Summer is almost here, and there’s nothing better than a bright, refreshing salad to enjoy the season. This Easy Tasty Summer Salad has been one of my favorites for years—a crisp, flavorful combination that’s satisfying and effortless.
Though this salad has appeared on my blog before as a side, it truly deserves the spotlight. I’ve been working with fresh produce for decades, and one thing I’ve learned: there’s no such thing as “ugly” fruits or vegetables. Even slightly imperfect produce can shine in a dish like this.
Creamy avocado, crisp cucumber, juicy tomatoes, and fresh herbs come together with a zesty lemon vinaigrette. My daughter and I often sit down with a big bowl, grab some crunchy bread, and finish it in minutes. That’s how much we love it!
This salad is perfect alongside a summer BBQ or as a simple lunch. After more than 20 years of making and enjoying it, I can promise: you won’t just like it… You’ll love it!

Easy Tasty Summer Salad

Enjoy this easy summer salad with fresh tomatoes, cucumber, avocado, and a zesty lemon vinaigrette. Perfect for a quick lunch or summer BBQ!
Ingredients
- 1 large English cucumber, thinly sliced
- 3 ripe tomatoes, cut into wedges or chunks
- 1/2 medium red onion, thinly sliced
- 2 scallions, chopped
- 1 ripe avocado, diced
- 1/4 cup fresh flat-leaf parsley, roughly chopped
- 2–3 tablespoons crumbled feta (optional)
- Salt, to taste
Lemon Vinaigrette:
- Juice of 1 ripe lemon
- 2 tablespoons extra-virgin olive oil
- 1 teaspoon honey or maple syrup (optional, balances acidity)
- Salt and freshly ground black pepper, to taste
Instructions
- Prepare the salad: In a large bowl, combine cucumber, tomatoes, red onion, scallions, avocado, and parsley. If using, add crumbled feta.
- Make the vinaigrette: In a small bowl, whisk together lemon juice, olive oil, honey (if using), salt, and pepper. Taste and adjust seasoning.
- Combine: Pour the vinaigrette over the salad and gently toss to coat evenly, being careful not to mash the avocado.
- Serve: Enjoy immediately with crusty bread, or as a side to grilled meats or fish.
