Halloween is just around the corner so food bloggers, naturally, tend to give you brilliant ideas and plan Halloween party foods just a bit earlier.

With that being said, I genuinely think that I have outdone myself. In addition, my oldest son went crazy over this one. The boy passionately loves Halloween as much as he loves Xmas.

Anyways, we all ate everything from this tray. EVERYTHING. Except for those eyeballs, of course! It was such a disgustingly delicious mess, and we loved every single bite.

So, for instance, when I was coming up with this creative idea, I merely had the cauliflower with the dip in mind, but as days went by the new picture appeared in front of me. Well, more like what you see now on my blog.

Spooky Halloween Cauliflower Bowl Bean Dip

This is precisely my very first spooky recipe on the blog and I sincerely hope I nailed it for all you Halloween Lovers. In another word, personally, I was pleased with the outcome.

RO*TEL is known for promptly delivering bold, adventurous flavor.

I used a lot of Hunts Ketchup to decorate. Adding a zesty kick using RO*TEL Original Diced Tomatoes and Green Chilies since RO*TEL is known for promptly delivering bold, adventurous flavor.

Mixing on some Refried Beans and Guacamole. I mean, who would not love this, right?

Nevertheless, I shop in Walmart since they have everything that I needed for this dish.

Don’t you absolutely love going to the store, and always find things that you came for? That’s pretty much Walmart for me.

Spooky Halloween Cauliflower Bowl Bean Dip

Spooky Halloween Cauliflower Bowl Bean Dip

Spooky but so very tasty Halloween party tray.

Prep Time 10 minutes
Cook Time 8 minutes
Additional Time 10 minutes
Total Time 28 minutes

Ingredients

  • 1 drizzle of Olive Oil
  • 1 can 31 oz Refried Beans reserve one cup
  • 1 can RO*TEL® Original Diced Tomatoes and Green Chilies
  • 1 can RO*TEL® Mild Diced Tomatoes and Green Chilies
  • 1 cup Guacamole
  • 1 can Black Olives sliced
  • 1 cup Mexican Blend Cheese
  • 1 Avocado
  • 1 Green Bell Pepper diced
  • 2-3 Sweet Red Peppers
  • Cherry Tomatoes
  • 1 pk Hot Dogs
  • 4 Boiled Eggs

OTHER INGREDIENTS

  • Ketchup
  • Blue Corn Tortilla Chips
  • Yellow Corn Chips
  • Haloween Decor; eyeballs, spider web, spiders, Halloween napkins, cups, and straws, etc.

Instructions

  1. Preheat oven to 400F.
  2. While Oven is Preheating, wash all the produce, chop and dice.
  3. Carefully make a hole in the middle of the cauliflower, as seen in the picture.
  4. Boil Eggs at medium heat for 6 minutes, for a softer and leakier egg, 5 minutes. Boil Hot Dogs as well for 2-3 minutes.
  5. Using a large sheet pan, drizzle just a bit of olive oil to coat it.
  6. Add refried beans with sprinkle cheese on the sheet pan and make something that it looks like a reef, leaving the middle of it free. Bake for 5 minutes, just for flavors to marry and cheese to melt.
  7. Heat the remaining one cup of refried beans and heat that on the stove.
  8. Combine guacamole and 1/2 can of RO*TEL® Mild Diced Tomatoes and Green Chilies; set aside.
  9. Combine 1 can RO*TEL® Original Diced Tomatoes and Green Chilies, remaining RO*TEL® Mild Diced Tomatoes and Green Chilies, sliced olives, diced green and red peppers. It will look more like salsa; set aside.


Assembly:

  1. In the middle of the sheet pan place cauliflower.
  2. Add a cup of heated refried beans in the cauliflower bowl.
  3. On top of that add guacamole mixed with RO*TEL® Mild Diced Tomatoes and Green Chilies. It got to ooze.
  4. Around the refried beans and cheese dip add salsa.
  5. Peel boiled eggs, slice in half, then take out the egg yolk and stick Halloween decor eyeballs (make sure to wash it before placing it in the food and around it). The rest of the eggs you may place around the tray.
  6. Now, slice hot dogs in half, cut where the nail suppose to be. You may dip fingers in the ketchup or guacamole. Place the Hot Dog Fake Fingers all around the tray/ sheet pan.

Notes

Decorate the table and the rest of the dip as you wish. Make it personal, scary, but also kids friendly and in a holiday spirit.  Use this recipe as an inspiration. Also, make sure to add chips and extra produce.

I adore Shrimp in Lemon and Garlic Sauce. Lemon , garlic, and butter sauce is the best in shrimp dishes. This is one of our favorite shrimp recipes, and I serve it usually over creamy pasta. It is absolutely HEAVENLY! 

These shrimp go incredibly well with spaghetti squash, over-bowl greens, zoodles, cauliflower rice, and zucchini noodles. If none of those appeal to you, which I would be shocked if it doesn’t, but lets pretend, then grab a loaf of Italian or French bread and dip it in before eating.

Let me tell you, friends, you should most definitely try it.

I could have done that in the past or I could not. These have the nicest flavor and scent, by far. You must try this recipe since it is incredibly simple and delicious.

Shrimp in Lemon and Garlic Sauce

Shrimp in Lemon and Garlic Sauce Recipe

Prep Time 15 minutes
Cook Time 10 minutes
Total Time 25 minutes

Ingredients

  • 5 tablespoons unsalted butter
  • 2 pounds shrimp, with a tail peeled and deveined
  • 1/4 teaspoon sea salt, or to taste
  • 1/8 teaspoon black pepper
  • 3-5 cloves garlic minced
  • 1/2 tablespoon dried parsley
  • 1 tablespoon lemon juice, use ripe Lemon
  • 1/4 teaspoon organic tumeric powder optional, read notes
  • 1 teaspoon lemon zest

GARNISH

  • Fresh chopped parsley

Instructions

  1. Clean, peel, and devein shrimp then pat dry with a kitchen paper towel. If you want to save time you can get already deveined and peeled shrimp.
  2. Melt 2 tablespoons of unsalted butter in a skillet over medium heat.
  3. To the butter add cleaned, shrimp and season the shrimp with sea salt and ground black pepper, to taste.
  4. Cook for about two minutes on each side, the shrimp is cooked when it turns completely pink, make sure to stir; Remove from the pan and set aside on a platter or a plate.
  5. Add the remaining 3 tablespoons of unsalted butter to the skillet, then add the garlic and cook for about one minute.
  6. Add lemon juice, and turmeric powder. Cook, while slightly moving the skillet or just stir the butter, garlic, lemon juice, and turmeric together.
  7. Cook it for a couple of minutes at medium-high temperature, continuously stirring.
  8. Return the shrimp back to the skillet and stir to coat the shrimp with the butter mixture and cook for an additional minute or so. Add lemon zest and stir again. This is just to combine all the flavors and allow the shrimp to soak in the lemony flavor.
  9. Take off the heat. Taste test, and add more salt or lemon juice to please your taste buds.
  10. Garnish with parsley if you desire. The best served over pasta.

Notes

I add turmeric powder for the color, plus it got amazing health benefits. It is, of course, optional.

If the shrimp are precooked and frozen, thaw them first completely. Submerge the shrimp under cold water and let it sit until defrosted for about 10-15 minutes. Then take kitchen paper towels and make sure to dry the shrimp completely before cooking it.

if it is pre-cooked you don't need as much time to cook on each side. Just make a sauce and toss pre-cooked shrimp in it to heat it through.

Well, they certainly do not like it when I add mushrooms or spinach. Boy, do not like that at all. My husband, Nebs is warming up and my daughter and I love it either way.

Needless to say, there is nothing better than a homemade breakfast. I am not much of a breakfast eater. However, I do love a good brunch, of course, but this meal always hit the spot.

I just love frittatas. We switch things up depending on the season, and sometimes I use what we have in the fridge.

Scallion Mushroom Frittata

Ingredients

  • 3 Eggs slightly mixed
  • Salt and Pepper to taste
  • 2 Scallions chopped
  • 1 cup Mushrooms sliced
  • 1/2 cup Baby Spinach chopped
  • 1 tbsp Olive oil or unsalted butter
  • 1 tbsp. Pine Nuts
  • 1 cup Cheddar Cheese shredded

Instructions

  1. Turn oven to broil.
  2. In a medium-sized bowl, mix together eggs, salt, and pepper.
  3. Over medium-high temp, heat oven-safe skillet on the stove top. Spay or brush a skillet with oil or butter.
  4. Add chopped scallions, mushrooms and spinach in the skillet and saute for a couple of minutes.
  5. Pour egg mixture over it and cook for about 2 minutes on medium high on the stove top or until the egg mixture has started to set on the bottom.
  6. Add cheese on top of the eggs and toss pine nuts on top of the cheese.
  7. Place skillet in the oven and broil for about 3 to 4 minutes on high or until it is lightly brown and fluffy. Remove from a skillet and cut into wedges.

Notes

You can use small bits of bacon as well, or omit mushrooms if you do not like them. It's all about what you have on hand or like.
