Roasted vegetables with sausages make such a great dinner. On top of it, it is so versatile. 

I do love and live for versatile meals!

Depending on the season you may use fresh veggies, and use any sausages that you prefer. 

However, for this meal, I had a huge bag of organic veggies from Cosco and Grass-Fed Polish Sausages. What a treat?!

As I said you are more than welcome to use any blend of vegetables or any type of sausage. Sometimes, I add bacon too but today I am keeping it as simple as possible.

If you are vegetarian do not turn away. You can most definitely use vegan sausages or tofu cubes. I would just season tofu very well and bake it the last 15 minutes of roasting.

With that being said, I made this in my Air Fryer Oven. If you follow me for a while, you know that I love Air-Fryers. I Air Fried this in my oven-safe baking dish at preheated air fryer to 375 degrees Fahrenheit for 35 minutes to 40 minutes for two servings. 

Also, as I said, I used frozen vegetables and that was absolutely fine. I seasoned with salt, pepper, garlic powder, herbs such as parsley and thyme, added a bit of unsalted butter, and drizzled it with olive oil.

They turned out perfect!!!

Simply use try using convection roast or convection bake. Just preheat it as you would preheat your oven and bake. Easy-Peasy!!!

Since 80% of my meals are low carb this was a fantastic choice. So if you are on Keto or Paleo, this meal would make an amazing meal for you.

Roasted Vegetables with Sausage

Roasted Vegetables with Sausage Recipe

Easy and simple recipe for delicious Roasted Vegetables with Sausages

Prep Time 5 minutes
Cook Time 35 minutes
Total Time 40 minutes

Ingredients

  • 2 cups mixed vegetables, frozen (broccoli florets, yellow carrot, regular carrots, cauliflower)
  • 1 Grass-Fed Polish Sausages (or any other on hand)

SEASONING:

  • 1/2-1 teaspoon salt
  • 1 teaspoon black pepper
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1/2 tablespoon dried thyme
  • 1 tablespoon dried parsley

FATS:

  • 2 tablespoons unsalted butter
  • 1/2 tablespoon olive oil

Instructions

  1. Preheat oven to 400F.
  2. Toss vegetables with seasonings and herbs.
  3. Add butter and oil all around vegetables.
  4. Slice sausage/s into thicker pieces.
  5. Roast/Bake/Air-Fry for 30-35 minutes. If you like veggies a bit more on the cooked side then 40 minutes would be enough.
  6. Take out. toss with all the oils and juices and serve.

What I always must get when I shop at Aldi.

Aldi is a brand of two German family-owned discount supermarkets, and my family loves shopping at this grocery store.

You will need a quarter to get a cart unless you want to carry everything in your arms.

If you do not have a quarter, you may exchange a dollar at the cashier. Sometimes the cashier will give you a quarter so that you can use a cart, though, which shows just how amazing their customer service is.

You may repay the kindness by returning that quarter later after you finish your shopping.

Regarding bags, you may use reusable bags in stores, repurpose empty cardboard boxes from inside the store, or purchase paper or plastic bags at checkout.

Paper bags are 7 cents, and plastic bags are 10 cents in Nashville, TN.

Since coming to the USA, I’ve been doing grocery shopping at Aldi most of the time because their products are high-quality; I genuinely like what they offer.

Some of the things you must get that are worth your buck:

Items for the Charcuterie board

  • You will find so many different, High-quality, and inexpensive cheeses that look and taste expensive at Aldi. Pretty impressive!
  • Dry salami, prosciutto, smoked fish, and deli meat.
  • Nuts: pistachio, peanuts, almonds, etc.
  • Dry Fruit: figs, apricots, etc.
  • Pickled vegetables: gherkins or pickles, olives, stuffed mini peppers, pickled jalapenos, etc.
  • Crackers: gluten-free options, pita chips, entertainment crackers, etc.
  • Fresh produce.

Best Things to Buy at Aldi

Fish, Bacon, and Ground Beef

  • I love purchasing raw meat and fish at Aldi. It is always the best quality, and I have never seen their meat mixed with old ones; some stores are mixing old and new ground beef, which is disgusting and wrong.
  • I would highly RECOMMEND Aldi’s beef, fish such as salmon, pork/bacon, even the chicken. I have never had a problem with it, so put that on your list if you eat fish and meat.

Fresh Produce

I feel like everyone already knows about Aldi’s inexpensive produce.

  • Not only will you find a plethora of fresh fruit and veggies, but they’re all of excellent quality and pretty affordable. I get probably a week’s worth of produce. Most of the time, when farmer markets are closed during winter, I get all of it at Aldi because I love what they carry and how fresh it all looks.
  • Some of my favorite fresh produce from Aldi: mushrooms, mixed greens, assorted mini tomatoes, English cucumber, mini cucumbers, peppers, cabbage, cauliflower, pears, bananas, avocados, kiwi, etc.

When I started the low-carb and keto journey, I had to change my lifestyle; it was mostly to clear brain fog, help me mentally, and, of course, to lose weight.

This lifestyle gave me so much more. I love going to Aldi every week to find excellent products that fit and support my lifestyle. Their bread and wraps are a Lifesaver. I can make a quick snack or a meal using their wraps.

They are fantastic, and even if you are not on a low-carb diet, they carry gluten-free bread, baked goods, and wraps, as well as regular carbolicious items.
