I had a plan to share a completely different recipe with you today, but you are stuck with these heavenly waffles. I must say they are probably my favorite flavor!

Almond Joy Waffles Recipe

Chocolate and coconut just go together without a doubt. 

If you want to get a really good coconut butter or oil, try to get one that is pure, organic, unrefined, cold-pressed, non-GMO, etc.

There are more than a few fantastic companies out there. I use it pretty much for everything; my hair, skin, baked goodies, cooking, smoothies, etc.

So, if you are following my blog for a long time, you know that my favorite chocolate bar is the almond joy.  

Yes, I am one of those parents when Halloween arrives, kids spill their candies out for me to check if everything is alright, and then I take all their almond joys like a ransom. I am a pretty badass like that.

Alright! I feel a little guilty (NOT), but I know that I am not alone. How many of you do it, either taking from your kids or nieces and nephews?

Almond Joy Waffles Recipe

So, you see, I LOVE almond joy… Waffles, well they are close.  They have all the ingredients, and I tried so hard to get them to taste just a bit like my favorite bars.

My daughter’s comment: “Well, ma, they taste fantastic, no question, I just need more chocolate syrup on them”, needless to say, she drenched these waffles in the pool of chocolate.  

I tell you my girl can’t survive without a piece of chocolate a day… I think it’s a girl’s thing!

Ingredients

  • 14 oz = 396g. = 3 1/4 c. All purpose flour
  • 1 tsp. salt
  • 1 tsp. baking powder
  • 1/2 tsp. baking soda
  • 1/2 c. sugar
  • 2 large eggs, mixed
  • 2 1/4 c. whole milk, cold
  • 2 tsp. dutch cocoa powder
  • 2 drops almond extract
  • 2 drops vanilla extract
  • 1 tbsp. coconut oil, melted + for greasing
  • 1/2 cup coconut shreds or flakes
  • 2 tbsp. chocolate syrup or melted chocolate

Topping:

  • 1 cup coconut flakes, sweetened or unsweetened.
  • 1/2 cup crushed almonds
  • 2 tbsp. chocolate syrup or melted chocolate
  • 1 cup fruits and powder sugar, optional

Instructions

  1. Mix eggs until they begin to get bubbly, then add salt, baking soda, and Dutch chocolate, then mix so the cocoa powder gets completely lump-free.
  2. Add sugar, almond & vanilla extract, and coconut oil and mix again (Place a jar of coconut oil in the pot of warm water and it will melt).
  3. Add all-purpose flour, coconut shreds or flakes, cold milk, and chocolate syrup -Whisk until it is lump-free (the mixture has coconut flakes, but try to look for flour lumps that you can break).
  4. Preheat the waffle iron. Brush coconut oil on the iron and ladle waffle batter. Close and follow the instructions for your waffle (usually green/blue/orange/ light goes on when the waffles are done cooking. If it leaks on the sides, no worries, it's normal, especially if you want thicker waffles.
  5. Carefully peel them off the waffle iron. Make sure to always brush on the oil (top and bottom) before adding batter for a new waffle. If you do not, waffles will stick to the iron.
  6. Serve them with any topping that you desire, but I'd recommend coconut flakes, crushed almonds, and chocolate syrup or melted chocolate. I find that strawberries go perfectly with it.

I do not blame them because these are so good and truth to be told worth the wait. They were so good!

Marbled Chocolate Almond Bark with Sea Salt

When I say almond bark is good, I mean it was damn good! Sweet, with a hint of savory and crunchy.

I cannot ask for anything better. Well, maybe next time I will be throwing in crushed pretzels. I think with the addition of pretzels my bark would be even better.

We really love the sweet and savory combo. I think most people do love that combo so I am going to play around to make the best one.

Anyhow, originally I wanted to pack these for my son’s teacher, but before I could turn they were all gone.

It was pretty late at night so I whipped another batch and hid so they couldn’t find it.

It is one of those treats that every time you walk by them, you gotta take at least one. You are warned just so you know!

Marbled Chocolate Almond Bark with Sea Salt

Marbled Chocolate Almond Bark with Sea Salt
Prep Time 5 minutes

Ingredients

  • 2 ounces white almond chocolate
  • 2 ounces dark chocolate
  • Heavy Whipped cream* notes
  • 5.5 ounces,156g Almonds
  • 1/4 tsp. Sea Salt

Instructions

  1. Melt white chocolate in a double boiler OR a heatproof bowl set over a pan of simmering water, stirring (like I did) Add a splash of heavy whipped cream if it’s not getting smooth and not thinning.
  2. Line baking sheet with parchment paper or cooking mat, then when white chocolate is melted spoon over almonds. Using spatula work around almonds until covered completely.
  3. Now,  melt dark chocolate in a double boiler OR a heatproof bowl set over a pan of simmering water, stirring. Add a splash of heavy whipped cream if it is not getting smooth and not thinning.
  4. Drizzle over the white chocolate with a fork or similar, then just swirl with fork or toothpick.
  5. Sprinkle sea salt evenly on top, and refrigerate until firm, about 45-50 minutes. Peel off parchment, and break bark into pieces.

Notes

You can make a Dark chocolate base and white swirls. White Almond bark chocolate you can find in baking aisles, but you can use any type.

Ghirardelli Classic White Chocolate chips work wonderfully. You can use Bittersweet chocolate or any that you prefer. Ghirardelli Chocolate Semisweet Chocolate Baking Chips also great!

Use mixed nuts, or pretzels or roasted (salted) almond for a great balance of flavor between sweet and savory.

Roasted Almonds are perfect for this. I made it a few more times with different chocolates and noticed that some are not working as should so I added heavy whipped cream to make it smooth and thinner. It was much better and easier to spread!

Green Tea Soft Pretzels

These amazingly tasty Green Tea Soft Pretzels made with fine matcha powder are perfect treat any time of the day.

They might not look perfect, but they are very delicious. Even my darling husband started to laugh when I put them in front of him. By the way, he is my biggest fan and would never laugh, but he was laughing his butt off.

I know I will get some harsh comments about it, but in my defense, they were very yummy. My youngest one loves anything matcha. He asks me often to make him “green” crepes.

All three are so different and chose completely different dips to munch these with.

So, to give you an idea, my oldest one, Alex ate these with honey mustard, my girl, Anna with Mayo with Sriracha and youngest one, Dani dipped pretzels into sour cream and chives.

Personally, I preferred with of course olive oil mayo+ sriracha, it gave me an extra kick.

Green Tea Soft Pretzels

I took my time and made a complete step by step instructions. I thought it would be more helpful if you decide to make these.

First, let me say that I absolutely love both Green Tea Powder and Thai Sriracha Sea Salt. I am obsessed with those two so I decided to make these delicious pretzels.

Now, let’s get started. Sit tight and enjoy the ride.

STEP BY STEP INSTRUCTION:

1. Warm-up 3/4 cup of water and dissolve 1.5 tsp. green tea powder by whisking until there are no lumps; set aside.

2. Mix together in a small dish dry yeast and 1 tsp. Sugar, add little less than 1/4 cup warm water, stir and let the yeast become bubbly/frothy.

3. In a large bowl add All-Purpose flour, and add salt, baking powder, mix. Add the remaining 2 tsp. sugar, mix again. Make a well in the flour and add activated dry yeast. 

4. Slowly pour in about a few tbsp. of dissolved green tea powder water, mix in with the activated yeast and flour. Add the rest of the green powder water, stir then add water about 4 oz.

Mix with the wooden spoon, then knead for 10-12 minutes until the dough becomes elastic and when you touch or poke it doesn’t stick too much to your fingers.

5. Code the dough ball well all around with oil. Cover and let it rise in a warmer area for 40-50 minutes, or until almost double in size.

6. Preheat the oven o 400°F (200°C/gas 6-moderately hot).

7. Once the dough is almost double in size, knead it for a few minutes, make a ball then cut into equal parts (like in the picture). Make thinner strips of dough, then make pretzels. You can make a double loop if you desire (I made one as you can see).

8. Place them on a well-greased baking sheet/OR lined baking pan with parchment pepper/OR nonstick alum.foil.

9. Mix the egg lightly, then brush on each pretzel. Sprinkle with Sriracha Sea Salt and sesame seeds.

10. Bake for 20-25 minutes in the preheated oven, depending on your oven. The color needs to be slightly golden to a golden brown.

11. Once done, cover with a kitchen cotton towel for 10 minutes to rest and cool down.

12. Once cold, store in Ziploc bags, or airtight container for freshness. Preheat for 10-15 seconds to eat, if you desire.

  • cups 250g All Purpose Flour + more for dusting
  • 2 tsp. Salt 10g
  • 1.5 tsp. 7.5g baking powder
  • 3 tsp. Sugar 1 tbsp. /14g
  • 1 Tbsp. Dry Yeast 14g
  • 3/4 cup 177.4ml warm water
  • 1.5 tsp. Matcha Powder
  • 4 oz 118ml water
  • 2 tbsp. 30ml Oil
  • 1 egg mixed

Topping Options:

  • Thai Sriracha Sea Salt
  • Black Sesame Seeds
  • Toasted Sesame Seeds

Instructions

Notes

You do not need to put Green Tea powder, and certainly, you can use any topping that you like. Make sure that dough is firm, much like dough for pizza. It also needs to be elastic, if you knead long enough the dough will become more flexible and not breakable.

When it comes to liquid, always add a little bit at the time. Mix and see if you need more; also if you add too much water you can adjust with FLOUR, or another way around if its too much flour, add splash more water. My oven bakes the best at 400°F. You know your oven, so you can adjust what's best for you.
