Ingredients

  • 3 large bakery croissants, halved
  • 6 large eggs
  • ½ cup+ shredded cheese (cheddar, mozzarella, or Swiss), 60g or more
  • 4 slices roasted turkey or ham (approx. 80–100 g)
  • 4 slices cooked bacon (optional, approx. 60 g)
  • Salt and black pepper, to taste
  • Fresh parsley or chives (optional, for garnish)

Instructions

  1. Preheat oven to 375°F (190°C) and lightly grease a muffin tin.
  2. Slice croissants in half and gently press the centers to form a shallow “bowl” that fits into the muffin cups.
  3. Crack one egg into each croissant half, then sprinkle with cheese, salt, and pepper, and mix it up.
  4. Place diced turkey or ham, and cooked and crunchy bacon if using, into each croissant cup, and again slightly mix it to coat. Add a sprinkle more of cheese.
  5. Bake between 20 and 25 minutes, or until eggs are set and cheese is melted and bubbly. (Tip: I initially baked at 350°F for 30 minutes, but raising the temperature to 375°F ensures the eggs cook perfectly without over-browning the croissants.) You can also lightly cover it with aluminum foil to prevent it from burning, but that's just up to you.
  6. Garnish with fresh herbs and serve warm.
