Roasted vegetables with sausages make such a great dinner. On top of it, it is so versatile. 

I do love and live for versatile meals!

Depending on the season you may use fresh veggies, and use any sausages that you prefer. 

However, for this meal, I had a huge bag of organic veggies from Cosco and Grass-Fed Polish Sausages. What a treat?!

As I said you are more than welcome to use any blend of vegetables or any type of sausage. Sometimes, I add bacon too but today I am keeping it as simple as possible.

If you are vegetarian do not turn away. You can most definitely use vegan sausages or tofu cubes. I would just season tofu very well and bake it the last 15 minutes of roasting.

With that being said, I made this in my Air Fryer Oven. If you follow me for a while, you know that I love Air-Fryers. I Air Fried this in my oven-safe baking dish at preheated air fryer to 375 degrees Fahrenheit for 35 minutes to 40 minutes for two servings. 

Also, as I said, I used frozen vegetables and that was absolutely fine. I seasoned with salt, pepper, garlic powder, herbs such as parsley and thyme, added a bit of unsalted butter, and drizzled it with olive oil.

They turned out perfect!!!

If you do not have an air fryer, do not fear, Sandra is here! haha

Simply use try using convection roast or convection bake. Just preheat it as you would preheat your oven and bake. Easy-Peasy!!!

Since 80% of my meals are low carb this was a fantastic choice. So if you are on Keto or Paleo, this meal would make an amazing meal for you.

Easy and simple recipe for delicious Roasted Vegetables with Sausages

Prep Time 5 minutes
Cook Time 35 minutes
Total Time 40 minutes

Ingredients

  • 2 cups mixed vegetables, frozen (broccoli florets, yellow carrot, regular carrots, cauliflower)
  • 1 Grass-Fed Polish Sausages (or any other on hand)

SEASONING:

  • 1/2-1 teaspoon salt
  • 1 teaspoon black pepper
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1/2 tablespoon dried thyme
  • 1 tablespoon dried parsley

FATS:

  • 2 tablespoons unsalted butter
  • 1/2 tablespoon olive oil

Instructions

  1. Preheat oven to 400F.
  2. Toss vegetables with seasonings and herbs.
  3. Add butter and oil all around vegetables.
  4. Slice sausage/s into thicker pieces.
  5. Roast/Bake/Air-Fry for 30-35 minutes. If you like veggies a bit more on the cooked side then 40 minutes would be enough.
  6. Take out. toss with all the oils and juices and serve.

With that being said, I have this tasty No Bake Sweet Fruit Pizza for you guys. The video is straight to the point as all my other videos are. You can easily follow along and make it yourself as well.

 

Other than this topping, you could make caramelized apples or pears for the upcoming fall season or S’mores with Peanut Butter. Now, do not you agree that those versions sound incredible? My mouth is certainly watering. I love the flavors of fall.

However, since we are still blessed to have summer berries, I have created this colorful fruit pizza with a slightly sweet, chilled cream cheese with a hint of the flavor of peanut butter.

I have a feeling that most of you are going to agree that this makes an excellent and unique dessert. Well, let us be real, this is a type of tart, but isn’t it so much fun calling it a pizza?!

Prep Time 30 minutes
Additional Time To Chill 30 minutes
Total Time 1 hour

Ingredients

Sweet Pizza Base:

  • 1 cup almond flour
  • 1/2 cup roasted unsalted peanuts, chopped
  • 2 tablespoons cacao powder
  • 3 tablespoons confectioners swerve, sweetener
  • 2 tablespoons PB2 Powder
  • 2 tablespoons monk fruit syrup
  • 1/2 teaspoon vanilla extract
  • 2 tablespoons coconut oil
  • 1/8 teaspoon sea salt

Filling:

  • 4 oz cream cheese, softened
  • 3 oz heavy whipped cream
  • 2 tablespoons confectioners swerve, sweetener
  • 1 tablespoon PB2 Powder
  • 1/2 teaspoon vanilla extract

Topping:

  • Mixed Berries— blueberry, blackberry, raspberry, and strawberry.
  • 1/2 tablespoon confectioners swerve

Garnish:

  • Fresh Mint

Instructions

Line a cake pan,
skillet, or springform pan with parchment paper. If you wish for pizza look than
I recommend a circular pan.

Combine

  1. The almond flour, cacao powder, chopped peanuts, PB2 powder, salt, the monk
    fruit syrup, vanilla extract, and coconut oil stir the mixture in between each
    ingredient addition.
  2. Using your fingers mix until it comes together into a sticky dough.
  3. Press the dough evenly along the bottom of the prepared pan. You may brush the bottom of the
    pan or a skillet so the parchment paper could stick better without moving.
  4. Chill the base in the fridge for roughly 10 minutes.

Filling:

  1. Using an electric mixer, combine softened cream cheese, whipped cream, Swerve sweetener, PB2 powder, and vanilla extract.
  2. Mix until smooth and thick in texture.
  3. Pull the pizza base out of the fridge and spread evenly filling then put it back in the fridge for ten more minutes.

Topping:

  1. Wash and pat dry berries, or any other the fruit you have chosen to use.
  2. Distribute fruit evenly on the top of the sweet filling.
  3. Dust with a bit of Confectioner Swerve and garnish with fresh mint.
  4. Allow to rest and chill in the fridge for approximately 30 minutes before serving.

Notes

  • You may use any sweetener that you prefer.
  • If you are allergic or sensitive to peanuts, please use alternative products such
    as unsalted chopped almonds, and
    PB2 Almond Powder The outcome will be
    slightly different but nonetheless very tasty.

If you are following a low carb lifestyle, then you probably heard of or made these yummy keto-approved waffles.

What are Chaffles-Low Carb Keto Waffles?

I know, by the name you would never tell what it is. I have no idea who gave the name. So Chaffles are waffles made with only shredded cheese and eggs.

You can add different herbs to enchant the flavor, but that is pretty much it. For the best results, I would have to suggest shredding the cheese yourself.

You will still have marvelous waffles using pre-shredded cheese, but if you do it yourself it is honestly so much better.

I love making these when I am craving a good sandwich, or when I want to pack my kids a low carb lunch. Above all, they are just so tasty and easy to make, plus you only need 2 ingredients which most of us have in our fridge.

It is so easy to upgrade them like add a bit of almond flour, dash of sugar and vanilla to create a tasty low carb sweet waffles.

Although I prefer these savory over sweet because I’ve seen them and I really do not like the idea.

With that being said I have been testing other keto recipes that are full proof and absolutely amazing. I just don’t know which one to post, chocolate or regular. Ahh! Sweet decisions.

I used my regular size waffle maker, which is just fine. I believe any waffle maker would do. My kids really loved these and my husband asked for more.

Well, what’s not to like right? As my daughter, Anna, would say, it is a cheesy omelet made in a waffle form. Oh, and so delightful that I am so sure that you guys going to love.

So this is pretty basic keto breakfast or brunch. Bacon, eggs, and cheese. I should’ve made a few sunny side eggs ’cause I would love it with this. However, this was absolutely perfect.

I served it with some sour cream and just for the presentation, I added crumbles of feta cheese. It just looked like it belonged there.

Wouldn’t you agree? I just loved this plate so much. It hit the spot!

Prep Time 1 minute
Cook Time 2 minutes
Total Time 3 minutes

Ingredients

  • 2 large eggs, mixed
  • 1 teaspoon dried parsley
  • 1/4 teaspoon ground black pepper
  • 56g (2oz) Mozzarella Cheese shredded
  • 56g (2oz) Cheddar Cheese, shredded

Instructions

  1. Mix eggs, then add dried parsley and ground black pepper.
  2. Shred cheese and add to the eggs, mix well.
  3. Add egg and cheese mixture on to preheated waffle iron and close it.
  4. Depending on your waffle maker, wait until the light turns on.
  5. My waffle maker makes 4 square regular waffles at the time, which in this case is 2 servings.

Notes

You may use any cheese that you prefer. I enjoy this combo, but you can definitely test and see which one you like the best.
