My weekday mornings are crazy, seriously. Dealing with 8-year-old at 7 o’clock is no joke.

Who, by the way, loves to rest his head on the toilet paper roll, while sitting on the toilet and snooze before school.

He takes too long in the bathroom, all the same, there is a whole other level when you are dealing with tween and teen.

It’s like trying to explain the unexplainable; where are my socks, my red/yellow shirt, what’s for breakfast?

More meltdowns that you could even imagine. Do I need to go into further details? I think you get the point!

I believe that one long vacation (alone), wouldn’t be enough. Can you imagine that I placed a cup of water to boil for my quick instant coffee in the kitchen cabinet instead of the microwave?

What was worse, I closed the cabinet door and waited for a few seconds before I realized what I did!

A few efff bombs later, I made another one, of course, plugged my ears with sounds of Stone Sour and started to brainstorm what recipe should I post, and there you go. My mornings are lovely. You envy me, don’t you?!

Grilled Chicken and Ham Sandwich

A few months earlier while stopping to grab something quick to eat at subway because I didn’t want to cook for myself, two pregnant women stood behind me.

So, they asked me how does subway’s buffalo chicken taste with toppings that I added; pickles, spinach, red onions and jalapenos with a good amount of creamy Sriracha.

I was like “Spicy” and good. I wasn’t rude, I promise, I even added a smile on my grumpy face.

However, I was just simply waiting to pay my order, so discussing my sandwich wasn’t something in my mid-morning agenda. Especially with 4 more people waiting in line.

Also, I was in 3 sizes, too big joggers looking more like a homeless person without makeup and an oversized sweatshirt.

I just wanted to grab a sandwich and go back home to finish an exhausting project while chomping on my footlong, without even making eye contact.

Did I mention earlier that I am not a morning person?

Anyhow, that’s how my sandwich was born; mostly inspired by my footlong!

Since I have my smarty pants college students that write from time to time, asking for no-bake recipes, I thought to make this sandwich.

One latest email got me chuckling. The question was: Can they (roommates) “make/bake” bread in the microwave? It was funny and cute at the same time!

Needless to say, we were all 19, right?! With that being said, I’ll try to include some fun, no-bake recipes and test few that could be made in the microwave.

For this sandwich, you could make the bread yourself or simply buy french bread.

Grilled Chicken and Ham Sandwich

Of course, I baked it but used canned “Pillsbury” French bread, sprinkled with Japanese sesame seasoning and then baked in my oven.

Everything is optional here. You can make and bake your own bread, use store-bought grilled chicken or grill it yourself, add smoked turkey, or Virginia ham, it really comes down to what you like or have.

Grilled Chicken and Ham Sandwich

Grilled Chicken and Ham Sandwich

Easy and tasty recipe for Grilled Chicken and Ham Sandwich.

Prep Time 5 minutes
Cook Time 10 minutes
Total Time 15 minutes

Ingredients

  • 12 inch French Bread
  • Smoked Provolone cheese
  • Grilled chicken breast
  • Virginia ham
  • Kosher Pickle slices
  • Pickled jalapenos
  • Baby Spinach
  • Scallions or Red Onions
  • Black pitted olives

Creamy Sriracha:

  • 1/4 cup 2 fl oz/59ml ranch dressing
  • 1 tablespoon mayo
  • 2 tsp. 2ml Sriracha
  • Mix it together and drizzle.

Instructions

  1. There is no direction here, just build a sandwich, however, you would like.
  2. I slice the bread in half and place cheese on the bottom side, then broil until it is toasted, bubbly and cheese completely melted. You can actually use a toast bread and toast in the toaster, then melt cheese in the microwave.
  3. Creamy Sriracha: this for me was not too spicy, not at all. I could go for a few more tsp. to get a really spicy kick.

Notes

If you want to make your own bread rolls go ahead, or one from Pillsbury. they are really tasty. To save yourself time, I would suggest hoagies. They are so good and perfect size, but you may use baguette or Italian bread.

Like I said before I started planning and testing recipes with my kids. So far it’s been good, and they loved each of them. This one was a winner today, so I thought to post it.

My daughter, Anna loves when I make funny faces for her lunch boxes, and I’m planning to post soon something more for boys.

Lunch Box: Baked Panko Chicken


My oldest one loves these, but he would never ever take it to school. Instead, I mix rice and peas, with few sprinkles of toasted sesame seeds and drizzle of sesame oil and he is a happy camper.

That’s when they step into the teenage stage…nothing cute could be offered!!! 

Again, I have to say that you DO NOT have to make the same exact lunch box. I started with this to inspire and motivate others to start, because school lunches are…ahhh~ how to put it, hm! Well, they are pretty disgusting!

There, I said it again out loud! But it’s the truth, and I get so mad at myself when I don’t make a lunch box for them. Usually, I bring later to school and around lunch time, if I forgot to prepare night before.

I guess I can say that I am lucky one that can work on her own pace, so I do always have time to enjoy lunchtime with kids at school.

Lunch Box: Baked Panko Chicken


Q: What Box is safe for me and my child?
A: Look for the boxes that have clear written label that they are BPA FREE just in case if they are plastic- BPA stands for bisphenol. BPA is an industrial chemical that has been used to make certain plastics and resins since the 1960s.


Seeking out BPA-free products may not always be easy to do. Some manufacturers do label their products as BPA-free, but some do not. If a product isn’t labeled, keep in mind that most aluminum cans or bottles have linings that contain BPA, while steel bottles or can do not. Polycarbonate plastic is generally hard, clear, lightweight plastic. It often has the No. 7 recycling symbol on the bottom. (source Katherine Zeratsky, R.D., L.D.from Mayo-clinic)

◾ When you are making food at night for the next day lunch boxes make sure about the box like mentioned above. Always preheat food after taking it out of the fridge, let it cool down a bit then close the lid. 

◾ IF you are using seasoned PANKO bread crumbs, be careful how much seasoning/salt you are using on chicken. If your breadcrumbs are plain to make sure to season it. TASTE and see!!! 

◾ For this, I used long grain rice, but it is best if you use short grain premium rice. The best results.

For 2 Lunch Boxes

Ingredients

  • 1/2 Tbsp. Oil
  • 1 1/2 Cup Seasoned Panko Bread Crumbs
  • 1/3 tsp. Chili Flakes *optional
  • 1 Tbsp. heaping Grated Parmesan
  • 1 Chicken Breast
  • 1-2 Eggs
  • Salt or another seasoning just a sprinkle

Other ingredients used:

  • A dip of your choice ketchup, mayo, mustard, etc.
  • 1 Cup Cooked Rice for each lunch box -for the facial features: seaweed  bologna, eng. cucumber skin, toasted sesame seeds
  • 1 cup of cooked Peas
  • Lettuce
  • Tomatoes cherry
  • Cucumber
  • Watermelon/Blueberry or any other fruit

Instructions

  1. few minutes, until golden on medium temperature. Set aside.
  2. Cut chicken into long thin strips; season it just a little with salt or any other seasoning that you like(I used about few pinches of Kick’s Chicken® Seasoning on all)
  3. Mix eggs and dip each chicken strip into mixed eggs. You can also dip on all sides into all-purpose flour (if you desire) before dipping it into mixed eggs, but I skipped that part -you are more than welcome to do it.
  4. After dipping into mixed eggs, roll the chicken strip into the toasted breadcrumbs. It should be coded on all sides.
  5. Place chicken into well greased baking pan/nonstick baking pan/or lined with parchment paper.
  6. Place a baking pan into a fridge for 15 minutes or 10 minutes into a freezer. (it could be also in the freezer overnight, just make sure to place it in airtight ‘freezer’ safe container)
  7. Preheat the oven on 350°F-375°F-depending on your oven (180°C-190°C/4-5 Gas)
  8. Bake for 20 minutes or until food/chicken thermometer reads 160-170°F (according to by food safety.gov)
  9. Take it out and cover with a paper kitchen towel until ready to be packed. Also, it could be placed in a container with a fitted lid, and in the fridge after it has been cooled down.

Recipe Notes

  • For the rice apple face, I had molds but you can use any mold if you have it, or you could make a rice ball too. For the facial features, I used dry seaweed for the eyes, bologna for the cheeks, and nose. Tomato for the lips.

This Mesquite Chicken Wrap is super easy and tasty. Give this one a try—I promise it’ll be a hit at your next gathering or pack it for your kid's lunch box.

Cook Time 15 minutes
Total Time 25 minutes

Ingredients

  • 1 chicken breast, two halves
  • 2 slices hickory-smoked crispy bacon, per person, optional
  • ½ tablespoon olive oil
  • 2 tsp mesquite seasoning
  • 4 large tortilla or wrap (low-carb, if preferred)
  • 4 slices mild cheddar cheese (or any cheese you prefer)
  • 1 cup mixed greens (any greens will do)
  • 1 cup homemade salsa

Salsa:

  • 2 cups chopped fresh ripe tomatoes
  • ¼ onion (yellow or red), chopped
  • 1 jalapeño, minced (seeds removed)
  • 4 tbsp chopped fresh parsley
  • 2 tsp fresh lime or lemon juice
  • Salt to taste

Sauce:

  • ¼ cup ranch dressing
  • ¼ tsp avocado oil or olive oil
  • ¼ ripe avocado, mashed
  • 1 tsp lemon juice

Instructions

  1. Cut the chicken into strips, rub with oil and mesquite seasoning, then grill (or pan-fry with a little oil) for about 3 minutes per side, until golden and cooked through.
  2. Set the chicken aside and prepare the salsa by dicing all ingredients to a similar size. Store any leftover salsa in the fridge.
  3. For the sauce, combine all ingredients and mix until smooth. Use the back of a spoon or fork to smash the avocado. This sauce can also double as a dip!
  4. If using a grill, place the tortilla on it, add cheese and chicken, and let the cheese melt. Alternatively, use a microwave or preheated oven.
  5. Add salsa on top of the chicken, cooked crispy bacon if using, mixed greens, drizzle with the sauce to your liking, wrap it up, and enjoy!

Notes

  • Feel free to use your favorite salsa! This is my go-to, but any salsa will work.
  • Chicken should be cooked to an internal temperature of 165°F-170°F.
  • This recipe also works great with pita or Italian bread.
  • Leftover salsa and sauce can be stored in the fridge.
  • The salsa and sauce yield more than one serving, so make extra chicken if you want additional wraps!
