, orange, red, chopped/almost minced
  • 2 scallions chopped

Instructions

  1. Rice: 2 cups rice, washed several times really good, then soak in water for 15 minutes and up to 45 minutes(drain after). You want water to be as clear as possible, and I do use short grain premium rice. Add about 1.5 cups of water, add 1/4 tsp salt, and cook on high until it boils. Do not take the lid off. Once it boils, turn the heat on low/simmer for 7 minutes. After 7 min. do not take the lid off, take the pot off the stove burner and let the rice steam for additional 3-5 minutes. Take the lid off, and fluff the rice. Should be perfectly cooked, but not overcooked or burnt. Cooking rice also depends on what kind of rice you are using. I stick to my method for years and I never overcooked it or burned it, but stay close.
  2. Rice Mixture: Combine washed (cooked/peas) and chopped vegetables, add rice. Mix together then add sauce (vinegar, salt, and sugar), and add half of the dried seasoning. The other half you can use to dip in after you fill/stuff fried tofu with rice filling. Mix it well to combine all the ingredients together. Open pouches, make balls out of the rice (usually the size of the pouches) and stuff it in the pouch. You can sprinkle seasoning on top or dip each stuffed pouch in the seasoning.

Even though I did not have cabbage in my garden to make Cabbage and Barley Rice Soup I was still so excited that my garden produced beautiful veggies.

Still, it was fantastic to pick some fresh produce and cook with it for my family.

Those green monsters, as well as bunnies and birds, ate a lot of it.

I guess that’s okay, next time I will be more prepared as this was my first real-real garden.

Most of the ingredients that you see in the pictures are either from our garden or organic. By the way, those yummy red tomatoes are from my neighbour.

Cabbage and Barley Rice Soup

I need something spicy with it for example to give more heat and flavour, my daughter loves it with onions and boys to dip bread in and eat it with pickles.

If you are a cabbage lover, this soup is for you, plus it is very healthy and light.

On the other hand, you CAN add bacon, smoked sausage/meat in it to give you that smoky flavour.

We love it like that too, and it is not bad at all however since we try to have sometimes clean meals, I omitted bacon or any meat.

So it is truly very healthy soup. However, you may add any meat that you wish. These few days have been a little colder than usual.

Actually, it’s very unusual to have a temp in 70’s F in mid of July so comforting soup is just what we needed.

Yummy and easy Cabbage and Barley Rice Soup

Prep Time 15 minutes
Cook Time 45 minutes
Total Time 1 hour

Ingredients

  • 1 tbsp. Olive oil
  • 1/2 Onion chopped (any onion will do)
  • 2 medium carrots sliced
  • 1 celery rib chopped
  • 3 garlic cloves finely chopped
  • 2 lb Cabbage Head sliced
  • 2 cups of Beef broth/vegetable or chicken
  • 2 cups Water
  • Salt and Pepper to taste
  • 1 {Beef} Bouillon Cube
  • 1 tsp. Red Hot Chili Pepper Flakes Korean gochugaru
  • 1 cup Barley Rice
  • 1 dried Bay Leaf

Instructions

  1. In a large pot add oil and saute chopped onion for few minutes, then add carrots, celery, and garlic. Saute all together for additional few minutes.
  2. Add Sliced Cabbage, and pour broth and water, stir.
  3. Add seasonings; salt, pepper, bouillon cube, chili pepper flakes.
  4. Put in Barley Rice and stir well.
  5. Cover and let it cook for 20 minutes under the lid, then stir again and place lid halfway open.
  6. Let it cook until barley rice is completely cooked. It will still be chewy but after 45 minutes should be completely cooked. Serve hot!

Notes

This soup can be stored in the fridge in an airtight container for up to 5 days. You can add more vegetables, such as peppers, peas, green beans, potatoes etc. OR instead of rice, you can add lentils.
