Salads make such a refreshing, versatile lunch or dinner, and chicken salad is always at the top of my list. I love recipes that are quick, simple, and don’t require a long list of ingredients.

This one is just that— easy, creamy, and absolutely delicious. Pickles are a must for me, but otherwise, I keep it classic.

Sometimes I’ll mix things up with diced ham or Canadian bacon—trust me, it’s incredible, but today’s version is all about the basics. I served mine in buttery croissants with crisp lettuce and a few juicy, end of season tomatoes, and honestly, it turned into the perfect lunch.

My daughter Anna loves salads like this just as much as I do. Tuna, potato, egg salad—you name it, we could happily eat them for days.

It always makes me smile how much we have in common… except when it comes to pies. I love pies, and she loves cakes. She’ll take cake any day, while I’ll always be a pie girl. Unless, of course, the cake has no frosting.

Easy Chicken Salad Sandwiches

Recipe for a great chicken salad

These Easy Chicken Salad Sandwiches are creamy, flavorful, and perfect for a quick lunch or light dinner. Made with tender chicken, crunchy celery, tangy pickles, and a simple dressing, this classic chicken salad is served in buttery croissants for a sandwich everyone will love. Great for meal prep, picnics, or busy weekdays, and easy to adapt for keto, low-carb, or gluten-free diets.

Ingredients

  • 3 cups cooked chicken breast, shredded or diced (about 2 large breasts or a rotisserie chicken)
  • ½ cup mayonnaise (adjust to taste)
  • 1 tablespoon Dijon mustard (optional, for extra tang)
  • 1 celery rib, finely diced
  • ½ cup dill pickles, finely chopped, or sweet pickles, if preferred
  • ¼ cup onion, finely diced
  • 1 teaspoon fresh lemon juice
  • Salt & black pepper, to taste. Start with a few good pinches
  • 6 small croissants, sliced open
  • Lettuce leaves, for layering, optional
  • Tomato slices, for layering, optional

Instructions

  1. In a large bowl, combine chicken, mayonnaise, mustard (if using), celery, pickles, and onions.
  2. Stir until everything is well coated. Taste and season with lemon juice, salt, and pepper.
    Chill for at least 20 minutes (if you have time) to let the flavors come together.
    To assemble, place lettuce and tomato slices inside each croissant. Add about ½ cup (2 scoops) of chicken salad per sandwich.
  3. Serve immediately and enjoy!

Variations & Options

  • Keto/Low-Carb: Skip the croissants and serve the chicken salad in crisp lettuce cups (like butter lettuce or romaine) or in low-carb tortillas.
  • Gluten-Free: Swap croissants for your favorite gluten-free bread, wraps, or even gluten-free crackers for a lighter snack version.
  • Classic: Stick with buttery croissants for that irresistible, flaky sandwich. Or maybe a toasted sour dough bread.

Notes

Chicken salad can be made ahead and stored in an airtight container in the fridge for up to 3 days.

Assemble sandwiches (or wraps) right before serving so the bread or lettuce stays fresh.

You can add grapes or raisins, or maybe pecans, but I think it is perfect the way it is.
