Sometimes the easiest recipes turn out to be the most impressive. These Smoked Turkey and Cheese Egg Rolls are proof; lightly golden, crisp on the outside, with a rich, savory filling of smoked deli turkey, creamy feta, and egg.
They’re not traditional egg rolls, but they’ve become my favorite whenever I need something quick, crowd-pleasing, and versatile.
This dish was born from a bit of kitchen improvisation. One morning, I wanted a savory brunch but didn’t have any phyllo dough. Instead, I reached for a pack of egg roll wrappers in the fridge.
With just turkey, feta, and eggs, I created a simple filling that fried up beautifully—crunchy shells giving way to a warm, cheesy center. Everyone loved them, and I knew I had stumbled onto something worth making again.
Now, these Turkey Cheese Egg Rolls are a staple beyond brunch. They’re perfect for football season, holiday gatherings, or any time friends and family gather around the table.
You can even assemble them ahead, freeze, and fry just before serving, making entertaining effortless. Of course, nothing beats enjoying them hot from the skillet.
One of the best things about this recipe is its flexibility. Swap the turkey for ham, or go vegetarian with mushrooms, shredded cabbage, or spinach. Play with the cheese too—feta for tang, mozzarella for that irresistible stretch, or cheddar for a sharper bite.
Each variation brings its own personality while keeping the satisfying crunch that makes these rolls so addictive.
Whether you’re hosting game night, putting together a casual appetizer spread, or simply indulging a craving, these egg rolls always deliver. Once you try them, you’ll understand why they’ve become such a hit with my family and friends.
Why You’ll Love These Smoked Turkey and Cheese Egg Rolls:
- Quick & easy: Minimal prep, just a few ingredients, and you can fry up a whole batch in minutes.
- Crowd-pleasing: Perfect for game nights, tailgating, or holiday gatherings.
- Customizable: Swap turkey for ham, mushrooms, or even sautéed veggies. Try mozzarella sticks or cheddar for a fun twist.
- Freezer-friendly: Assemble ahead, freeze in a single layer, then fry straight from frozen.
Note: I like frying these in a wok or deep skillet with about 2 cups of oil. I like wok because the curved sides help keep the temperature steady and make it easy to turn the rolls without splattering. A deep skillet works too, but if you have a wok, it’s a great option for small-batch frying.

Smoked Turkey and Cheese Egg Rolls

Crispy, cheesy, and golden, these Smoked Turkey and Cheese Egg Rolls are the perfect appetizer or game-day snack. Easy to make, customizable, and always a family favorite!
Ingredients
- 1 package egg roll wrappers (20 wrappers, 16 oz / 450 g)
- 8 oz smoked deli turkey, chopped (225 g)
- 1 cup crumbled feta cheese (150 g)
- 2 large eggs, lightly beaten (100 g)
- Vegetable oil, for frying (about 2 cups / 475 ml)
Instructions
- Make the filling: In a medium bowl, combine the chopped smoked turkey, crumbled feta, and beaten eggs until well mixed.
- Assemble: Place 1–2 tablespoons (about 20–25 g) of filling in the center of each egg roll wrapper. Moisten the edges with water, then fold and roll tightly, sealing the ends. There are illustrations on the egg roll package showing how to do this.
- Heat oil: In a deep skillet, wok, or Dutch oven, heat 2 inches (5 cm) of vegetable oil to 350°F (175°C).
- Fry: Fry the rolls in small batches, about one minute per side, until golden brown and crispy.
- Drain & serve: Remove and place on a paper towel–lined plate to drain. Serve hot with dipping sauces of your choice.
Notes
- Seal tightly: Use water on the edges and press firmly to keep filling inside.
- Batch fry: Don’t overcrowd the pan; it helps the rolls cook evenly and stay crispy.
- Vegetarian swap: Replace turkey with mushrooms, spinach, or shredded cabbage & carrots.
- Cheese variations: Mozzarella, cheddar, or Gouda are all delicious alternatives.
- Make ahead: Assemble rolls and freeze in a single layer. Fry straight from frozen, adding an extra minute to cooking time.
