Chicken Fajita Skewers

Chicken Fajita Skewers

Chicken Fajita Skewers

Chicken Fajita Skewers are fresh, tasty, healthy, colorful, and the ultimate summer grilled food that everyone loves. My family loves it especially with a bowl of Spanish rice and beans.

To lighten up my recipe, I used a mixture of oil with lime juice and my own herbs and spices to marinate chicken.

The combination of this extravagant oil and delectable chicken definitely called for a family cookout!

The oil provided a rich, tender taste that left all of our mouths watering before we could dive into the meal. When serving this meal you and your family are guaranteed to never be left disappointed. It is really that good!

Skewers

The dish is pretty amazing and we did not step away too far from the authenticity. However, to lighten up my recipe, I used skewers instead of serving it traditionally in tortillas.

You can use any oil that you prefer, which was fantastic. The oil keeps chicken moist and juicy while grilling. Also, I love using my own spice and herb blend for his chicken fajita instead of the store-bought.

I believe it is much healthier, plus you are in control of which herb and spice you are going to use. That makes sense, right?

So, this summer I have decided to share with you the best of my recipes from the grill. It is my absolute favorite way of cooking so I cannot wait to share!

Chicken Fajita Skewers

Chicken Fajita Skewers

Chicken Fajita Skewers are fresh, tasty, healthy, colorful, and the ultimate summer grilled food that everyone loves.

Prep Time 15 minutes
Cook Time 25 minutes
Total Time 40 minutes

Ingredients

  • 3 tablespoons (42 g) oil
  • Juice of 1 lime, preferably ripe
  • 1 tablespoon chopped cilantro or flat-leaf parsley
  • 3 pounds (1.3 kg) chicken breast, cubed (approximately 3 whole chicken breast)
  • 1 green bell pepper, chopped into bite-sized chunks
  • 1 red bell pepper, chopped into bite-sized chunks
  • 1 red bell pepper, chopped into bite-sized chunks
  • 1 orange bell pepper, chopped into bite-sized chunks
  • 1/2 large red onion, chopped into bite-sized chunks

FAJITA SEASONING

  • 1 teaspoon dried oregano
  • 1 teaspoon salt
  • 1 teaspoon ground black pepper
  • 1/2 teaspoon chili powder
  • 1/2 teaspoon ground cumin
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon paprika

Instructions

  1. Combine the seasoning and set aside. Now, mix together oil and lemon juice.
  2. Cut chicken with a sharp knife into approximately the same bite-size pieces as cubes, then rub seasoning all over. Drizzle oil and lemon juice mixture over seasoned chicken and massage it. Cover and place the chicken in the fridge and allow to marinate for about 30 minutes.
  3. Thread the marinated chicken onto the skewers with the peppers and onions. There is no right and wrong, I just like to mix it up, so the skewers look colorful and pretty. Place back in the marinade and allow to marinate until you are ready to cook.
  4. Cook the chicken fajita skewers on the grill for about 20-25 minutes. Turn and brush with oil every 10 minutes, or until chicken juices run clear. Allow it to rest for a few minutes.
  5. Serve with rice and beans, tortillas, and salad.

Notes

You may use beef for this as well. I recommend my seasoning recipe, but you may use store-bought too. In the case, you are using store-bought, just add cilantro or parsley, corn oil, and lime juice for extra tasty and tender chicken skewers.

You may use fajita sauce and drizzle over the skewers to keep the chicken juicy.

I hope your long weekend was fantastic and that you are enjoying the summer break. We have been on vacation since last week. I can’t even believe that I will have a senior, a freshman, and a 6th grader next school year.

Well, when it comes to kids, as you know, time flies, my friends!
Anyhow, let’s talk about this amazingly delicious cheese, not just any cheese, but Tillamook cheese.

I had the pleasure to test this cheese before it was available in my area, and we deeply feel in love. Now I see Tillamook cheese in my grocery store, and I couldn’t be happier.

When I posted short videos on my insta-story (Instagram), I got so many lovely and touching direct messages about Tillamook, and they want to see it too, so keep them coming.

Comment or send it to me to share it with everyone and, of course, with the Tillamook team. You guys made me so happy.
Have you ever tried Tillamook Cheeses? If you did, please do share it with us.

Tillamook is taking a stand for real food, they believe in quality over profit and that the hard work could never be outsmarted.

Needless to say, I love their positive message behind #DairyDoneRight crafting high-quality cheddar in the most natural way possible.

Of course, I am so excited to work with Tillamook this summer to show you the tasty ways you can incorporate their delicious cheese into your daily life.

Tell me what is your favorite way to use cheese? Your favorite dish?

Everything Bagel Baked Chicken

Everything Bagel Baked Chicken

Extremely tasty Everything Bagel Baked Chicken Recipe

Prep Time 10 minutes
Cook Time 40 minutes
Resting Time 5 minutes
Total Time 55 minutes

Ingredients

  • 4 Chicken Breast halves with the rib/bone and skin
  • 1 tablespoon Olive Oil
  • 1 teaspoon Dried Parsley per chicken breast
  • EVERYTHING BAGEL SEASONING:
  • 3 tablespoons Black Sesame Seeds
  • 3 tablespoons untoasted/raw Sesame Seeds
  • 3 tablespoons Dried Onion Flakes
  • 2 tablespoons Poppy Seeds
  • 2 tablespoons Golden Flaxseeds or brown flaxseeds
  • 1/2 teaspoon Garlic Powder
  • 1/2 teaspoon Ground Black Pepper
  • 1/2-3/4 teaspoon Sea Salt or to taste

Instructions

  1. Make “Everything Bagel Seasoning”.
  2. Preheat oven to 400°F
  3. Remove and separate bone and rib from each chicken breast as you can see in my pictures above. Leave the skin on because it creates a nice crust.
  4. Add a drizzle of oil on each chicken breast after you separated from the bone and rub top and bottom.
  5. Add Everything bagel seasoning on the plate and coat each chicken breast, top, and bottom with the seasoning, then dust it with dried parsley and place on previously greased/oiled baking sheet.
  6. Drizzle just a tad more oil on top of the chicken.
  7. Bake chicken for 40-45 minutes, depending on the size of the chicken and if the internal temperature thermometer reads 165°F (at the thickest part of the chicken) then the chicken is cooked and safe to eat.
  8. Allow chicken to rest for about 5 minutes before slicing it. This way the chicken is going to be juicy on the inside. All the oil that is leftover on the baking sheet, keep it to drizzle over the chicken before serving.

Notes

You can use chicken tights with the skin, however, if you do not like skin at all please remove it or purchase skinless chicken.

If you don’t have poppy seeds or flaxseeds, please omit, I believe that sesame seeds are must because it gives you that nutty sesame seed aroma, taste, and flavor. You can serve it over rice, salad, sandwiches, wraps, lettuce wraps, etc.

It is really delicious however you serve it. You can cook veggies on the baking sheet that you cooked chicken. Please, do not through away that leftover oil. It got so much flavor.
