Ingredients

Base:

  • 4 medium flour tortillas
  • Olive oil or butter for brushing

Toppings (choose your favorites):

  • ½ cup pizza or marinara sauce (optional — also great for dipping!)
  • 1½ cups shredded mozzarella cheese
  • Mushrooms, sliced
  • Black olives, sliced
  • Bell peppers or mini sweet peppers, sliced

I love how forgiving and versatile these tortilla pizzas are — truly “what’s in your fridge” kind of cooking. My boys aren’t fans of peppers, so I left those off their pizzas, but that’s the beauty of it — everyone gets their favorite combo!
