I know that so many of you already know that fact about me. If you have never heard me talk, I do have an accent. It gets thicker when I am tired. I have kids so we are an English-speaking family, but they do understand Serbo-Croatian very well too.

Every so often, it gets extremely annoying when people do not even try to understand what I am trying to say. I do not think that I am hard to understand at all.

Needless to say, when people do not even try to understand me, all I desired to do is to turn around and walk away. Also, try really hard not to punch them.

Nevertheless, I have been living in the gorgeous city of Nashville for 21 years, more than half of my life, so I have rightfully earned the privilege to call myself a Southern lady.

So, I will bring to the table my version of the most popular Southern Jello Salad.

You could use a large bowl for trifle and create a beautiful dessert centerpiece. Perhaps for a smaller party, you can make individual desserts just by serving them in glasses.

With that being said, my family literally devoured this strawberry jello summer salad. I mean what’s not to like.

Summer Salad

We have cream cheese here and whipped topping, luscious strawberries, jello, plus graham crackers with butter. If you are like me, I know every pan corner will be licked clean.

Southern  Strawberry Jello Summer Salad

Strawberry Jello Summer Salad

Strawberry Jello Summer Salad

Strawberry Jello Summer Salad is undoubtedly an easy, fabulous and tasty recipe. We enjoy nothing but this incredibly simple and classic dessert.

Prep Time 10 minutes
Cook Time 10 minutes
Chill Time 6 hours
Total Time 6 hours 20 minutes

Ingredients

  • TOPPING
  • 2 packages (8.5g - 4-serving size each) Jell-O™ strawberry-flavored gelatin ( used sugar-free)
  • 1 3/4 cups (14 oz/412ml) Boiling water
  • 1 box (16 oz/500 ) strawberries, plus for serving
  • CRUST
  • 10 graham crackers, crushed
  • 1/4 cup (55g) unsalted butter, melted
  • FILLING
  • 1 container (8 oz/226g) Cool Whip whipped topping, thawed
  • 1 package (8 oz/226g) cream cheese, softened
  • 1/2 cup (100g) sugar (I used Truvia )
  • 1 tablespoon (13g) vanilla extract

Instructions

  1. Dissolve gelatin in boiling water. Stir in sliced strawberries; refrigerate until partially set, about 45 minutes
  2. Heat oven to 350° F. In a medium bowl, mix ingredients for CRUST. Press into ungreased 13 x 9-inch baking dish. Bake 7-10 minutes. Cool it completely.
  3. In a medium bowl, beat ingredients for FILLING with electric mixer on medium speed until smooth. Spread over crust. Make sure it goes to the very end sealing the edges so the topping doesn't leak though. It is okay if it does but for the perfect separation of each layer it is the best if you seal it. Cover and refrigerate until cool and gelatin topping in the bowl is partially set.
  4. Carefully spoon gelatin TOPPING over filling. Refrigerate 4 to 6 hours or until firm. I like adding more fresh strawberries when I serve this dessert.

Notes

You may add other fruit such as pineapple or peaches. Possibilities are endless.

Therefore, I would not only recommend this butter for sauteing but for baking and just spreading on your morning toast as well. This butter is a real jam. Lusciously delicious! Best butter that you will ever put in your mouth.

125th Birthday? Wow! Can you even imagine? Alright folks, let’s churn this thing up.

I brainstormed quite a few recipes using this amazing butter as they sent me three kinds; unsalted, sea salt and with garlic and herbs.

Don’t you just love butter with 85% butterfat and high-quality? You cannot possibly ask for more.

Also, its made by 6 generations of Butter Makers and made from pasture-raised cow milk. Again, yes, indeed they are America’s oldest family-owned creamery. That is why this butter is creamy heaven.

It also reminds me of my childhood, and I will tell you a tiny fact about me. One of my absolute favorite treats growing up was butter and a drizzle of pure homemade honey from my neighbors.

I would enjoy this every single day either after school or on weekends when I played all day outside. Till this day, not even one decadent dessert would replace a freshly baked bread with butter and a drizzle of honey.

Those memories I treasure and cherish and on occasion celebrate by eating my favorite treats.

If you want to churn your recipe up to the next level, I encourage you to use Minerva tasty butter to make my Caramelized Onion Tart recipe. It’s easy, tasty and a perfect appetizer for entertaining.

Cook Time 1 hour
Total Time 1 hour 10 minutes

Ingredients

  • 2 Sheets Puff Pastry
  • 2 pounds Onions, sliced into thicker rings, preferably Vidalia Onions
  • 3 tablespoons Minerva Dairy Unsalted Butter
  • 1 tablespoon Olive Oil
  • 1/4-1/2 teaspoon Salt
  • 1 teaspoon Ground Black Pepper
  • 2 Springs of Fresh Thyme, plus for garnish
  • 4 tablespoons Creme Fraiche

Instructions

Caramelized Onions:

  1. Melt the butter, then add oil in a large skillet. Add thick onion slices and turn the heat to medium. stir to coat for a bit and do not touch it until you see the onion changing color from the bottom. You can check by flipping one or two after 5 to 7 minutes.
  2. This is the beginning of caramelization. I do not add sugar, but I use sweet yellow onions which will give you an excellent caramelization of onions.
  3. Now, add the thyme, salt, and ground black pepper to the skillet and stir. Turn the heat to medium-low heat until the onions are completely translucent and caramelized. It will take around 30 to 40 minutes depending on your stove, skillet, etc. Remove from heat and allow to cool slightly.

Assembly:

  1. Preheat oven to 400 degrees Fahrenheit (190C)
  2. Thaw your frozen puff pastry, preferably in the fridge, overnight.
  3. Unfold your pastry only when fully thawed.
  4. Flour your work surface and your rolling pin. Use restraint with your rolling pin and just slightly roll. Use a fork and make small punching holes all around the bottom of the puff pastry.
  5. Add Creme Fraiche on the top of the pastry then slightly fold ends of the pastry, as shown on the pic. If you do not have Creme Fraiche, check notes below.
  6. As you see on step by step instructions make sure the pastry has four edges in order to hold the onions. You may make it as traditionally rectangular or bake in the circular baking tart pan.
  7. Bake between 15 and 17 minutes, depending on your oven. The pastry needs to be golden.
  8. Take it out and allow it to cool down for a minute or two before slicing.

Notes

Easy Creme Fraiche Substitute:

  • Mix 1 cup heavy cream and 1/4 cup whole milk sour cream together.
  • I like mixing it n the jar or a container with a fitted lid, but you can pour the mixture into a jar as well, cover and let stand in a warm place for about 8 hours.
  • Then stir and refrigerate for 24 hours before serving.

I am not a big fan of cold fruit. I am not sure why, but I actually liked it when I make this mixed fruit salad.

The sweetness of the fruit thoroughly blends together when it is coated with this amazingly delicious citrus maple dressing.

I am almost certain that you guys going to love this one because it is a keeper.

If you do not like maple syrup then use pure organic honey. I used sugar-free version but you may use any that you prefer.

Fruit Salad with Citrus-Maple Dressing

Easy and tasty fruit salad with citrus infused citrus maple dressing recipe.

Prep Time 15 minutes
Total Time 15 minutes

Ingredients

  • 1 cup Blueberry
  • 1 cup Strawberry, sliced
  • 1 cup Grapes, seedless, sliced
  • 1 medium size Pomegranate
  • 1 smaller Pineapple, peeled and cubed
  • 1 Mango pitted and cubed
  • 2 Kiwi, sliced
  • 5-6 Mint leaves
  • Lemon Thyme, optional
  • Citrus-Maple Dressing:
  • Juice from 1 Ripe Lime + zest
  • Juice from 1/2 Lemon + zest
  • 1/8-1/4 cup Maple Syrup (or honey)

Instructions

  1. Wash and prep all the fruit. You may keep everything in the fridge to keep the fruit cold. It will be easier to slice and it tastes better.
  2. Mix everything for the dressing in the glass jar.
  3. Once all the fruit is tossed together drizzle dressing a bit at the time and toss to coat.
  4. Store in the airtight container, large glass jar or glass bowl, then place the container in the fridge.
  5. I keep it in the fridge for up to 3 days.

Notes

You may use any any fruit that you prefer and more or less. I just added how much we added to our fruit salad but you can add more fruit especially if you omit. So, if you do not add Pomegranate please ad more grapes or strawberries or blueberries.

For the best taste keep in the fridge for up to 3 days.

I used Sugar Free Maple syrup to support my diet, you may use any that you prefer.
