Greek Style Beef Skewers

If you don’t eat red meat, one option is to substitute turkey or chicken for the beef. I believe that if you have a decent seasoning, you have a lot of possibilities.

That being said, you should keep in mind that if you replace beef, you should cut back on the salt because we all know how much burger meat likes salt.

So, if you’re using ground turkey or chicken, use a little less salt.

It can be served with a side salad, on pita bread, or with rice or potatoes. I generally make a large salad and baked potatoes when we just grill. But from time to time I include some mashed potatoes, and mac & cheese. 

On the other hand, there are occasions when all I need is a warm pita or naan with a sprinkling of onion. Nostalgia hits you like a ton of bricks!

Easy Recipe for Beef Skewers

I grew up on similar grilled beef sausages called “cepavi” so I enjoy foods like this very much!

Greek Style Beef Skewers

Easy Recipe for Beef Skewers

In my house, these Greek Style Beef Skewers are a staple. Your summer dinner will be complete if you serve them with pita bread and salad.

I love making this ahead of time, and I think it tastes even better the next day after it's been in the fridge. It is always a hit in my house!

Prep Time 15 minutes
Cook Time 10 minutes
Resting Time 30 minutes
Total Time 55 minutes

Ingredients

  • 2 lbs. Ground Beef
  • 1/2 onion chopped or use 1/2 tbsp. onion powder
  • 3 garlic cloves minced
  • 2 tablespoons olive oil
  • 1 large egg, beaten
  • 1/4 cup breadcrumbs
  • 1/2 cup of freshly chopped parsley
  • 1/4 cup of freshly chopped oregano
  • 1 tbsp. salt, or to taste
  • 1/4 tablespoon black pepper
  • 1 tablespoon lemon juice, squeezed

Instructions

  1. Chop onion, and on a drizzle of oil, cook it for 3-4 minutes at medium-high temp. This will help them incorporate better into the meat. You can use onion powder if you prefer that better and skip this part.
  2. Add all the ingredients to a large bowl and mix to combine.
  3. Place in the fridge for at least 30 minutes, but you can keep it covered overnight.
  4. If you're using bamboo skewers, soak them for a bit in the cold water. Using wet hands, shape the meat mixture into ovals, each approx. 1 inch thick; thread each “beef sausage” onto a soaked wooden skewer.
  5. Add the beef Skewers and grill, turning every 3 minutes, until browned and cooked through about 8 -10 minutes, depending on how you like your meat, well done or medium-rare.
  6. Make a salad with vinaigrette and serve it with Greek Style Skewers and Pita bread.

Chicken Burger with spicy peanut butter slaw was amazing. Not only are these simple to prepare but after grilling or cooking, you can keep the patties in the fridge for days.

So, they are perfect for meal prep if you are doing it. All you got to do is heat and eat.

Now, if you are doing low carb, there is a simple solution for that too. You can use almond flour instead of panko breadcrumbs and enjoy these protein-packed chicken patties even if you are doing low-carb diet.

Chicken Burges with Spicy Peanut Butter Slaw

I partnered with PB2 Foods to create recipes using their products.

This time I used their new PB2 Crunchy Powdered Peanut Butter, which is peanut butter reimagined!

Freshly roasted peanuts are pressed to remove most of the oil.

Mix in some roasted peanut pieces, a little sugar, and a dash of salt for flavor, and the result is peanut butter with only 2.5 g of fat per serving – almost 70% fewer calories than traditional peanut butter and 5 g of plant-based protein.

Anyhow, my family and I enjoyed these Asian-inspired burgers with spicy slaw.

If you like me and love Asian flavors, then these burgers are for you.

You could serve patties in the bun, on the salad, or use lettuce to wrap them up, which is perfect for the low-carb option.

Also, the addition of PB2 Crunchy Powdered Peanut Butter in both burger patties and slaw was perfect. It gives you something extra so you could enjoy every bite.

With that being said, I feel like using any other condiment was not necessary. I used mayo, and it was great. However, we have tried skipping slaw and using BBQ sauce and cheese. We had divided opinions on this one.

Three of us preferred using slaw in the burger. It was a perfect balance of sweet and spicy, which was incredible.

Chicken Burges with Spicy Peanut Butter Slaw

Chicken Burges with Spicy Peanut Butter Slaw are simple and tasty, and perfect for your outdoors or indoor grilling.

Prep Time 10 minutes
Cook Time 5 minutes
Total Time 15 minutes

Ingredients

  • 1-2 cups of slaw, any on hand
  • •1/2-1 cup Broccoli Slaw
  • •1/2-1 cup Asian mix slaw

Chicken burger:

  • 1 pound Ground Chicken
  • Salt and pepper to taste, a generous pinch.
  • 1 teaspoon onion powder
  • 1 teaspoon garlic powder
  • 1/4 teaspoon ginger powder
  • 2 scallions, chopped
  • Lime zest
  • 1 tbsp. soy sauce
  • 1 tbsp. PB2 Foods Peanut Butter
  • 1/2 cup panko breadcrumbs
  • 2 tbsp. Oil

Spicy Peanut Dressing:

  • 2 tbsp. PB2 Peanut Butter
  • 2-3 tablespoon Lime juice
  • 1 tbsp. Soy sauce
  • 1 tbsp. spicy chili crisp (sriracha as a sub)
  • 2 tbsp. honey (or brown sugar as a sub)
  • 3 garlic cloves, minced
  • 2 tbsp. cilantro, chopped
  • 1 tbsp. oil
  • 1/4 tsp Salt, or to taste

Instructions

  1. Combine all the ingredients for the dressing for the slaw.
    Drizzle it over slaw and toss well to coat. Keep refrigerated until ready to be
    used. I used Asian slaw and broccoli slow combined. Use whichever you prefer.
  2. Combine everything for the chicken burgers and mix well. One pound makes four burgers. If you wish to make more, double or triple, and season accordingly.
  3. Make quarter-pound patties and pan fry or grill for 3-4 minutes on each side or until safe internal temperature: 170°F (well-done). USDA Safe Minimum 165°F; however, I like chicken at 170°F.
  4. Place buns on your grill or frying pan to get a bit burnt and crunchy on the inside.
  5. Lastly, build your burger. Spread a bit of mayo or wherever you prefer, add the burger, then slaw on top. Enjoy!

Notes

  • You may use ground turkey if you prefer.
  • For low carb use almond flour instead of panko breadcrumbs.
  • If you have peanut allergies (obviously) skip PB or use PB Foods almond butter powder.

Anyhow, this tasty and quite easy stir fry is fantastic; the sweet, spicy, and savory taste always hit the spot in my opinion. My family truly enjoyed it!

Furthermore, it was so easy to utilize PB2 Peanut Butter Powder compared to traditional peanut butter. The sauce was super easy to prepare without any mess.

Tofu and Veggie Stir-Fry with Peanut Butter Sauce

Tofu and Veggie Stir-Fry with Peanut Butter Sauce

Cook Time 20 minutes

Ingredients

PB2 SAUCE

  • 1/4 cup PB2 Peanut Butter Powder
  • 1/4 cup reduced-sodium soy sauce
  • 3 Tbsp lime juice
  • 2 tbsp water, more if needed
  • 2 garlic cloves, minced
  • 2 teaspoons ginger, minced
  • ½-1 tsp sriracha
  • 2 tbsp honey, or another sweetener of your choice

Tofu

  • 2 teaspoon sesame oil
  • 2 garlic cloves, minced
  • 1 package extra-firm tofu, cubed

Vegetables

  • 1-2 tablespoon oil
  • ½ Onion, sliced
  • 2-3 garlic cloves, minced
  • 1 cup Carrots shreds
  • 1/2 red pepper
  • 1/2 green pepper
  • 1 cup Broccoli florets

Garnish:

  • Toasted Sesame seeds
  • Green onion, chopped

Instructions

PB2 Sauce:

  1. Mix everything for the PB2 Sauce. Add enough water, so the sauce is creamy and smooth; set aside until ready to be used.

Tofu:

  1. Using a tofu press drain all the liquid out of tofu, or simply wrap tofu in between a towel and press lightly with a skillet or a plate, then slice in 1/2 inch thick slices, lengthwise, and pat-dry each slice of tofu with a kitchen towel, before slicing into desired cubes.
  2. Heat a skillet on medium heat and a drizzle of oil add garlic and sauté for a minute.
  3. Add tofu, turning several times until golden color is reached, take it out, and set aside.

Vegetable Stir-Fry:

  1. Wash and slice vegetables. You may use any vegetables on hand.
  2. Heat a skillet to medium heat with a generous drizzle of oil.
  3. Stir-fry vegetables for 5 to 7 minutes, cooking each vegetable a few minutes before adding the other. You want vegetables to be cooked, but still contain crunchiness.
  4. Add tofu and combine it with vegetables. Gently stir!
  5. Drizzle PB2 sauce over it, mix to coat. Serve over noodles or rice.

Notes

You may serve it with rice, noodles, or just as its own dish.
