Let’s make Thai Hummus Pizza with Butternut Squash and Vegetarian Sausages.

My family loves pizza—I mean, who doesn’t? But this one is definitely not your traditional slice. It’s a fun, flavorful twist that’s completely plant-based and packed with bold Thai-inspired flavors. And to my surprise, my family keeps asking for it more and more!

Pizza can take on so many forms, and while we all have our favorites, this Thai Hummus Pizza is now high on our list. I used Thai Coconut Curry hummus from HOPE, which adds a deliciously creamy texture and just the right amount of spice. It’s unique, a little bold, and absolutely addictive.

For toppings, I went with roasted butternut squash and Field Roast Vegetarian Sausages—specifically the Mexican Chipotle flavor for that extra kick.

I still can’t get over how much these sausages taste like the real thing. If you’re trying to cut down on meat or just want to mix it up, this is a fantastic option.

Of course, what’s a pizza without cheese? We used Daiya Mozzarella Style Shreds, a dairy-free alternative that melts, bubbles, and stretches just like regular cheese. But if you’re not avoiding dairy, feel free to use your favorite mozzarella or mix of cheeses for pizza. This pizza is incredibly versatile.

I aim to make meatless meals at least twice a week, and dishes like this one (and my recent Vegetable Hummus Pizza) make it easy and exciting.

This Thai-inspired version is especially great for weekends when you want something fun but still nourishing.

Thai Hummus Pizza

Thai Hummus Pizza with Butternut Squash and Vegetarian Sausages

Tasty recipe for Thai Hummus Pizza with Butternut Squash and Vegetarian Sausages

Ingredients

  • 1 Pizza Dough 1 Lbs.
  • 1/4 Butternut Squash sliced (more if you wish) + Olive Oil+ Salt, etc.
  • 1 tablespoon Thai Coconut Curry Hummus
  • 2 links Vegetarian Sausages sliced
  • 1 cup Cheese

Instructions

  1. Make your own pizza dough or use store-bought.
  2. Preheat oven to 375F.
  3. Peel and slice about 1/4 of the Butternut squash, slice into thin slices. Place on the baking sheet and season it with salt, ground black pepper, dried parsley and a drizzle of olive oil. Roast for 15 to 20 minutes in preheated oven.
  4. Roll the dough into the shape that you desire, I used a rectangular baking pan, lined with a sheet of parchment paper.
  5. Place the dough in the baking pan and stretch all the way the end of the pan.
  6. Add about 1 tablespoon of Thai Coconut Curry Hummus, and spread it evenly.
  7. Place bit of cheese on the bottom, then add roasted butternut squash slices, then add sliced vegetarian sausages.
  8. Heat the oven to 400F.
  9. Bake for 15 to 18 minutes, or until the cheese is completely melted and the crust looks golden. Serve hot, and preferably with salad!

Homemade Biscuits are the best! I love whipping some on the weekends, or Friday night so we have them ready for our Saturday breakfast.

They are really easy, as you can see. My kids love them with Irish butter or sour cream/cream cheese. I call these biscuits simple pleasures in life.
Combine cheese + bacon and I am the happiest gal.

You can also store these in the ziplock bag, and keep in the fridge for a couple of days. Just reheat in the microwave when you need to eat.

I mean, they are so simple that you can double the recipe and just keep it for your weekly biscuit fix. Sometimes, if I have any, I’d just heat it and drizzle honey on top.

Mmm…. that feeling when you take the bite of savory and sweet. I can’t even. It just hits a spot with hot coffee or a tea.

Ingredients

  • 2 cups all-purpose flour
  • ½ teaspoon salt
  • 2 teaspoons Baking Powder
  • 1/4 teaspoon Baking Soda
  • cup cold Buttermilk
  • 2 tablespoons cold unsalted butter diced
  • ½ cup of shredded cheddar cheese
  • ½ cup Monterey Jack
  • 1 tablespoon Dried Parsley
  • 4 strips cooked hickory smoked bacon sliced into small pieces

Instructions

  1. In a large bowl, combine the flour, salt, baking powder, baking soda, and stir to combine, then add buttermilk.
  2. Add cold cubed butter, cheddar cheese, and parsley, mix — reserve some cheese for the end topping, if desired.
  3. Cook bacon in the skillet, and add to the mixture, discard at least half of the bacon grease.
  4. Stir the mixture until everything comes together.
  5. Spoon about 1/4 cup pieces of dough and place them in the lined up baking pan with parchment paper. Repeat this for the remaining dough.
  6. Add a bit of shredded cheese on top, if desired.
  7. Place the baking pan in the refrigerator for 20 minutes, so the biscuits could chill before baking.
  8. Preheat oven to 450 degrees Fahrenheit.
  9. Place the baking sheet in the preheated oven and bake until the biscuits are golden brown, 20-25 minutes.
  10. When done, take it out of the oven and cover the baking pan with a kitchen towel for about 10 minutes, and serve with butter or any spread that you like.

Recipe Notes

You can add chopped chives or even green onions. It gives you another amazing flavor and aroma. Make sure to make a space between before baking. They will grow a bit. Use some of the bacon greases in the mixture. It gives you wonderfully moist biscuits. You can also fry this mixture, just by spooning the dough into the hot oil. Fry until the float on top and take out on the kitchen paper towels. If you do not eat bacon, please skip. You can use turkey bacon if you wish. They do not have to look perfect. Just add to look somewhat like a biscuit. They suppose to look homemade and rustic.

I served this bread with marinara sauce, of course. I am going to tell you that I made the most delicious chicken wings too, Spicy BBQ baked wings to go with these and they were finger licking freaking good.

Pull Apart Two Cheese Bread
Pull Apart Two Cheese Bread is simple, tasty and perfect to serve any time of the week with any meal, especially pasta.

Book Time 20 minutes

Ingredients

  • 1 Artisan bread loaf mine is Italian bread
  • 1 lb. Mozzarella Cheese block sliced
  • 1 1/2 cup Shredded Sharp cheddar cheese
  • 1/4-1/2 cup Butter melted
  • 1 tsp. Dried Parsley + Sprinkle more before baking
  • 1 tsp. Garlic powder

Instructions

  1. Preheat the oven to 375°F / 190°C

  2. Cut the bread into squares, but do not cut all the way through the bread -as shown in the video. First, you slice it, into the thickness of the slices that you want, then you go across and slice it again. You will end up with little squares.

  3. In between add mozzarella slices, you can use more or less, I thought one slice per wedge is enough.

  4. Open up those wedges that you placed mozzarella and add shredded cheddar cheese.

  5. Melt Butter, you can use more butter and drizzle it in between the wedges or cracks too.

  6. In the melted butter, add dried parsley and garlic powder, and drizzle over the bread. Sprinkle a bit more of dried parsley.

  7. Place aluminum foil under the bread, then make a little dome and cover the bread. You want the cheese to melt, and not bake the bread.

  8. The bread will become more crunchy as the cheese is melting due to the heat, but it will not get dark as it would be if you would do it without the aluminum foil.

  9. Bake for 20 minutes or until the cheese is completely melted and almost oozing out.

  10. Serve the bread whole and immediately, or cut in between the wedges all the way down, place on the platter and serve with marinara sauce.

  11. Leftover bread Wrap in the plastic wrap (film) or large ziplock bag and keep it in the fridge up to 3 days, it can be heated in the microwave and before serving.

Notes

The best bread, in my opinion, is the artisan, a bit harder, but not too dark. Try to pick one that is a bit lighter, because it will get a tad darker in the oven.

You can use, Mexican Cheese blend, or Italian Cheese blend, too. Mozzarella, a bit thicker slices are recommended. You can add about 1/2 stick of garlic-herb butter before adding the cheese, then on the end and before baking drizzle more butter. It gives you this amazing taste and aroma.

Recommending because I tried it!

I used 1/4 c of Irish Butter, added herbs, garlic powder, mix but keep it cold. Add in between the cracks, then add cheese. Before baking, melt 1/4 c of butter with garlic and herbs and drizzle on top. So good!
