Spring is sneaking in, the rain is pouring, and it’s surprisingly warmer than it should be. Somehow, that makes me smile even without sunshine. I love gloomy, rainy weekends—they’re perfect for cozying up with something delicious… and green!

With St. Patrick’s Day around the corner (March 17th!), I decided to make a festive green smoothie, my “Shamrock Smoothie.”

And yes, I may or may not have chosen the colors intentionally, but taste-wise, it’s a winner. Yellow? That’s gold, of course! 🍀✨

Shamrock Smoothie Kale, Banana, Kiwi and Mandarin Smoothie

A few weeks ago, I attempted a kale-only smoothie… and wow. It was the most disgusting thing I’ve ever made. No sugar, just kale, green apple, lemon, ice… every sip was a struggle. I drank it all, of course, because #health, but let’s be honest… it was rough!

Kale is perfect in soups or stews with smoky bacon or potatoes, but straight-up green juice? Brutal.

The magic happened when I added a banana, instant sweetness that tamed the kale and actually made it enjoyable. Later, I experimented with kiwi and mandarin, yogurt, and ice—so much better!

Swapping yogurt for almond milk gave it a vegan twist, and for those indulgent days, a swirl of heavy whipped cream made it creamy and dreamy. No sugar needed—banana, kiwi, and mandarin do the trick naturally.

Shamrock Smoothie Recipe

Spring is sneaking in, the rain is pouring, and somehow the warmer weather makes even gloomy days feel cheerful. With St. Patrick’s Day just around the corner, I wanted to celebrate with something bright, green, and delicious—enter the Shamrock Smoothie!

Ingredients

  • 1 banana
  • 1 mandarin orange (or tangerine)
  • 1 kiwi
  • ½ cup chopped kale
  • 5 fl. oz almond milk, or cocout milk (or any on hand)
  • ½ cup ice cubes
  • 2 fl. oz heavy whipped cream or half-and-half (optional for extra creaminess)

Instructions

  1. Prep your fruit: Peel the banana, mandarin, and kiwi. Chop roughly for easier blending.
  2. Blend the banana first: Add the banana to your blender and pulse until smooth. This gives the smoothie a creamy base.
  3. Add kale and citrus: Add chopped kale, mandarin, and kiwi.
  4. Blend until the greens are fully incorporated and the mixture is smooth.
  5. Add liquids and ice: Pour in the almond milk and add the ice cubes. Blend until frosty and well-combined.
  6. Optional creaminess: If you want extra creaminess, add heavy whipped cream or half-and-half and blend briefly.
  7. Taste and adjust: If you want it sweeter, you can add a small amount of natural sweetener, though the banana, kiwi, and mandarin usually give plenty of sweetness.
  8. Serve immediately: Pour into glasses, garnish with a small slice of kiwi or a tiny mint leaf for fun, and enjoy!

Notes

Blend banana first for creaminess, then add kale and citrus for that vibrant green color. This combo is sweet, slightly tangy, and packed with nutrients—perfect for a morning boost or a festive treat
