When my kids smell cookies baking in my oven they have this amazingly happy expression on their faces.

I think, or better said, I hope they will never grow out of making that happy expression when cookies are baking. It makes my heart melt.

While they were picking the leaves outside, and cleaning our backyard on this chilly day, I surprise them with warm milk and pumpkin spice cookies.

Their red and smiley cheeks were all I needed to fulfill my day. These are pretty simple. Not much mess; combine, mix, bake.

If you cannot find “pumpkin pie spice”, it basically contains an equal amount of cinnamon, ginger, nutmeg, allspice. I used USDA Organic Pumpkin Pie Spice by Simply Organic.

Yield: Makes 18 Cookies

Pumpkin Spice Cookies

These are pretty simple. Not much mess; combine, mix, bake. You can personalize them by adding nuts or dried fruit or perhaps chocolate chips.

Prep Time 10 minutes
Cook Time 12 minutes
Additional Time 10 minutes
Total Time 32 minutes

Ingredients

Instructions

  1. Preheat oven to 350 degrees Fahrenheit.
  2. In the bowl combine together by mixing butter and both types of sugar until creamy, then add the egg and vanilla extract, and continue mixing until smooth. Set aside.
  3. In another bowl, mix flour, pumpkin pie spice, salt, cinnamon, baking soda, and oats together.
  4. Gradually add the flour mixture to the wet ingredients on low speed. Stir until well incorporated.
  5. After combining all the ingredients, place in the fridge for about 10 minutes just for you to easier scoop on the baking dish.
  6. Place cookie dough balls (I use a 2 tablespoon sized scoop) on a baking sheet. This is completely optional. but I like adding sugar marks on the top of the cookies just like you would on peanut butter cookies. So I dip my fork into water then sugar and pressing it onto cookies. This is just gives a bit extra taste or texture and sweetness. Then I sprinkle with some more oats. Like I said, it is completely optional.
  7. Bake for about 10-12 minutes in the preheated oven.
  8. Allow the cookies to cool on the baking sheet for a few minutes, and then transfer them to a cooling rack.

You may add raisins or even chocolate chips if you like.

Chopped nuts, as well as seeds, are always amazing in cookies.

When I was a little girl we always had roasted pretty much around this time of the year. I just loved Roasted Butternut Squash from the aroma to the taste itself.

Nothing was more pleasant than fire-roasted sweet winter squash, but that goes for pumpkin seeds and chestnuts too.

I am trying to find specifics kind of pumpkin here in the USA, but maybe I am not looking hard enough.

When I try to translate “Stambolka Tikva” it comes out as a “gourd”. As far as my search goes it should be white-grayish skin pumpkin, perhaps it’s Lumina.

I am really not sure, because last time I ate that type of pumpkin was probably 20 years ago, but that aroma and the taste never ever left me.

The next best thing is roasting any other winter squash to at least please my cravings.

I love talking about the health benefits of pumpkins and squash so here are some facts.

  • In traditional healing, it’s recommended as a diuretic, people who are suffering from rheumatism, depression, gout, inflammation of the kidneys and bladder. Incredibly rich in vital antioxidants, and vitamins. It is great for obese people and diabetics, and those with a disease of the stomach.
  • Pumpkins/squash is perfect for those that have inflammation of the ovaries and women in menopause. Pumpkins contain Zea-xanthin which is a natural anti-oxidant that has UV (ultra-violet) rays filtering actions in the macula lutea in the retina of the eyes. It helps protect from “age-related macular disease” (ARMD) in the elderly. The fruit is a good source of a B-complex group of vitamins like folates, niacin, vitamin B-6, thiamin, and pantothenic acid. It is also a rich source of minerals like copper, calcium, potassium, and phosphorus.
  • Pumpkin seeds and oil contains vitamins A, B1, B2, B6, C, D, E, K and minerals (calcium, magnesium, potassium, zinc, as the dominant mineral components).

Besides, that is so healthy, and now in season, I think this power fruit is incredibly tasty too. You can actually make a soup out of roasted squash or porridge.

Roasted Butternut Squash

Roasted Butternut Squash

Easy and tasty oven-roasted butternut squash.

Prep Time 10 minutes
Cook Time 30 minutes
Total Time 40 minutes

Ingredients

  • 1 Butternut Squash about 2-3 lb
  • 1 tbsp. Pumpkin Spice
  • 1 tsp. Ground Ginger
  • 1/2 tsp. Salt
  • 1 Tbsp. Brown Sugar
  • 1 tbsp Butter

Instructions

  1. Slice the squash in half, then, quartered it. Take the seeds out and peel the squash.
  2. Cut squash into about 2-3 inch slices, then into equal cubes.
  3. Preheat the oven on 400 degrees Fahrenheit.
  4. Place cubed squash into a bowl and add all the ingredients above. Mix it all together so all the cubes could be equally coated.
  5. Roast it for approximately 20 minutes, open the oven after 10 minutes and carefully stir squash so it doesn't burn. When the squash is tender it's done!
  6. You may sprinkle more pumpkin spice on top as well as sesame seeds or any nuts available to you.

Notes

Place Butternut squash in the microwave for about 2 to 3 minutes on high to be able to slice it or peel it much easier.

Before Monday starts let me share one more yummy lunch box idea. It does take little more time to make these stuffed bread rolls, but trust me they are so worth it. 

My kids… no, to correct myself,  my whole family and friends love this and it’s one of the favorite after-school snacks, lunches or even dinners with some salad on the side. 

These are perfect, obviously, for lunch boxes for school or work, but also fantastic to take on trips, potlucks, and picnics. You can eat them hot right out of the oven (although it is too good and dangerous) or cold. 

Lunch Box: Stuffed Bread

You can, of course, pair it with anything that you have or like, but I added some radishes, English cucumber, and cherry tomatoes from my garden; And for the fruits: raspberries and blueberries that go perfectly well with a strawberry yogurt smoothie. 

As for the roll itself, I made two kinds, and again you can add what you have and like.

We all love and it is one of the top ones that my family or friends always asking for, which is stuffed with sauteed ground beef, onions, and garlic,  but you can be creative and add roast beef + cheese + peppers, ham + cheese, sauteed potatoes and onions, breakfast sausages + cheese + eggs, Nutella etc.

Possibilities are honestly endless. It is also convenient.  It stores well in the fridge, you just need to reheat and eat; OR if you going to take it the next day just make sure to preheat for few minutes in the microwave, let it cool down to a room temp., then pack.

You can roll it and make it like a stick looking or you can make a bun out of it…it’s your call!

For ham roll

1 Tbsp. Cream Cheese – room temp. (spread on the dough before adding ham)

4 slices of thinly sliced Virginia Ham or any on hand

One handful of shredded cheese such as mexican chese blend

Some manufacturers do label their products as BPA-free, but some do not. If a product isn’t labeled, keep in mind that most aluminum cans or bottles have linings that contain BPA, while steel bottles or can do not. My Bento Boxes are No. 5 PP/BMA FREE- but these cheaper ones that you can get in the grocery store are not safe to use in the microwave or to put hot meals in them, so you HAVE to let the food cool down BEFORE closing the LID. READ HERE about the difference between recycling symbols on the bottom of your lunch boxes, bottles, etc. No. 5 – PPKetchup bottle, a No. 5, may one day be a broom. Ketchup and medicine bottles, PP, or polypropylene, fall under recycling category No. 5. Recycled through many curbside programs, PP has a high melting point, so it is chosen for containers that can hold hot liquid. Polypropylene can be recycled into signal lights, brooms, brushes, rakes, bins and pallet trays.
