I do not know about you, but there is nothing quicker or more fulfilling than making a one-pot meal, such as this Skillet Spaghetti with Vegetables.

You can include some chicken, fish or whatever protein on the side. However, to be completely forthright, sometimes a meal without the meat is delightful and so worth it.

Anyhow, I shared something very similar a long time ago, when I just started blogging, but I thought to share a little faster, updated version as well.

Seriously, this is done so quickly that the supper will be on the table in the blink of an eye.

It brings a smile to my face when my kids say: “oh, this looks so good”. So, if they like it so much, I know you will love it as well.

Skillet Spaghetti with Vegetables

Well, I make meals like this often as they are quick and easy. Additionally, my family loves pasta so it is a must at least once a week.

Now that we are on a low carb diet, I use shirataki, which is basically low carb pasta for us keto people.

Skillet Spaghetti with Vegetables

Skillet Spaghetti with Vegetables

Easy and simple pasta dish.

Prep Time 5 minutes
Cook Time 15 minutes
Total Time 20 minutes

Ingredients

  • 1 box Spaghetti cooked (1lb)
  • 1 Tbsp. Olive Oil
  • 2 Garlic cloves smashed
  • 2 Green Onions chopped
  • 1 cup Fresh Broccoli florets
  • 1 cup Fresh Asparagus chopped
  • 4-5 Baby Bella Mushrooms sliced
  • Sprinkle of Crushed Red Pepper
  • 1/2 tsp. Sea Salt or to taste
  • Dash of Ground Black Pepper
  • 1/2 tsp. Dry Italian Herbs {mix}
  • Grated Parmesan Cheese

Instructions

  1. Boil salted water and drop the pasta in; while the pasta is cooking start preparing vegetables.
  2. Wash all the vegetables first and smash the garlic, chop the green onions, chop the asparagus into 1 inch, cut broccoli florets separating it from the root, and slice mushrooms.
  3. Add olive oil in the skillet and heat it.
  4. Add to the skillet smashed garlic and chopped green onions; stir-fry for a few seconds. Add asparagus, broccoli, and mushrooms. You can blanch asparagus and broccoli for 20-30 seconds, by placing them in the boiling water, drain and place it in the cold bath.
  5. Season the vegetables with salt, pepper, sprinkle of red crushed pepper and toss in a few dry herbs; Stir Fry for next 3 to 5 minutes,
  6. Add cooked and drained pasta in the skillet and mix to coat it with olive oil.
  7. Sprinkle the pasta with a generous amount of Grated Parmesan Cheese.

Notes

  • You can add Bell Peppers, other types of mushrooms, kale or spinach. It is a very versatile dish. You may add 1 teaspoon or more of butter and stir the pasta. It gives you a very silky and delicious taste.

I call Baked Macaroni and Cheese comfort food at its best.

I love making food that is not your usual food but goes really well together.

The first time when I prepared it, actually I was alone at home. I had leftover Macaroni and Cheese, but I was craving eggs, too. I was without bread, which is a shocker since I always have bread.

So, the only logical thing is to replace the bread with pasta, right?! I made a nest, a little WELL in the middle of the bowl, similar to the picture above, and microwaved it. It was literally one serving for me.

It took longer than I expected since I wanted my egg-white to be done and I like my yolk a bit runny, so about 4 minutes altogether.

I poked and mix around the yolk carefully several times until it was completely done. I must say that it was really, really good and creamy, and on top of all, I was very satisfied with it.

Last week, I made a whole lot of my family. After transferring it to the baking dish, I made sections- one egg. One large rectangle for each serving, although my hubby got two. Anyways, I made sections, cracked eggs, baked them, and voila.

I served it with roasted chicken and steamed broccoli. It was a delightful meal, to be honest.

Yield: 4-6 Servings

Baked Macaroni and Cheese with Eggs

Baked Macaroni and Cheese with Eggs

Yummy, delicous dinner idea!

Prep Time 10 minutes
Cook Time 25 minutes
Total Time 35 minutes

Ingredients

  • 4 cups dried macaroni read notes
  • 1/2 stick butter –plus more for buttering the baking dish
  • 1/4 cup all-purpose flour
  • 2 1/2 cups whole milk
  • 1 pound sharp Cheddar shredded (1 pack), plus more for baking
  • Salt to taste
  • Herbs parsley, chives, etc.
  • 1 Large egg /per serving salt to season optional

Instructions

  1. Preheat the oven to 375 degrees F.
  2. Cook the macaroni until still a bit firm. Drain and set aside.
  3. In a large pot, melt the butter and sprinkle in the flour. Whisk together over lower heat. Cook for a couple minutes, whisking constantly. Don’t let it burn. Pour in the whole milk, and whisk until you see the smooth texture. Cook until thick consistency, then reduce the heat to low.
  4. Add in the cheese and stir until the cheese is completely melted. Add a good pinch of salt.
  5. Add any additional spices if desired, such as herbs – chives, parsley, thyme, etc. Taste the cheese sauce and add more salt if needed.
  6. Mix in the drained, cooked macaroni and stir well to coat it equally with the cheese sauce.
  7. Transfer Macaroni and Cheese into a well-buttered baking dish, top with extra cheese and make a little well for an egg. Crack an egg in the well and season with a pinch of salt.
  8. Bake until bubbly and golden, about 25 minutes, and until the egg/s are done (well done takes longer time. Cover it with the aluminum foil to protect it from burning.
  9. Serve immediately. Garnish with fresh or dry herbs before serving.

Notes

  • You can use any smaller pasta similar to the Macaroni, such as rigatoni, penne, rigate, etc.
  • Cover the whole baking dish with heavy duty aluminum foil to prevent from burning, and also the eggs will cook faster.
  • You can cook eggs to over easy (soft sunny side up), or harder which will take longer.
  • I should mention that eggs are optional. If you do not plan to use eggs at all, cooking time will be 15 to 20 minutes, or until the cheese is bubbly and melted. Chives, green onions, or parsley gives you fantastic taste, and it is pretty for garnish as well. It can be in the fridge for up to 7 days (in airtight {with a lid} container).
  • HEAT in microwave/oven safe dish before eating. You can serve this with a fried sunny side up egg instead of baking it with the mac and cheese.
  • You can do it in small pots such as remekin just a tad bigger than traditional size, and make individual serving as I did here (on my pic)

I might be addicted to anything carbolicious, but that’s a simply comfort food for me. This Greek Pasta salad is one of those amazing comfort meals that I really enjoy.

I really don’t know what I would do if I have to give up on carbs. It might as well be the end of the world. Just kiddin’ (but not really)!

Anyhow, I love mixing veggies together with pasta for a simple lunch or dinner. I make it often, even for school lunch boxes, as well as when we travel.

Usually, I talk to my kids the night before to see what they would like to add and most of the time we build a salad together.

Greek Pasta Salad

One thing that they love is adding grilled chicken or even smoked cubed ham as well as Canadian bacon.

Doesn’t that sound amazingly delicious? Mmhm! Yes, pasta salads are so versatile.

Today, we are keeping it meatless and it is still pretty balanced despite the pasta. As I said, we can build pasta salad however we like and what, and it will always be delicious.

Also, I plan in advance our pasta salads, for example, if we going to grill I would make pasta salad with tons of veggies, or if I am packing pasta salad for lunch most likely I would add grilled chicken.

Anyhow, everything that I added to this delicious pasta works amazingly perfect together. This is me trying to make fusion, Greek salad.

I think it is a pretty beautiful and colorful pasta so go and make it for your family and friends, for your birthday celebration or any other gatherings.

If you are sensitive to gluten, by all means, use gluten-free pasta or whole wheat. Pasta such as rigatoni, bow tie, macaroni, fusilli, etc., would work perfectly too.

The key is in the dressing and it is such a simple dressing that I use in most of my salads.

Easy and tasty veggie-packed, Greek-inspired pasta salad.

Ingredients

  • 1 pound Pasta
  • 1 Red Bell Pepper
  • 1/2 cup Pitted Black Olives sliced
  • 1/2 English Cucumber
  • 1-2 Tomatoes
  • 1/4 Red Onion sliced
  • 4-5 Radish optional
  • Handful Chopped Parsley
  • 1 cup Feta Cheese

Pasta Salad Dressing/Vinaigrette:

  • Juice from 1/2 Lemon (ripe) about 1 tbsp, or to taste.
  • 1 tsp. Lemon zest
  • 1/4 cup Olive oil
  • 1 tbsp. Dried Oregano
  • Pinch of Cumin
  • 1/8 tsp. Crushed Red Peppers optional
  • Salt to taste

Instructions

  1. Mix ingredients for the dressing. Mix and set aside. The best way to make dressing is in the glass jar with a fitted lid. 
  2. Boil pasta according to the package. Do not overcook. You'd want a little bite to it. Once cooked, wash under cold water and set aside; We are doing this only when we are making pasta for salads otherwise you would not wash pasta under cold water.
  3. Add a bit of dressing into pasta directly and toss to coat.
  4. Combine all ingredients together and lightly toss with the rest of the dressing.
  5. Add Feta cheese and serve. You may use a block of Feta Cheese (cube it first) or toss Feta crumbles. 

Notes

You can add chicken/grilled or pan-fried. Smoked ham, even crispy bacon goes well with this salad.
