If I could eat Heirloom Tomato Feta Salad with olive oil and herbs all year round I would be a very happy camper.

It is so fresh, sweet, savory, simple, pretty and most importantly delicious salad. One my favorite August salads when tomatoes are at the peak of the season; juicy and tasty!

When I was younger I hated cooked tomatoes or chunky tomatoes in meals. However, I absolutely loved eating tomatoes like an apple, just with a sprinkle of salt.

That is all I needed to survive hot summer days. I am still not a big fan of summer months, but I sure love its delicious produce; tomatoes, watermelon, peaches, cherries, cucumbers, etc., to name just a few of my favorite produce.

I know that most of the time you would see these tomatoes in a popular Italian dish, Caprese with mozzarella and basil drizzled with good olive oil. I wanted to make a conscious twist with Greek imported olive oil and feta cheese. Should we just call this one Greek Style Tomato Feta salad?

Heirloom Tomatos

Anyhow, you guys going to love it. Well, I am almost certain that you will. My daughter and I, we are huge tomato lovers, so we ate it until it was gone.

On the other hand, my boys are not, so two of us had a pleasure to enjoy this one for lunch with some grilled burgers.

Heirloom Tomato Feta Salad

Heirloom Tomato Feta Salad

An easy and simple summer salad.

Prep Time 10 minutes
Total Time 10 minutes

Ingredients

  • 3-5 different types of tomatoes
  • Generous pinch kosher salt
  • Generous pinch ground black pepper
  • 1 teaspoon lemon juice, or balsamic vinegar if you prefer
  • 1 block or chunk feta cheese, 7-8 oz
  • 1 tablespoon olive oil
  • 1 teaspoon dried oregano
  • Fresh Oregano for garnish, optional

Instructions

  1. Wash tomatoes then using sharp knife make about 1/4 inch slices. You don't want them too thin but not to thick either. Depending on how many serving you want, you can totally use half of each tomato since some are pretty large. I was serving 4 people so I used all of it. If you have any leftovers you can bake a galette or add on pizza.
  2. Season tomatoes with salt just before serving, and before adding cheese. This way the salt will not start breaking the tomato slices. Same goes for any addition of acidities like vinegar or lemon juice. Do it right before serving.
  3. Now take the cheese out of the box and slice into cubes. Use some kitchen paper towel to dry them a bit if needed.
  4. Add Cheese son top of the tomatoes, drizzle with olive oil, then add a sprinkle of dried oregano and garnish with fresh oregano.
  5. You can use only one, but dried have its own aroma and fresh brings even more freshness which is the perfect combo for this salad.

Notes

You can add some olives or parsley.

Cucumber-Tomato and Mozzarella Cheese Salad

I know very well the taste is not the same. After all, freshly harvested fruit and vegetables are indeed the best eaten in season.

However, for the gracious sake of your cravings, we can most certainly eat delicious salads like this 365 days a year.

Above all, Cucumber, Tomato, and Mozzarella Cheese Salad undoubtedly my absolute favorite summer food. We probably eat this on a daily base during hot summer days.

Cucumber-Tomato and Mozzarella Cheese Salad

It is so refreshing and tasty it goes perfectly with any grilled food, even grilled vegetables if you are vegetarian.

You assuredly have a possible option here to include some avocados or grilled tofu even if you do not consume cheese. As you can see it is most definitely versatile salad.

So next time when you have a family gathering or just grilling time, make this salad. I am sure that you will not regret because it is really tasty. I can’t even tell you how much we love it.

My daughter loves Avocado so we always add it, especially if we are out of cheese. It just gives you a bit of creaminess which would be perfect for vegan. Sometimes red onions, and green peppers

Cucumber, Tomato and Mozzarella Cheese Salad Recipe

Easy. healthy and tasty salad recipe.

Ingredients

  • 2 Medium Tomatoes on the Vine, sliced
  • 1 cup Snacking Tomatoes, orange, but sweet golden would work as well or multicolored
  • 1 Organic English Cucumber, diced
  • 6 oz Fresh Mozzarella Cheese, cubed or Fresh Mozzarella Pearl Cheese
  • 3 Organic Green Onions, sliced
  • 2 Tablespoons Olive Oil
  • 1 Tablespoon Lemon Juice
  • 1/4 teaspoon Sea Salt
  • 1/4 teaspoon freshly Ground Black Pepper
  • 1/4 teaspoon Dried Oregano

Instructions

  1. In a large bowl, combine the sliced tomatoes, diced cucumber, chopped green onions.
  2. For the simple vinaigrette: in a small bowl, whisk the oil, lemon juice, salt, pepper and herbs such as oregano or parsley. Pour over salad; toss well to coat.
  3. Cover and refrigerate for at least 15 minutes. Just before serving, stir in cheese. Serve with a slotted spoon.
  4. This is a perfect salad with anything grilled or with fish.

Notes

You may add avocado or red onions in this salad It is very delicious. Also, if you by any chance do not have any mozzarella but Feta is in your fridge, use it. It is so tasty in this salad.

On the other note, I love taking a bite or two after my workout or when I just need something sweet, but at the same time to keep me fuller for my next meal.

Easy Energy Bars

Easy Energy Bars

Perfect bars to pick you up after a workout, or if you need a snack to keep you full until your actual meal. This, not a meal replacement, it is a homemade snack that will keep you satisfied, cravings for sugar suppressed and give you some energy to get you through the day.

Cook Time 7 minutes
Resting time 2 hours
Total Time 2 hours 17 minutes

Ingredients

Instructions

  1. Turn the oven to 375 F and allow it to preheat.
  2. On a large baking sheet combine together oats, cashews, pumpkin seeds and sunflower seeds. Toast it for 5 minutes, mix it then toast for another 2 minutes. Do not burn and do not go into fully toasted, this is just to release the aroma, and get that amazing taste so do not skip this step either. Take it out of the oven and let it slightly cool down. You may place it on the cutting board and run a knife through it if you want this less chunky.
  3. Cut dried fruit into smaller chunks as well. Place it on the cutting board and just run a knife and roughly chop.
  4. Add all the dried ingredients in the large bowl, then add Maple syrup. Read notes for more info.
  5. Mix the whole mixture together. Use your hands to mix it (This is also an amazing skin scrub).
  6. Line the middle of a deep baking pan with parchment paper or wax paper, 9x9 square pan is perfect. If you want these bars to have a bit taller or higher, then use a smaller pan. I said a middle of the pan because then it is easier to pull it out of the pan. See pictures.
  7. Oil your hand with healthy oils, avocado oil, oil, coconut oil and similar then lightly oil the pan sides.
  8. Transfer the mixture to the pan and press with your oily fingers and hand for a couple of minutes until the mixture is firm.
  9. Cover with a plastic film or wax paper and place in the fridge.
  10. Allow it to set for at least 2 hours before eating, but the best results are 24 hours in the fridge.

Notes

This is really versatile. You can add any fruit, nuts or seeds.

If you want less sugar in your bar Maple syrup is the way to go. As sugars go, pure maple syrup is one of the least harmful. Honey or agave nectar is a good alternative to use although if you are able to use pure maple please use it.

This can make up to 14 servings depending what size of the pan you are using or how you cut the bars; into long bars or squares.

These bars are between 340-380 calories, depending what brands of protein powder, dried fruit or maple syrup you are using.

For fewer calories slice these with a serrated edge knife, also known as a bread knife, into equal squares.

To get the most out of making your homemade bars buy them in bulk. The ingredients are really affordable when you compare to prepacked. Also, you have the option to get organic and buy what you like and what you wish to use in these bars. You may use more fruits or nuts or less.
