Grilled Chicken and Ham Sandwich

Grilled Chicken and Ham Sandwich

Grilled Chicken and Ham Sandwich is really tasty and easy to make. Drizzle a bit of homemade creamy sriracha and you got yourself one perfect sandwich.

Grilled Chicken and Ham Sandwich

My weekday mornings are crazy, seriously. Dealing with 8-year-old at 7 o’clock is no joke.

Who, by the way, loves to rest his head on the toilet paper roll, while sitting on the toilet and snooze before school.

He takes too long in the bathroom, all the same, there is a whole other level when you are dealing with tween and teen.

It’s like trying to explain the unexplainable; where are my socks, my red/yellow shirt, what’s for breakfast?

More meltdowns that you could even imagine. Do I need to go into further details? I think you get the point!

Check out quick party food recipes

I believe that one long vacation (alone), wouldn’t be enough. Can you imagine that I placed a cup of water to boil for my quick instant coffee in the kitchen cabinet instead of the microwave?

What was worse, I closed the cabinet door and waited for a few seconds before I realized what I did!

A few efff bombs later, I made another one, of course, plugged my ears with sounds of Stone Sour and started to brainstorm what recipe should I post, and there you go. My mornings are lovely. You envy me, don’t you?!

Grilled Chicken and Ham Sandwich

A few months earlier while stopping to grab something quick to eat at subway because I didn’t want to cook for myself, two pregnant women stood behind me.

So, they asked me how does subway’s buffalo chicken taste with toppings that I added; pickles, spinach, red onions and jalapenos with a good amount of creamy Sriracha.

I was like “Spicy” and good. I wasn’t rude, I promise, I even added a smile on my grumpy face.

However, I was just simply waiting to pay my order, so discussing my sandwich wasn’t something in my mid-morning agenda. Especially with 4 more people waiting in line.

Also, I was in 3 sizes, too big joggers looking more like a homeless person without makeup and an oversized sweatshirt.

I just wanted to grab a sandwich and go back home to finish an exhausting project while chomping on my footlong, without even making eye contact.

Did I mention earlier that I am not a morning person?

Anyhow, that’s how my sandwich was born; mostly inspired by my footlong!

Since I have my smarty pants college students that write from time to time, asking for no-bake recipes, I thought to make this sandwich.

One latest email got me chuckling. The question was: Can they (roommates) “make/bake” bread in the microwave? It was funny and cute at the same time!

Needless to say, we were all 19, right?! With that being said, I’ll try to include some fun, no-bake recipes and test few that could be made in the microwave.

For this sandwich, you could make the bread yourself or simply buy french bread.

Grilled Chicken and Ham Sandwich

Of course, I baked it but used canned “Pillsbury” French bread, sprinkled with Japanese sesame seasoning and then baked in my oven.

Everything is optional here. You can make and bake your own bread, use store-bought grilled chicken or grill it yourself, add smoked turkey, or Virginia ham, it really comes down to what you like or have.

Grilled Chicken and Ham Sandwich

Grilled Chicken and Ham Sandwich

Easy and tasty recipe for Grilled Chicken and Ham Sandwich.

Prep Time 5 minutes
Cook Time 10 minutes
Total Time 15 minutes

Ingredients

  • 12 inch French Bread
  • Smoked Provolone cheese
  • Grilled chicken breast
  • Virginia ham
  • Kosher Pickle slices
  • Pickled jalapenos
  • Baby Spinach
  • Scallions or Red Onions
  • Black pitted olives

Creamy Sriracha:

  • 1/4 cup 2 fl oz/59ml ranch dressing
  • 1 tablespoon mayo
  • 2 tsp. 2ml Sriracha
  • Mix it together and drizzle.

Instructions

  1. There is no direction here, just build a sandwich, however, you would like.
  2. I slice the bread in half and place cheese on the bottom side, then broil until it is toasted, bubbly and cheese completely melted. You can actually use a toast bread and toast in the toaster, then melt cheese in the microwave.
  3. Creamy Sriracha: this for me was not too spicy, not at all. I could go for a few more tsp. to get a really spicy kick.

Notes

If you want to make your own bread rolls go ahead, or one from Pillsbury. they are really tasty. To save yourself time, I would suggest hoagies. They are so good and perfect size, but you may use baguette or Italian bread.

Pumpkin Spice Cookies

Pumpkin Spice Cookies

Pumpkin Spice Cookies

I just love the fall time and all the aroma in the air. Pumpkin spice cookies, lattes, and apple pies.

When my kids smell cookies baking in my oven they have this amazingly happy expression on their faces.

I think, or better said, I hope they will never grow out of making that happy expression when cookies are baking. It makes my heart melt.

While they were picking the leaves outside, and cleaning our backyard on this chilly day, I surprise them with warm milk and pumpkin spice cookies.

Their red and smiley cheeks were all I needed to fulfill my day. These are pretty simple. Not much mess; combine, mix, bake.

Pumpkin Spice Cookies

If you cannot find “pumpkin pie spice”, it basically contains an equal amount of cinnamon, ginger, nutmeg, allspice. I used USDA Organic Pumpkin Pie Spice by Simply Organic.

These are pretty simple. Not much mess; combine, mix, bake. You can personalize them by adding nuts or dried fruit or perhaps chocolate chips.

Prep Time 10 minutes
Cook Time 12 minutes
Additional Time 10 minutes
Total Time 32 minutes

Ingredients

Instructions

  1. Preheat oven to 350 degrees Fahrenheit.
  2. In the bowl combine together by mixing butter and both types of sugar until creamy, then add the egg and vanilla extract, and continue mixing until smooth. Set aside.
  3. In another bowl, mix flour, pumpkin pie spice, salt, cinnamon, baking soda, and oats together.
  4. Gradually add the flour mixture to the wet ingredients on low speed. Stir until well incorporated.
  5. After combining all the ingredients, place in the fridge for about 10 minutes just for you to easier scoop on the baking dish.
  6. Place cookie dough balls (I use a 2 tablespoon sized scoop) on a baking sheet. This is completely optional. but I like adding sugar marks on the top of the cookies just like you would on peanut butter cookies. So I dip my fork into water then sugar and pressing it onto cookies. This is just gives a bit extra taste or texture and sweetness. Then I sprinkle with some more oats. Like I said, it is completely optional.
  7. Bake for about 10-12 minutes in the preheated oven.
  8. Allow the cookies to cool on the baking sheet for a few minutes, and then transfer them to a cooling rack.

Notes

Pumpkin Spice Cookies

You may add raisins or even chocolate chips if you like.

Chopped nuts, as well as seeds, are always amazing in cookies.

Double Fried Chicken

Double Fried Chicken

Double Fried Chicken

It is a long weekend over here, so Happy Labor Day everyone! Let us start on Friday with fried chicken.

I love it, but I tend to stay away from it as much as possible. Well, I feel always so guilty after eating it, but I keep repeating everything in moderation and it will be okay. I am working hard to burn those calories off so I can eat more yummy things.

It makes me happy though when I bite my teeth into crunchy skin; it is like all the worries go away, the sun shines, you can hear “aaaaa” and I feel that comfort… comfort of happy moments from my childhood.

Double Fried Chicken

Chicken recipes are incredibly popular and versatile for family meals for several reasons. First and foremost, chicken is a lean and affordable source of protein, making it a healthy option for any meal.

Additionally, chicken has a mild flavor that pairs well with a variety of ingredients and seasonings, allowing for endless possibilities when it comes to flavor combinations.

Chicken is also incredibly versatile in terms of cooking methods. It can be grilled, baked, roasted, sautéed, or like in this recipe, fried. Each cooking method imparts its own unique flavor and texture to the chicken, allowing for a wide range of culinary experiences.

Double Fried Chicken

It can be used in a wide range of cuisines, making it a great choice for families with diverse tastes. Whether you’re craving Italian, Mexican, Asian, or Mediterranean flavors, there is a chicken recipe to suit every palate.

From classic dishes like roasted chicken and chicken noodle soup to more adventurous recipes like chicken curry or chicken enchiladas, there is a chicken recipe to satisfy every member of the family.

Chicken can be enjoyed in both classic and adventurous ways.

Traditional favorites like roasted chicken or chicken noodle soup provide a comforting and familiar taste, while more adventurous recipes like chicken curry or chicken enchiladas offer new flavors and culinary experiences.

Double Fried Chicken

Recipes using chicken are often quick and easy to prepare, making them a practical choice for busy families.

Whether it’s a simple baked chicken breast or a more complex chicken curry, most chicken recipes require minimal time and effort. This Double Fried Chicken is simple and satisfying. Serve it with mac and cheese and mashed potatoes for the best effects. Trust me! It is one of my family’s favorite meals.

I have many recipes on my blog using chicken but what is one more recipe, right?! We don’t eat a lot of fried food but when we crave it I make this tasty friend chicken.

Double Fried Chicken

Double Fried Chicken

Ingredients

  • 1 3 4 lb. Chicken cut into 10 pieces,
  • 1.5 cups Corn Starch
  • 2 Large egg
  • 2.5 cups All-purpose flour
  • 1/2 Tbsp. Corn Starch
  • 1 tsp Cayenne pepper or Chili Powder
  • 1/2 Tbsp. Salt
  • 1 tsp. Poultry seasoning
  • 1/2 tsp. Garlic powder
  • Oil for frying, read notes

Brine:

  • 1 gallon Water
  • 1/2 cup Salt
  • 5 Garlic Cloves crushed
  • 1/2 Onion roughly chopped

Instructions

  1. Wash and cut chicken into about 10 pieces, cut any fat or even skin if you prefer. Fill a large pot of water and stir in salt, garlic, and scallions; mix so the salt can get dissolved. Place chicken in and cover. Let it brine for 15 minutes at room temperature (If you plan to cook it later, do not let it brine over 15 minutes on the countertop, it should be placed in the fridge to brine because of the bacteria).
  2. Drain water through a colander, then, wash chicken just a bit with cold water. Use a paper towel to pat dry the chicken.
  3. Use three bowls or plates, in one corn starch, in the other one beaten eggs, and in the third one flour (with corn starch, Cayenne pepper or Chili Powder, salt, garlic powder)
  4. Toss chicken to coat on all sides with corn starch, and place on one plate until ready for the next step.
  5. If you have an oil thermometer, heat oil to 300 to 325 degrees F, if you do not use a little cube of white bread, then drop it into the oil if it browns in a minute, then the oil is ready; Also choose a deep, or very heavy skillet to fry food if you do not have a deep fryer (I used Wok, but it’s up to you). Add oil to the cold pan, leaving a head-space, or space at the top of the pan, of at least 3-4 inches. This allows a safety margin when the oil bubbles up as the food is added.
  6. Now, dip coated with corn starch chicken into the egg mixture, then in flour. Shake a bit to remove excess flour and drop carefully into hot oil.
  7. Cook chicken until golden and cooked about 70 percent through, 6 to 8 minutes. Remove the chicken to a wire cooling rack and continue with the remaining chicken
  8. To make it extra crispy you will drop the chicken again to fry. The second time heat the oil to 365 degrees F. Carefully drop chicken again to fry and should take until chicken is completely dark golden brown, about 3 minutes per side and the internal temperature should be right around 180 degrees.
  9. Remove onto paper towels and serve immediately. It can be also placed in a warmed-up (200 degrees F) oven to keep the chicken warm until ready to be served. The best if you place it on the cookie wire rack over a baking pan, and then in the warm oven.

Notes

OILS for frying: Canola, refined (Neutral flavor, good all-purpose oil) Canola-olive oil blend (Convenient for cooks who like olive oil but want higher heat tolerance)
Almond, refined (Clean, neutral flavor and a high-heat wonder)
Grapeseed, refined (Clean, neutral taste. Emerald green color).

You can use this method and brine for chicken breast fillets or wings if you do not wish to make the whole chicken.
