Slow Cooked Pulled Pork Sandwiches

Slow Cooked Pulled Pork Sandwiches

Tender. Tangy. Utterly irresistible.
Because slow cooking is self-care when life’s a little too fast—and dinner still needs to taste like love.

This might just be the easiest, juiciest weeknight dinner you’ll ever make.

There’s something deeply satisfying about tossing a seasoned pork roast into the slow cooker. You let it bubble away, low and slow, while your whole house fills with the mouthwatering scent of BBQ.

The result? Juicy, fall-apart pulled pork that practically melts in your mouth. And it makes the most comforting, no-fuss sandwich you’ll ever serve on a weeknight.

I’ve had some incredible BBQ in my time. Living in the South definitely has its perks. From famous Memphis-style ribs to Carolina’s vinegar-spiked sauces—and here in Nashville, where bold BBQ flavors shine—we are spoiled with smoky, saucy, finger-licking-good joints.

However, as much as I love finding new spots, there’s something extra special about recreating those flavors at home. Especially when it’s this easy.

Paired with gooey melted cheese and spicy pickled jalapeños, it hits all the right notes. Or, if you’re feeling fancy, layer it with crisp dill pickles and creamy coleslaw. Either way, this sandwich satisfies every craving: tangy, savory, cheesy, and spicy.

It’s also the kind of meal that tastes like you spent hours in the kitchen… even though you barely lifted a finger.

Whether you’re feeding a hungry family, meal-prepping for the week, or just craving something bold and comforting, this recipe has your back. Bonus: the leftovers reheat beautifully, the cleanup is minimal, and it’s endlessly customizable.

Slow Cooked Pulled Pork Sandwiches

Slow-cooked pulled pork sandwiches made with tender pork, bold BBQ sauce, and easy toppings—perfect for busy weeknights and family dinners.

Prep Time 10 minutes
Cook Time 8 hours
Total Time 8 hours 10 minutes

Ingredients

  • 3 to 4 lb boneless pork shoulder, well trimmed
  • 1 cup of your favorite BBQ-style slow cooker sauce, any flavor works—choose what your family loves!

To serve:

  • Soft sandwich buns or rolls, any you prefer
  • American cheese (deli) thicker slices or your favorite melty cheese
  • Pickled jalapeños

Optional toppings: coleslaw, dill pickles, red onion, extra BBQ sauce

Instructions

Prep the pork:

  1. Place the pork shoulder in the slow cooker. Pour your sauce over the meat, and stir in sriracha if using. No extra water needed.
  2. Cook low and slow: Cover and cook on LOW for 8–10 hours (or HIGH for 5–6 hours) until the pork is tender and shreds easily with a fork.

Shred and serve:

  1. Transfer the pork to a cutting board and shred with two forks.
  2. Return to the slow cooker and stir into the sauce.

Assemble your sandwiches:

  1. Add cheese in the bun. I like to cut my slices just a bit thicker, like a sandwich slice, not too thin (you can definitely ask them to do that for you).
  2. Layer shredded BBQ pork on buns, add the top, and bake for 8 minutes or air fry for 3 minutes or until the cheese is melted.
  3. Add your favorite toppings—jalapeños, pickles, slaw, or a drizzle of extra sauce.

If your buns don't have sesame seeds, you can brush on a bit of melted butter with garlic and parsley for extra tasty sandwiches. These are always a hit in my house, so I know they will be in yours too.

Notes

  • Protein swaps: Try with boneless chicken thighs or beef chuck roast—just adjust the cook time accordingly.
  • Make it a bowl: Skip the bread and serve it over rice, cauliflower mash, or a hearty salad.
  • Where to find sauces: You can find great slow cooker sauces at most grocery stores (Walmart, Target, Publix) or online.
