If I am being honest, I could seriously eat this whole tray of nachos. I love them as much a much family.

It’s just so comforting and delicious. We just adore finger foods.

This time I tried something different or new, and my kids seems to love it.

When I told them “that chili nachos was meatless”, they could not believe it. It was really tasty.

To be honest, I was impressed myself, although I do not need much to get impressed. I am a simple gal.

Pizza, nachos, finger foods, charcuterie and cheese boards are stable on Sunday when we watch football.

I would not change that for anything. With that being said, sometimes I serve chicken wings or sliders as well.

Regarding this recipe, you can totally double this. Yes, you can!

Well, I totally did, of course. I always have to double recipes because my family do not use serving sizes. They stop when they are full. I rarely have any leftovers, even on Thanksgiving.

Meatless Chili Nachos Recipe

On the other hand, I am the one who reads labels all the time. I know, that’s a flaw of being chubby as a kid and now a food blogger.

Anyhow, if you try making this one, I have a feeling that you will like it. It is really refreshing especially if you have vegetarian family member or a friends coming over.

Meatless Chili Nachos Recipe
Yield: Party food; Serves 4

Meatless Chili Nachos

Meatless Chili Nachos

Simple, delicious and perfect for a game day! Don’t you just love nachos? If I am being honest, I could seriously eat this whole tray of nachos. I love them as much a much family.

Prep Time 10 minutes
Cook Time 12 minutes
Total Time 22 minutes

Ingredients

  • 1 tbsp. Olive Oil
  • 1 pack Veggie based Sausage
  • 1 can Chili Beans, Vegetarian
  • 8 oz Salsa
  • 1 bag Corn Chips Preferably Multigrain
  • 10 oz Shredded Mexican Cheese Blend or Cheese Sauce

Topping:

  • 1/4-1/2 Red Onion
  • 2-3 Scallions
  • 1-2 Tomato
  • Jalapenos
  • Parsley or Cilantro

Instructions

  1. Preheat oven to 400F (200C)
  2. In a skillet add about 1 tbsp Olive Oil, then add Veggie sausage. Saute for a couple of minutes on medium heat. Break into small pieces using a fork. Press and break, continue sauteeing until it is heated through and cooked, 3-4 minutes.
  3. To the veggie sausage, add can of chili beans and salsa, stir well and coat the veggie sausage. Take off the heat.
  4. Add tortilla/corn chips on the baking sheet, about half the bag, then scoop veggie sausage mixture (half of the mixture) and add on the chips.
  5. Add cheese and bake for 2-3 minutes or until the cheese is completely melted and bubbly. You can use nacho cheese sauce**
  6. Take the baking sheet out of the oven and add another layer of veggie sausage mixture, then top it with remaining cheese. Bake for a couple of minutes or until cheese is completely melted.
  7. Chop and dice onion, scallions, tomato and parsley or cilantro.
  8. Add the topping on the nachos and serve with more salsa and sour cream on the side.
    Serve Immediately!

Notes

  • You can do this ahead and put together when it time to entertain. If you do not want this meatless, use ground beef or turkey and add chili beans of your choice.
  • IF you are using ground beef, make sure to drain any excess oil before adding beans and salsa. For vegan cheese, you may try “GO VEGGIE” Vegan products are dairy and lactose-free and do not contain casein, eggs, or gluten.
  • If you don’t want to use chili beans, well, you can use black beans or any that you like or have on hand.

My family adores chocolate-dipped strawberries and let me tell ya, they disappear from my platter quite fast. I set plates with different options for toppings and nuts are always our favorite.

Chocolate Dipped Strawberries

I usually get several pints, because I like choosing the same size of strawberries. Although I like a smaller size rather than the huge ones, they just look better.

Well, you may buy as many as you want, however, keep in mind if you going to serve them if you get more there chance that you will end up with many same size strawberries.

With that being said, these are amazing over holidays to share with your loved ones. I made them many times for New Year’s Eve.

They are a perfect ending of the year as well as welcoming a new one. Wouldn’t you love to have these on the table? I know they are always such a delightful treat.

Chocolate Dipped Strawberries

Chocolate Dipped Strawberries Recipe

Chocolate Dipped Strawberries - Crisp and playful on your tongue, with the rich blanket of chocolate, sparking magnificent taste of delectable comfort.

Prep Time 15 minutes
CHILL Time 30 minutes
Total Time 45 minutes

Ingredients

  • 1 pint about 20 medium-large strawberries with stems
  • 6 ounces semisweet chocolate chips or white vanilla baking chips Chocolate bark for dipping fruits
  • 1 teaspoon Coconut oil or unsalted butter 1 teaspoon shortening for substitute
  • *You can use additionally 2 ounces of dark chocolate or white chocolate for the drizzle
  • *You can use crushed nuts or sprinkles
  • *Almond Bark Chocolate Baking Bar -- you can find these similar chocolate barks which are fantastic for dipping at almost any store baking aisle.

Instructions

  1. Gently rinse strawberries and dry on paper towels (strawberries must be completely dry). Line cookie sheet with waxed paper or use a cookie rack.
  2. In 1-quart saucepan, melt chocolate chips and coconut oil or unsalted butter (you can use about 1 teaspoon of shortening as a substitute) over low heat, stirring frequently. Remove from heat. I used a double broiler; Place water in the bottom of the double boiler so the top of the water is about 1/2 inch below the upper pan. Then place the double boiler over low heat. Stir the chocolate constantly until it is melted. The water at the bottom of the double boiler should not come to boiling while the chocolate is melting. Stir until it is completely melted.
  3. Dip lower half of each strawberry into chocolate mixture; allow excess to drip back into the saucepan. Place on waxed paper-lined tray or cookie rack.
  4. Refrigerate uncovered about 30 minutes or until chocolate is firm, or until ready to serve.
  5. Store covered in refrigerator so the chocolate does not soften.

Notes

This is so much easier when you have 6-inch lollipop sticks.

You can get them at your craft store, such as Michaels if you are in the USA or Amazon. This is fun for the kids, and adults so you can set a couple of topping options if you have a party, such as nuts, sprinkles, coconut, etc. My favorite is with walnuts, but hazelnuts are fantastic too.

I had that moment of “I’ll have what she’s having” when I tasted this so-called cake, Sugar Cookies Chocolate Caramel Skillet Cake. Can I just say, this was OMG!?

Just to be clear, I am not addicted to sweets. Well, I am far from it, yet sometimes, I like having something sweet like this cake.

I had challenged myself to create something that you might not expect to make out of sugar cookie dough. I believe that I accomplished that.

With that being said, I absolutely love the combination of chocolate and caramel. Throw in some nuts and voila. I am in heaven!

Sugar Cookies Chocolate Caramel Skillet Cake

You have an amazing skillet cake that takes almost no effort at all because you have the work cut out for you by using sugar cookie dough by Pillsbury.

Pillsbury is my family’s favorite, and personal preference. Around the holidays, I am extremely busy and I don’t have time to make cookies from scratch, so these are most definitely life-savers.

To be quite honest with you all, I rather use Pillsbury cookie dough than spend hours preparing a cake that I know will end up in disaster.

You see, I am not much of a “cake” baker, so Pillsbury has been my savior for many years; school parties, family gatherings, busy holiday season.

Sugar Cookies Chocolate Caramel Skillet Cake

Also, to add that Pillsbury sugar cookies are affordable, especially for my family of five. Of course, I bought a couple of these sugar cookie logs at my local Walmart, to create this skillet cake.

All the ingredients used in this recipe are from Walmart. I just like a store where I can go and get everything that I need in one place.

When the holiday season arrives, and it is just around a corner, this comforting, sweet, delicious and simple cake going to be the center of attention on our table, especially around Christmas time.

The hardest part is waiting until the cake cools down, just for 10-15 minutes.

I liked eating them warm with a cup of hot coffee, but I must say that they are very delicious cold or even the next day. 

However, I had to wait until they are completely cooled down so I could take pictures. I kept myself busy, by making dinner, washing dishes, etc. 

Skillet Cake

I can’t even tell you how hard it has been to resist going over to my studio table to take just a little bite. They are gooey, chocolaty, sweet, perfect if you love sweets.

The next day, I had a few slices leftover, and this is absolutely heavenly and irresistible cold, too.

Obviously, you can make beautiful sugar cookies and decorate them with your family over the holidays, or other delicious sweet treats. Perfect time to make memories with your kids, in the kitchen.

Sugar Cookies Chocolate Caramel Skillet Cake

Skillet Cake

Tasty and easy skillet cookie cake!

Prep Time 10 minutes
Cook Time 27 minutes
Total Time 37 minutes

Ingredients

  • 2 Pillsbury Sugar Cookies
  • 1/2 cup Semisweet Chocolate Chips
  • 1/4 cup American Classic Caramel Bites, optional
  • 1/2 cup crushed Hazelnuts or any other nuts on hands

Garnish

  • Cocoa Powder
  • Crushed Hazelnuts

Instructions

  1. Use well seasoned 10" Iron Skillet. Read notes*
  2. Preheat the oven to 350 degrees Fahrenheit
  3. Open one pack of Pillsbury Sugar Cookie dough, and press firmly on the bottom of the skillet. The well-seasoned skillet should be nonstick, so no need for butter.
  4. Add semisweet chocolate chips, American Classic Caramel Bites chopped hazelnuts. Press slightly into the bottom sugar cookie dough.
  5. Open the other Pillsbury Sugar Cookie dough and add a little bit at the time on top. Use spatula and fingers to evenly spread the dough. It doesn't have to be perfect because the cookie dough will slightly expand and fill the gaps.
  6. You can add more chocolate chips and chopped hazelnuts on top if you desire.
  7. Bake the skillet cake in the preheated oven for 25-27 minutes.
  8. Allow it to cool down for about 20 minutes before cutting into wedges and serving.
  9. Dust with cocoa powder and add more crushed nuts.

Notes

  • You can use the smaller skillet, but in that case, one sugar cookie dough log, split in half might be enough. 
  • You can use PB chips instead of caramel bites.
  • After it bakes, skillet cake will be very soft, and when it cools down it will have the gooey texture inside, but the top will be firm.
  • Since it has two layers of cookie dough, you must know that this is not your average cookie, and it does need time to bake.
  • You may use other nuts.
