Smoothie. Again!!! I know, I know… I am on a smoothie kick lately. Pineapple-Mango Smoothie is fantastic, though, and full of good stuff, to boost your immune system during this winter season, plus refreshing and delicious.

You will thank me when the summer comes. You are welcome in advance! When I make something, my kids are the first to try, and they really liked the sour-sweet flavor of this one. It just hit me that they will probably be home for the next few days.

I love’em so very much, but at the same time, I’m thankful for school days. I guess exercising will help to decompress my stress level from constant calls, like from the commercial of “Family Guy”, ya know, one with “mom, mom, mama…”.

Yeah! That one! Seriously, they ask “what is to eat?” at least 20 times a day. The headphones come in handy, though, but I so need a soundproof office, especially when my little “boss” starts to bang on his mini drums. Did I say that I love them so, so very much? 

Pineapple and Mango Smoothie

So, let us talk about the nutritional benefits here. We have pineapple and mango together with coconut milk and ice.

I didn’t add any sweetener whatsoever, but you are more than welcome to sweeten it up to satisfy your sweet tooth. I talked a bit about mango in my previous post, however, I will write a little more about this love fruit. 

Pineapples contain bromelain, an enzyme that may help arthritis pain by easing inflammation, treat indigestion, wounds, and infected sinuses.

It contains a good source of vitamin C, which helps your immune system, lowers your risk for heart disease, gout, cancer, and stroke. Pineapples also provide you with fiber and a number of essential vitamins and minerals.

Mango: Antioxidants present in mango (quercetin, isoquercitrin, astragalin, fisetin, gallic acid, and methylgallat) protect the body against colon, breast, leukemia, and prostate cancers. Mango helps clear clogged pores that cause acne. Mango has aphrodisiac qualities, and it’s called the ‘love fruit’.

Pineapple and Mango Smoothie

Mangoes increase the virility in men. Vitamin E, which is present in mangoes, helps to regulate sex hormones and boost sex drive.

Mango is rich in iron and is fantastic for people who are suffering from anemia. This fruit also contains glutamine acid –an important protein for concentration and memory.

Tasty Recipe for Pineapple-Mango Smoothie

Ingredients

  • 1 1/2 cup Pineapple, cubed
  • 1/2 large Mango ripe
  • 4 FL Oz Coconut Milk
  • 1 cup Ice Cubes

Instructions

  1. Place all the ingredients in the food processor or a blender.
  2. Blend until it’s smooth, about 1 minute to 1 1/2. Add sweetener if desired.

I’ve always loved green tea—and when it comes to green tea powder, aka matcha, I’m all in. It might sound like an unusual pairing to some, but I absolutely adore the flavor and aroma of cantaloupe and pretty much any kind of melon.

In my opinion, that mild, fruity sweetness balances out the slightly bitter, earthy notes of matcha beautifully. It’s unexpectedly soothing and refreshing.

The last time I shared a matcha frappé recipe, some of you were all about it, while others weren’t sold—and that’s totally okay. Matcha isn’t everyone’s cup of tea (pun fully intended). For me, I like it bold and less sweet, but that’s just how I roll.

In this version, I used stevia and unsweetened coconut milk, but feel free to experiment. Prefer regular dairy or soy milk? Go for it. Want it sweeter? Use sweetened coconut or almond milk or add a bit of honey or maple syrup.

Recipes should work for you, not the other way around. I always say, “You have to taste to know how much is too much for you.”

That brings me to where I’m at right now—currently deep in a seasonal detox, and let me tell you… it sucks. I really miss coffee. The smell, the flavor—ugh, it’s brutal. Honestly, skipping caffeine is harder than cutting carbs. I’m moody, cranky, and not exactly everyone’s favorite person at the moment. I want to bite. No joke.

But I just need to power through a few more days because I know how amazing I’ll feel after. I do this detox every season, and by day four, I start to crack.

It doesn’t help that my kids and husband are living their best lives, eating everything in sight. Honestly, I don’t like them right now. (Kidding. Kind of.) But you get it, right?

Ingredients

  • 1/4 Cantaloupe, substitute w/ honeydew
  • 6 fl oz Coconut Milk, or any other milk
  • 1/4 cup 2 fl oz warm water (up to 1/3 cup/2.6 fl oz)
  • 1 1/2 teaspoon Premium Green Tea Powder Matcha
  • 1 tbsp. stevia, more for sweeter, (or reg sugar)

Instructions

  1. Mix warm water with green tea powder to dissolve it.
  2. In the blender or food processor, add cubed cantaloupe and dissolved green tea powder, stevia (or sugar), and coconut milk.
  3. Process for a minute or so, or until it's a smooth texture.
  4. Sprinkle with a pinch of green tea powder (optional) and drink immediately!

Notes

You can add a banana to the mixture and use the melon that you have or like. You can add flax seeds, Chia seeds, or protein powder.

Milk is up to you. I love coconut milk, and yes, you can even add "Soft (silken) tofu for extra protein. In the summertime, adding some ice, it perfect and refreshing.

You can also cube a melon and place it in the Ziploc bag, then in the freezer. It's like melon ice cubes, which are great for smoothies. Any frozen fruit is perfect for smoothies.

Anyhow…..to skip that part lets write about something else before they start calling me again. 

Once upon a time, Starbucks introduced coconut mocha, but they don’t have it anymore and if they do bring it back it is always limited time offer.

I know this is not the same, but the flavor of cocoa and coconut as well as coffee is there so why not try my healthier version at home.  

Coconut Mocha Latte

Ingredients

  • Coffee
  • Skim Milk
  • 1 Tbsp. Cocoa-Coconut Oil read notes
  • 1 Rib of Chocolate 3-4 squares, milk or dark chocolate
  • Sweeten to taste

Instructions

  1. If you have a latte/espresso machine make latte as you would usually do.
  2. In a saucepan, add Coconut Oil with Cocoa, and chocolate, and melt on a low heat until completely melted.
  3. Once large latte is done pour coconut oil and chocolate over the latte, add sweetener and stir.
  4. If you do not have a latte machine, then make coffee.
  5. In a saucepan add milk, Cocoa-Coconut Oil and chocolate, and melt on a low heat until completely melted and start to bubble. You may use hand frothier to froth milk.
  6. Pour it over the coffee, add sweetener, stir and drink.

Recipe Notes

You may add Vanilla shots or make iced coffee too, just my adding ice-cubes. You can use coconut milk, soy milk or almond milk, but it does not froth as well as regular milk. If you do not have cocoa-coconut oil: Melt coconut oil and add 1/2 teaspoon coconut powder.
