You do not need hours of cooking and standing in the kitchen to create one amazing meal. You really do not! That is the whole point of this blog. 99% of my recipes are easy because I do not have hours to stand and cook, even though I cook every single day.

Sometimes, I use shortcuts, meaning store-bought seasonings, cake mixes, or taco shells.

I mean, even though it tastes 100 times better when you make it yourself, still it is perfectly alright if you get from the store your favorite seasoning or something that will save you time.

These tacos were delightful and refreshing. I really loved the idea of sweet and savory salsa, and this one was all that plus more.

The Tanginess of salsa gave the whole dimension of great flavors that made these tacos taste even better. However, fish… You will want to take the bread and just scoop it with your fingers directly out of the skillet for one big bite.

It was out of this world. I think it is well-balanced, healthy, delicious, and perfect for your weekend dinners.

Fish Taco with Peach Salsa

Simple and easy recipe for Fish Taco with Peach Salsa

Prep Time 10 minutes
Cook Time 20 minutes
Additional Time 10 minutes
Total Time 40 minutes

Ingredients

  • 1 – 1 1/2 pounds 453g-680g of Fish – white fish, tilapia, mahi-mahi, etc.
  • 2 tbsp. Taco seasoning
  • Generous pinch of Salt and Ground black pepper
  • Pinch of Chili Flakes
  • Juice of 1/2 lime
  • 1 tbsp. Olive Oil

PEACH SALSA:

  • 1/2 English cucumber, or 4 mini cucumbers Japanese, etc.
  • 2 Tomatoes
  • 1/2 Red Onion
  • 1 Peach less ripe
  • 2-3 Scallions
  • Handful cilantro Italian flat leaf parsley could be used instead
  • 1 Lemon Juice
  • 1 tbsp. Olive Oil
  • Salt and Pepper to taste
  • Chili Flakes *optional

Serve:

  • Soft or Hard Tortilla Corn Shells
  • Lettuce

Instructions

FISH:

  1. If the fish is frozen, defrost it.
  2. Place the fish in a bowl or a pan, then add taco seasoning, and just massage it for a couple of seconds, then add salt and pepper, lime juice, and a drizzle of Olive Oil.
  3. Again, massage the fish with all the seasoning to coat it. Leave the fish to marinate for 15 minutes.
  4. After 15 minutes, preheat the skillet, or frying pan, add oil to almost smoking point.
  5. Add fish, a few pieces at a time, and cook until the fish is cooked through, 145F (62.8C). If it starts to stick to the bottom or rip, it’s alright, we are going to shred it anyway. Don’t over-crowd the pan, so cook a couple at the time, depending on the size of your pieces. Place on the plate until everything is cooked. Then place the fish back in the skillet, and lightly shred. Now, it’s the best time to taste it and see if you need more seasoning, salt, or taco seasoning if you like the stronger flavor.
  6. Build your taco however you like.

PEACH SALSA:

  1. Dice all the vegetables and fruit.
  2. Toss it together, and add lime juice, olive oil, and salt, and pepper to taste.
  3. You can add finely chopped cilantro or parsley, but also take the leaves off and roughly rip with your hands and toss with the salad.
  4. I used 1 lime, but if you like it more citrusy, add more.

Notes

You can use soft small tortillas or hard corn taco shells. If you do not have peach, a good substitute is one mango or even a cup of chopped pineapple. You want the sweetness that you can achieve with fruit.

When I looked through my kitchen window this morning as coffee was dripping down in my mug, I thought it’s going to rain.

Gray clouds surrender the sky and it was rather dark but pretty enjoyable to just sit and look at the birds flying around and making beautiful noises.

I usually go outside with my cup of Joe and it was a comfortable and very peaceful morning, even with only a few hours of sleep that I had.

The smell and taste of coffee and morning crisp air always wake me up and give me that feeling of calmness; I connect with my thoughts, plan my day, go over the schedule and write down some things that are on my mind.

I love to write even though I am not very good at it, but I try. It is almost the same as if you give me a microphone and I start to sing! Then the sun just came out…out of nowhere! Le sigh! I wanted rain!!!

Spicy Tuna Salad

It was kind of day made for rain. If you didn’t notice before I really love rainy days! I love just to listen and relax while it’s pouring outside, Yiruma radio on Pandora is usually in the background, a book in my hands, and of course, coffee or a cup of tea is right next to me. I would say that is my perfect morning or evening.

When I have a really crazy busy day I make this Tuna salad. It is a quick fix, and my kiddos like it, at least my oldest two.

Do I really call it a recipe? Well, nah! But, today, I will call it “the crazy easy short-cut meal”…we all do it, right? Precooked chicken? Takeouts? Leftovers?

Whatever saves me, time man, I am all over it! From time to time I add some cooked beans to it… a very good combo with tuna.

Spicy Tuna Salad IS A PERFECT LUNCH!

Ingredients

  • 3, 2.5 oz pouch Tuna StarKist
  • 4 baby Pickles diced
  • 2 tablespoons Onion chopped, optional
  • 2 tablespoon Avocado Mayo or any that you prefer
  • 1/2 tablespoon Sriracha
  • 1/2 tablespoon Lemon juice
  • Salt to taste if needed

Serve it with:

  • Pita Bread or Lettuce
  • Asian Coleslaw fresh
  • Sesame Ginger Vinaigrette or similar

Instructions

  1. Place Tuna in the bowl and mix with relish, avocado mayo, sriracha, and lemon juice. Mix well and taste to see if salt is needed.

  2. Add Sesame Ginger Vinaigrette on top of the Asian Coleslaw and toss it to coat it. Add as much as you wish to please your taste,.

  3. Preheat for about 10-second pita bread. Place tuna salad in the bread, add Asian Coleslaw on top. you may wrap it in the Low carb tortillas of Lettuce Wraps.You may add other toppings if desired.

Notes

I love tuna, and I love to dress it up especially with what I just wrote in the ingredient list. One of my personal favorites is from Starkist tuna from a pouch.

Now you have so many options and you can already get spicy, or lemon-flavored tuna, etc. but to tell you honestly I like it plain and I add what I like.

My family eats a lot of pasta, as probably most of the households in the world. Just in the U.S. according to The American Pasta Report, commissioned by the National Pasta Association, 75% of Americans eat pasta on a weekly basis.

We can make delicious and simple meal fast and most of all affordable. After “HeartlandPasta” approached me and asked to try their products I was extremely excidted.

It took me about 8 minutes until my spaghetti was done to
the perfection. In the meantime, I combined more delicious ingredients to raise up the nutritional benefits as well as to dress it up so my family can enjoy it even more.

My dinner was on the table in under 30 minutes. The best part is that if you are serving it to the picky kids and non-veggie eaters like my youngest son, there is actually one full serving of vegetables hiding in the pasta.

How awesome is that?

Spaghetti in Peas and Carrot Sauce with Scampi

Ingredients

  • 12 oz  Heartland Hidden Vegetable Spaghetti
  • ½ Tbs. Salt for seasoning the water
  • 2 Cups fresh Fava Beans (¼ tsp. Salt
  • for the water)
  • 1 Tbs. Pure Olive Oil
  • 1 Lb. Fresh Scampi peeled and divined
  • Sprinkle of the sea salt for the scampi
  • 2 Tbs. Lemon Juice

Sauce:

  • 2 large Organic Carrots
  • 1 Cup Frozen Peas
  • 3 Garlic Cloves
  • 4 Scallions green onions
  • 2 small Red Chili Peppers or less
  • ½ Cup packed Cilantro Leaves
  • Juice from ½ Lemon
  • ¼ Cup Pure Olive Oil
  • ½ Cup Whipped Heavy Cream
  • 2 Tbs. Water
  • Salt and Pepper to taste

Instructions

  1. Start by washing, peeling and cutting carrots lengthwise, then drop them in the boiling pot of water along with the peas; Boil for 15 minutes.

  2. In a meanwhile, roughly chopped scallions, cilantro, and chili peppers peel garlic and put in the food processor.

  3. Once the carrots and peas are tender but not overcooked, drain and drop in the food processor and add lemon juice, olive oil, whipped cream, water, salt and pepper to taste; Process until it is creamy in texture and lump free.

  4. Boil a large pot of salted water and put the Heartland Spaghetti in; Boil for 8-10 minutes or until it reaches your desired tenderness.

  5. Peel and boil for several minutes Fava Beans; approximately 5 minutes in hot boiling salted (¼ tsp. Salt) water.

  6. While the spaghetti and fava beans are boiling peel the scampi, wash, season with a bit of sea salt, cut in smaller pieces (optional) and drop on the hot olive oil greased the skillet. Cook for next 3-4 minutes on each side; once they are done, squeeze lemon juice on the scampi and set aside; Keep few unpeeled scampi per serving for the final plating-Just cook them few seconds longer.

  7. In a large pan put just a drop of olive oil. Put the sauce in stir few times and right from the pot with the tongs take the spaghetti out and drop in the pan. Give the pan good shake back and forth, turn few times if you want with the tongs, add drained fava beans, scampi, cover and it’s ready for serving.

  8. Serve HOT!

Recipe Notes

If you have allergies on a scampi or seafood, you can use chicken breast for this dish.
If you cannot find fava beans you may use lime beans but it is optional, although fava beans add amazing amount of nutrition. You may also reserve some peas for the final plate presentation.
