You guys asked me so many time to post my version of this amazing sandwich and I always hesitated. To be honest, I was testing how I like it the best without offering anyone regarding how I make it.

Tasty Pressed Cuban Sandwich

I ate so many different version even though they all contain the same ingredients just slightly different made or prepared. In the end, what is truly authentic?

It’s food, a recipe and everyone add their own print, right? You are allowed to experiment and put your own little twist on dishes that you make for you and tour family.

That being said, my family went crazy for this one. Also, I made for my husband’s staff and they all loved it so I am confident that you guys going to love this recipe.

Tasty Pressed Cuban Sandwich

I made 3 trays full of these Cubanos and I couldn’t resist. I didn’t have a piece of bread or anything with gluten for about 3 months at all, and this was rebirth experience.

So, if you are on low carb diet then you know what I mean. Anyhow, you can totally use low carb tortilla if you are on keto. It’s not the same as having a nice Cuban bread but, hey, better than nothing! Haha

Tasty Pressed Cuban Sandwich

Tasty Pressed Cuban Sandwich

Ingredients

MARINADE

  • 3/4 cup extra-virgin olive oil
  • 1 tablespoon orange zest
  • 1 cup orange juice
  • 1/2 cup lime juice
  • 1 cup cilantro, finely chopped
  • 8 garlic cloves, minced
  • 1 tablespoon dried oregano
  • 2 tablespoons ground cumin
  • 1/2 tablespoon Kosher salt
  • 1/2 tablspoon ground black pepper

PORK

  • 5-6 pounds boneless pork shoulder butt.

SANDWICH INGREDIENTS

  • Four 10 inches (approximately) Cuban sandwich loaves, sliced into 4 equal sizes
  • 1 stick unsalted butter, softened and divided
  • 1/2 cup yellow mustard
  • 1 pound sliced smoked ham
  • Dill pickles sliced lengthwise
  • Roast pork
  • 8-10 ounces Swiss cheese slices

FOR PRESSING SANDWICH

Instructions

PORK PREP:

  1. Place pork into a largest ziplock bag then pours the marinade. Make sure that marinade is very well combined before pouring it over the pork. massage the pork for a bit to coat then close the ziplock bag and place in the fridge for at least 8 hours, preferably 12 hours. Halfway through turn the ziplock on the other side and massage it again just to make sure the pork is well coated with the marinade.

Oven roast pork in Dutch Oven for 3 to 3 ½ hours on lower heat at 350°F. Take it out of the oven, and allow it to cool down for 20-30 minutes before shredding or carving against the grain.

You can use your slow cooker: Set on high and slow cook for 4-6 hours depending on the size. You may slice it in big chunks so the pork fit well in the slow cooker. Shred pork using two forks as soon as the pork is falling apart.

Grilling pork brings an amazing flavor and it's my favorite ways to prep meat.

When I am cooking it on my Traeger Grill:

  1. I prep my smoker for 15 minutes at 250° Fahrenheit with the lid closed. Then I place pork directly on the grill and cook for 2 hours.
  2. Take it off the grill and put the pork in the center on the heavy-duty foil, then bring up the sides of the foil a little bit before pouring the apple cider on top of the pork butt.
  3. Wrap the foil tightly around the pork, make sure the cider does not escape.
  4. Place the foil-wrapped pork butt back on the grill and cook until the temperature of 145 degrees Fahrenheit, in the thickest part of the meat, about 2-3 more hours longer depending on the size of the pork butt.
  5. Allow it to cool DOWN completely for about 30 minutes in foil before shredding or carving against the grain.

Sandwich Assembly:

  1. Slice Cuban bread loaf in half then spread unsalted butter on one size and mustard on the other.
  2. Add sliced or shredded pork, ham, cheese slices, and pickles. Close and spread or brush soften garlic and herbs butter on top then slice into equal portions.
  3. Preheat your grill pan and cook these but pressing onto the cast iron grill. pan and pressing it with cast iron grill press. You can turn it around if you wish and do the same on the other side. You may use a panini press or just bake in the oven if you do not wish to press it at all. I like keeping them in the warm oven wrapped before serving, or microwave to make the hot.

Notes

  • If you get pork shoulder butt with a bone, no worries you can still do this and it will taste great.
  • If you wish to use Pork Loin or Tenderloin, it's great! I tried it and it tastes fantastic. You do not need to panic.
  • If you like any other pickle or ham go ahead and adapt to your liking. Maybe you like dijon mustard use that one. We prefer yellow mustard and smoked ham over honey glazed ham.
  • If you cant get garlic and herbs butter then spread butter on the bread and sprinkle with herbs and garlic powder.

Potato and Beef Everything Bagel Croquettes

Potato and Beef Everything Bagel Croquettes

Simple and easy recipe for amazingly delicious Potato and Beef Everything Bagel Croquettes

Ingredients

Mashed Potatoes

  • 1 box Our Family mashed potato, read the instruction on the box; Water, butter, salt, and milk
  • 1 large egg, optional

Ground Beef

  • 1 tablespoon oil + for frying
  • 1//2 pound ground beef, 20/80
  • 1 teaspoon onion powder
  • 1/2 teaspoon garlic powder
  • 1 teaspoon kosher salt or to taste
  • 1 teaspoon dried parsley

Assembly

  • 1/4 cup all-purpose flour
  • 2 large eggs
  • 1 1/4 cup plain breadcrumbs, more if needed
  • 2.5 oz Our Family Everything bagel seasoning

Instructions

    1. Follow instruction on the back of the mashed potato box.
      You would need 4-6 servings, depending on how many serving you are planning to
      make. 2 patties are enough per person. You can make 15-16 equal-sized
      croquettes.
    2. Heat a skillet with oil and sauté on the medium-high heat.
      Cook until the meat is completely cooked through, 5-7 minutes. Keep stirring
      and breaking the meat into small chunks. If you have any leftover grease,
      please drain it out before mixing it with the mashed potatoes. You may add one
      egg in the mixture, but it is not necessary.
    3. Wait for a few minutes until the meat is a bit cooled then
      add to the mashed potato bowl. Using a wooden spoon or similar mix together
      very well the mixture. Taste and see if it needs any more salt or pepper. If
      the mixture is too warm to work with refrigerating for 20 minutes and then make
      croquettes.
    4. Make patties between 2 oz to 3 oz. You may use the scale to
      measure. Not necessary, but sometimes handy if you wish your croquettes to be
      the same size. You may also make bite-size croquettes as shown on the pictures.
      They are about the size of a golf ball.
    5. Make patties and place on the tray lined up with parchment
      or wax paper. Cover with it as well and place the tray in the fridge for 30
      minutes so the croquettes could chill. You may prep them overnight as well.
    6. After chilling, place three plates; flour, mixed eggs,
      breadcrumbs with everything bagel seasoning.
    7. Drench into the flour on both sides as well as around, dip
      in the egg mixture then into breadcrumbs mixed with everything bagel; set aside
      and back on the tray. Continue until everything is complete.
    8. Now, you may place it back to the fridge if you do not plan
      to fry these right away or just heat the oil and fry.
    9. Line paper towel on the plate or cookie rack.
    10. Heat about 1 cup of oil for frying.
    11. Never over crowed the frying skillet. Fry 3 or 4 croquettes
      at the time at medium-high heat. Fry for a minute then flip and fry again until
      you reach a deep golden color.
    12. Take out and set on the lined up kitchen paper towel.



Notes

You may make these meatless and use mushrooms or just
chives to create an amazing appetizer.

I tried these with egg and without it. I like it both ways. Adding one egg makes it somewhat more creamy on the inside. It is really not neccecery but you may use it if you would like to test it yourself.

These hold well in the lunch boxes for school or work.

Our Family Everything bagel seasoning contain sodium so please be aware of that before adding too much salt into your croquettes.

Easy Fisherman Pie Recipe

Tasty and Easy Fisherman Pie Recipe

Ingredients

  • MASHED POTATO TOPPING
  • 1 1/2 lbs. (750g) Idaho potatoes, more if you like
  • 1/2 cups (118 ml) Half and half
  • 3 tbsp (42 g) Unsalted butter,
  • Salt to taste
  • FISH
  • 16 oz (500 g) Wild Alaskan Coho Salmon
  • 16oz (500 g)Wild Alaskan Pacific Cod
  • 10 oz (300g) Wild Alaskan Rockfish
  • 2 cups (475 ml) Whole Milk
  • 1/4 onion, chopped
  • SAUCE
  • 2 tablespoons (28 g) unsalted butter
  • 3-4 tbsp (30 to 40 g) plain, all-purpose flour
  • 2 1/2 cups (600ml) Whole Milk, splash more if needed
  • 3.5 oz (100 g) grated Swiss cheese, or any on hand like sharp cheddar, grated gruyère cheese, etc,
  • 1/2 tablespoon Lemon Juice
  • Generous pinch of salt and freshly ground pepper
  • TOPPING
  • ⅓ cup chopped flat-leaf parsley, for garnish and adding on the fish
  • 4-5 hard-boiled eggs, sliced in half
  • 3 oz swiss cheese (or grated gruyère cheese)

Instructions

POTATOES

  1. Peel potatoes and cut into quarters. Place in a saucepan and cover with cold water. Season with salt. Place over medium-high heat and bring to the boil. Cook for about 20 minutes or until potatoes are just tender when you pierce it with the fork.
  2. To cooked and drained potatoes, add about 1/2 cup or 118 ml of half and half, and 3 tablespoons the unsalted butter. Crush the potatoes, an and combine with half and half (or cream, milk) and butter until smooth. It doesn't have to be perfectly smooth. Lumps are welcome for this dish. Set aside.

FISH PREP

  1. If the fish is frozen, defrost it. You may leave it overnight in the fridge.
  2. Place all fish and chopped onion in a large saucepan. Cover with milk. Place over medium-low heat and bring to a slow simmer. Poach fish for about 5 minutes. Using a slotted spoon, transfer fish to a baking dish. Strain the milk into a bowl and discard excess. Set aside to cool. By the way, I remove skin, however I like to add in the pot with the fish just to add more flavor. After poaching discard it.

SAUCE

  1. Meanwhile, make the sauce. Melt the butter in a heavy-bottomed pan over low heat and stir in the flour. Add milk bit by bit, stirring after every addition until you have a smooth, silky sauce. Bring to the rolling boil, then reduce to a simmer and cook for 6 to 10 minutes, or until thickened.
  2. Add in the grated cheese, then squeeze in the lemon juice and keep stirring until the cheese is melted. Season with salt and little black pepper, then remove from the heat.

ASSEMBLY

  1. Preheat oven to 375 F (190 C).
  2. Place fish in the baking dish, pour over with the sauce, then add some cheese, equally scatter about the handful of swiss cheese.
  3. Chop into smaller pieces hard boiled eggs then add them over fish. Add a bit of chopped parsley.
  4. Spoon or pipe the mashed potato over the fish, starting at the edge of the dish and working inwards. Scatter with cheese over the top and bake in the oven for about 45 minutes, the sauce is bubbling up at the sides and the top is golden.
  5. Allow it to cool down for at least 10 minutes and served with vegetables such as spinach, peas, and carrots, etc. or maybe just a bowl of mixed green.

Notes

  • You can use any fish that you prefer or like, and throw in shrimps as well. It’s absolutely phenomenal. The most popular fish is white fish such as haddock or cod, salmon and shrimp. I have seen it with crab as well, but I say use whatever fish you go. Also, use of that is more affordable to you.
  • There is no right or wrong. I believe that everyone have their own household staple fierman pie. Some using wine, some spinach, peas or mushrooms, etc.
  • I use fish, white creamy sauce, boiled eggs, cheese and mashed potatoes. That's how my family likes it so I am making it this way.
  • Over time it will be easier and easier to prep and make this dish but it is really not complicated.
  • You can make this in dutch oven as well.
