Avocado Toast with Spicy Chickpeas

I call this Avocado Toast with Spicy Chickpeas a perfect Avo Toast. They are so popular these days and extremely versatile. I just love them as well as my kids.

You can make them vegetarian or vegan, or add bacon, chicken, eggs, etc. I also love using different types of bread for my avocado toast. It all depends on what I got in my kitchen or what I crave at that moment.

I have made it before with everything bagel chickpeas, smoked salmon as well as avo-prosciutto toast. One of the most versatile foods, right?!

Avocado Toast with Spicy Chickpeas

The first time I tried avocado was 10 years ago. I almost puked when I tasted this marvelous fruit. Then about 5 or 6 years ago I fell madly in love with avocados.

I do not know what clicked the second time, but all of a sudden I actually loved the taste. Maybe a pinch of salt and a generous squeeze of lemon juice.

The same goes for Peanut butter. I hated PB so much, the taste was just awful to me, but now I can eat it with a spoon.

To stay on the topic, we eat a lot of avocados in my house. Besides dips and salads, this is how we eat it most of the time especially if they are overripe.

Avocado Toast with Spicy Chickpeas

Avocado Toast with Spicy Chickpeas

Simple, healthy, and easy brunch idea.

Prep Time 5 minutes
Cook Time 5 minutes
Total Time 10 minutes

Ingredients

  • 8 Toast/Bread Slices
  • 1/2 tbsp Unsalted Butter Ghee or Vegan Butter could be used

Avocado:

  • 2 Ripe Avocado mashed
  • Salt and Ground Black Pepper to taste
  • 1/2 teaspoon Spicy Seasoning I used Kick’n Chicken by Weber
  • 2 teaspoon Lemon juice Or Lime

Chickpeas

  • 1 can Organic Chickpeas You can cook them yourself as well
  • 1 teaspoon unsalted Butter Vegan butter, Coconut oil/butter or Ghee could be used
  • 1/2 tsp Organic Tumeric
  • 1/2 tsp. Spicy Seasoning I used Kick’ n Chicken by Weber
  • Salt and Ground Black Pepper to taste
  • 1 teaspoon Lemon or Lime Juice

Garnish:

  • Chopped Parsley

Instructions

  1. Heat a skillet or a frying pan with a bit of butter, then add slices of toast or any bread that you wish to use and toast for a minute or two on both sides until you reach the right (golden) color.
  2. Scoop avocado and mash it, add salt, pepper, seasoning and a generous squeeze of lemon or lime juice. Mix it well and set aside. You may also add garlic if you wish for more garlic taste.
  3. Heat a skillet or saute/frying pan and add butter. Drain chickpeas (reserve chickpeas water or vegan whipped cream). Now add chickpeas to the skillet and add seasonings and lemon or lime juice. Allow it to cook for about 3-5 minutes, mixing it frequently until you reach your desired taste of crunchiness. If you like it softer, stir fry it less, but leave it for up to 5 minutes to really get toasty chickpeas at a medium-high temperature to reach that slight outside crunch and softer inside. I like it that way, but you may cook it more or less. Also, use seasoning to please your own taste. I use more spicy seasoning because I like it, but use just a dash if you do not like it as much.
  4. Now, spread mashed avocado over the toasted bread, add a spoonful or more of spicy chickpeas and garnish it with a bit of chopped parsley.

Notes

You may use your own seasoning blend: Salt, pepper, onion powder, garlic powder, chili flakes, thyme, parsley, cayenne pepper, etc. Whatever blend suits you as long as it got a bit of heat to it!

If I am being honest, I could seriously eat this whole tray of nachos. I love them as much a much family.

It’s just so comforting and delicious. We just adore finger foods.

This time I tried something different or new, and my kids seems to love it.

When I told them “that chili nachos was meatless”, they could not believe it. It was really tasty.

To be honest, I was impressed myself, although I do not need much to get impressed. I am a simple gal.

Pizza, nachos, finger foods, charcuterie and cheese boards are stable on Sunday when we watch football.

I would not change that for anything. With that being said, sometimes I serve chicken wings or sliders as well.

Regarding this recipe, you can totally double this. Yes, you can!

Well, I totally did, of course. I always have to double recipes because my family do not use serving sizes. They stop when they are full. I rarely have any leftovers, even on Thanksgiving.

Meatless Chili Nachos Recipe

On the other hand, I am the one who reads labels all the time. I know, that’s a flaw of being chubby as a kid and now a food blogger.

Anyhow, if you try making this one, I have a feeling that you will like it. It is really refreshing especially if you have vegetarian family member or a friends coming over.

Meatless Chili Nachos Recipe
Yield: Party food; Serves 4

Meatless Chili Nachos

Meatless Chili Nachos

Simple, delicious and perfect for a game day! Don’t you just love nachos? If I am being honest, I could seriously eat this whole tray of nachos. I love them as much a much family.

Prep Time 10 minutes
Cook Time 12 minutes
Total Time 22 minutes

Ingredients

  • 1 tbsp. Olive Oil
  • 1 pack Veggie based Sausage
  • 1 can Chili Beans, Vegetarian
  • 8 oz Salsa
  • 1 bag Corn Chips Preferably Multigrain
  • 10 oz Shredded Mexican Cheese Blend or Cheese Sauce

Topping:

  • 1/4-1/2 Red Onion
  • 2-3 Scallions
  • 1-2 Tomato
  • Jalapenos
  • Parsley or Cilantro

Instructions

  1. Preheat oven to 400F (200C)
  2. In a skillet add about 1 tbsp Olive Oil, then add Veggie sausage. Saute for a couple of minutes on medium heat. Break into small pieces using a fork. Press and break, continue sauteeing until it is heated through and cooked, 3-4 minutes.
  3. To the veggie sausage, add can of chili beans and salsa, stir well and coat the veggie sausage. Take off the heat.
  4. Add tortilla/corn chips on the baking sheet, about half the bag, then scoop veggie sausage mixture (half of the mixture) and add on the chips.
  5. Add cheese and bake for 2-3 minutes or until the cheese is completely melted and bubbly. You can use nacho cheese sauce**
  6. Take the baking sheet out of the oven and add another layer of veggie sausage mixture, then top it with remaining cheese. Bake for a couple of minutes or until cheese is completely melted.
  7. Chop and dice onion, scallions, tomato and parsley or cilantro.
  8. Add the topping on the nachos and serve with more salsa and sour cream on the side.
    Serve Immediately!

Notes

  • You can do this ahead and put together when it time to entertain. If you do not want this meatless, use ground beef or turkey and add chili beans of your choice.
  • IF you are using ground beef, make sure to drain any excess oil before adding beans and salsa. For vegan cheese, you may try “GO VEGGIE” Vegan products are dairy and lactose-free and do not contain casein, eggs, or gluten.
  • If you don’t want to use chili beans, well, you can use black beans or any that you like or have on hand.

Chicken and Mixed Vegetables Stir fry is a simple and easy weeknight dinner, which makes it an excellent weekend meal as well.

My family typically seeks for stir-fry ones a week, so since we have so many amazing versatile stir-fry recipes I change vegetables or meat.

Every so often, I make it completely meatless. It completely depends on what we desire or have on hand.

I like prepping this ahead of time and freezing the ingredients, so it is relatively straightforward to put it together for a quick weeknight meal.

I thoroughly recommend getting some fridge or freezer bags or containers with lids and prep those ingredients ahead. It is life changing. I tried meal prep and that failed miserably.

Stir Fry Step by step

I grill and prep everything for a whole week, but my kids devour meat before my week even ends. So, for me personally, it was really not worth it. That being said, chopping vegetables ahead and placing it in the container just makes it easier for me to put together one meal.

I have a feeling that you will enjoy this Chicken and Mixed Vegetables Stir-fry as much as we did. It is just a wholesome meal that everyone enjoys.

Chicken and Mixed Vegetables Stir-Fry

Chicken and Mixed Vegetables Stir-Fry
Prep Time 10 minutes
Cook Time 20 minutes

Ingredients

  • 1 lb Chicken Tenders
  • 1/8 tsp. Salt + Ground black pepper a generous pinch
  • 1/2 tsp Ginger minced or sliced (1/2 teaspoon Ginger powder could be used)
  • 1 tbsp. Oil
  • 3 cloves Garlic cloves mixed or sliced (garlic powder could be used)
  • 1 inch Ginger minced or sliced (1/2 teaspoon Ginger powder could be used)
  • SAUCE (for one meal)
  • 1-2 tbsp. Gochujang Korean Chili Paste
  • 1 tbsp. Honey
  • 5 tbsp. Water
  • Soy Sauce to taste
  • VEGETABLES
  • 1 tbsp. Oil
  • Stir Fry Mixed Veggies any on hand, frozen or fresh; peas, carrots, broccoli, mushrooms, etc.
  • 2 Garlic cloves mixed or sliced
  • 1/2 onion diced or sliced
  • Soy sauce to taste
  • RICE -Read instruction on the rice package/ or you may use noodles
  • 1 1/2-2 cup/s Premium Rice
  • Water
  • 1/4 teaspoon Salt
  • Garnish
  • Green Onion
  • Toasted Sesame Seeds
  • Red Chili Flakes

Instructions

CHICKEN:

  1. Cut Chicken tenders (chicken breast could be used) into bite-size pieces. Place in the large bowl and add salt, ground black pepper, and dried parsley.
  2. Heat the wok and add oil, cook chicken over medium-high heat. Before the chicken is almost done, add garlic and ginger; stir it and cook with chicken until chicken is completely done about 5-6 minutes.

SAUCE:

  1. While chicken is cooking, combine together 2 tbsp. Gochujang (Korean Chili Paste), 1 tbsp. Honey, 5 tbsp, water and Soy Sauce to taste.
  2. Mix it well and set aside. You do not need much soy sauce since the chili paste was seasoned already.

VEGETABLES:

  1. In the other pan, stir-fry vegetables. You can use any vegetable that you have; broccoli, carrots, peas, mushrooms, peppers, etc. You can use Asian frozen veggie combo, or use fresh vegetables.
  2. Add a bit of oil to the pan and stir-fry until veggies are cooked but not overcooked. They need to still have a bit of crunch. If they are fresh add a bit of water so they soften faster, and if they are frozen you may defrost them and just stir fry for a minute or two until they are heated through.
  3. RICE: Cook rice according to the package.

ASSEMBLY:

  1. Pour sauce over the chicken and stir.
  2. Add vegetables and stir to combine everything.
  3. Cook for a few minutes or until the sauce gets thicker.
  4. Serve it over rice (OR noodles)
  5. Garnish it with toasted sesame seeds, green onions, and chili flakes.

Notes

You may use firm TOFU instead of chicken, or pork as well as thinly sliced beef. If you do not like GOCHUJANG or do not have it, you can omit and use 1 tbsp Oyster sauce. Oyster sauce is packed with sodium so be aware when adding soy sauce to the sauce mixture. I made a large amount of sauce that's why it looks a lot on the picture. I like to save it for later. GOCHUJANG is spicy, so if you cannot handle spicy you may use 1/2 tbsp. to 1 tbsp.
