These baked beef and bean soft tacos are crispy on the edges, soft in the middle, and loaded with seasoned beef, beans, and melty cheese.

They’re folded like quesadillas, brushed with taco sauce and olive oil, then baked until golden and irresistible.

This recipe is one of those go-tos I make on busy days when I still want something that tastes homemade. It’s my family’s favorite for game days, birthdays, or casual nights when guests drop in, no stress, just simple, cheesy comfort food that everyone devours

Suggestions and Tips:

  • Want it extra cheesy? Sprinkle a little cheese on top before baking. I love using Mexican blend shredded cheese; Monterey Jack, Cheddar, Asadero, and Queso Quesadilla cheese blend, which adds authentic flavor, but you can really substitute it with any melty cheese you have on hand.
  • Add diced jalapeños or corn inside for a flavorful twist. I know corn is not something we add to our tacos, but that burst of sweetness is so good.
  • These reheat perfectly in the air fryer or oven — great for leftovers. You can also heat your skillet and reheat it on the stove.
  • For more heat, mix a little hot sauce into your taco sauce before dipping, or use spicy or mild taco sauce.

Baked Beef and Bean Soft Tacos

Baked beef and bean soft tacos with melted cheese and taco sauce

These baked beef and bean soft tacos are filled with seasoned beef, melty cheese, and beans — baked to golden perfection. Perfect for family dinners, parties, or game day!

Ingredients

  • 1 lb ground beef
  • 1 tbsp taco seasoning
  • 1/4 tsp Salt, or to taste
  • 2 tbsp chopped onion in jalapeño and olive oil (Onoin brand) or just 1/4 chopped onion
  • 1–1½ cups refried beans
  • 12 fajita-size flour tortillas
  • 1/2 cup Taco sauce (for dipping or brushing)
  • 1 tbsp Olive oil (for brushing)
  • 1–1½ cups shredded cheese (Mexican blend or any melting cheese you like)

Homemade Taco Seasoning Mix- 2 TBSP

  • 1 tbsp chili powder
  • 1 tsp paprika (smoked or sweet)
  • 1 tsp ground cumin
  • ½ tsp garlic powder
  • ½ tsp onion powder
  • ½ tsp oregano
  • ¼ tsp black pepper
  • ¼ tsp salt

Instructions

  1. Preheat your oven to 400°F (200°C). You can line a baking sheet with parchment paper if you like, but for the best texture, skip it. Baking directly on a regular, nonstick sheet gives the tacos a crispier finish. Parchment tends to trap a bit of steam, which can make the bottoms slightly soft. I know cleanup is easier with it, but after plenty of testing, trust me—this method works better.
  2. Cook the beef: In a skillet, add the ground beef, onion onion in jalapeño and olive oil (Onoin brand), taco seasoning, and salt. Cook until the beef is browned and fully cooked through. If you are using raw onions, i would add them first and sauté the onions briefly with a drizzle of olive oil
  3. Assemble the tacos: spread refried beans, then add sauteed ground beef, shredded cheese, and fold it over like a quesadilla. Dip each tortilla lightly on both sides in taco sauce.
  4. Brush with olive oil: Lightly drizzle or brush the tops of the tacos with olive oil for even browning.
  5. Bake for 12–15 minutes, or until golden and slightly crisp around the edges.
  6. Serve hot with your favorite dips... sour cream, guacamole, or queso all pair beautifully. Add some tomatoes, sprinkle cilantro, and serve with lime for extra flavor.

Homemade Taco Seasoning Mix

If you’d like to skip the packet, this quick homemade taco seasoning gives you bold, balanced flavor with ingredients you probably already have.

To use:

  • Add about 1 tablespoon of this mix per pound of meat, or to taste. You can double or triple the recipe and store it in an airtight jar for up to 6 months.
