Indeed, even on the darkest days, this delicious platter of Massaged Kale and Strawberry Salad could make you grin with a joy.

I had incredible few days with my girls. Three or four hours passed by like it was 20 minutes, but that’s always the feeling when I am with my awesome girlfriends.

Well, we like walking around the neighborhood, coffee time, breakfast, chuckling.

Honestly, that makes me happy. More often than not, we talk about what we will make for lunch, or that is my thing.

I assume in light of the fact that I generally begin that discussion.

Massaged Kale and Strawberry Salad

Since I talk about things that make me happy at the moment, I often sit in my yard and think about pretty much everything.

I came to the conclusion that life is simple, but we make it so complicated sometimes, well, most of the time.

My oldest son would say just about now: “No dip, Sherlock.”

Small things do fulfill me, satisfy me, make me happy. On the other hand, to better clarify regardless of the fact that it’s cliché somehow.

Nonetheless, the fact is that I am simple person. Even those little things are acknowledged, appreciated more than you would suspect.

I am thankful for anything great that comes my way. I cry even when I am happy, but, of course, those are always tears of joy.

Massaged Kale and Strawberry Salad

A few days ago, my 9 years old returned home from school, parked his tush on the sofa, turn on his Gameboy while waiting for me to fix him quick after-school snack.

All of the sudden I heard a melody that I haven’t heard in quite a while. I was shocked that he even knows the song, let alone the lyrics.

Without interrupting, I let him sing it. “What’s up” song by 4 Non-Blondes came out in ’93, or that is the year when it became huge.

I still remember it like it was yesterday singing every day when it came on MTV.

“And I say, hey yeah yeah, hey yeah yeah… I said hey, what’s going on?” 

That made me smile, smile big…

Delightful sounds of music could fill your heart with joy, much the same as this delicious plate dependably fill my heart with joy.

Makes my day somewhat brighter, somewhat more content, a little happier even when I am feeling blue, or down.

Recipe

The taste is astounding, since kale is a solid dull green vegetable, and strawberries adjust that exceptionally well in your gut.

I included a modest amount of organic cashews for additional crunch and nutrition, seasoned with sea salt, and massaged kale in this divine and simple homemade vinaigrette.

I hope you like it as much as I did. It is probably one of my top 5 favorite salads ever.

Massaged Kale and Strawberry Salad

Massaged Kale and Strawberry Salad

Easy and tasty Kale and Strawberry Salad with cashews

Prep Time 10 minutes
Total Time 10 minutes

Ingredients

  • 4-6 cups Kale chopped
  • 1 1/2 cup Strawberry sliced (249g)
  • Cashews (read notes)

Vinaigrette

  • 3-4 tablespoons olive oil
  • 3 tablespoons lemon juice
  • 1⁄2 teaspoon Italian herb mix
  • 1⁄2 teaspoon minced garlic
  • Sea salt and black pepper to taste

Additional items for dressing or salad:

  • Shredded carrot
  • Seeds
  • Lemon zest
  • A drizzle of Dijon mustard

Instructions

  1. Add chopped kale to a large mixing bowl, wash if needs to be washed.
  2. Combine all the ingredients for vinaigrette in a jar with fitted lid and shake, shake until well mixed.
  3. .Pour mixed vinagrete over the kale and massage kale for about five minutes, or until leaves are tender.
  4. Slice strawberries, and gently toss them with kale.
  5. Lastly, add cashews and enjoy.

Notes

  • The serving size of kale is 1 cup, however, after you massage the kale it goes way down like when you cook spinach. Be your own judge how much is enough for you.
  • The serving size of cashews: 16 cashews. Use as many as you like, I just wanted you to know that. 200 cal. = 22 cashews I used a handful, didn't count, to be honest.
  • If you do not like strawberries or you are allergic, use other fruit such as mandarine, oranges, other berries, pomegranate seeds, etc.

Sitting in my living room, and sipping on my first cup of freshly brewed coffee one early morning, I had cravings for roasted cauliflower.

It is nothing unusual for my cravings to start working early. Even though I am genuinely a poor breakfast eater. Coffee and maybe a pastry that is about it for me on the most mornings. However, that morning was different. I was craving this. My thoughts were running wild.

Building a recipe fast and furious in my head before lunchtime starts. What could I combine it with? Of course, the roasted chicken came to mind. Which by the way was a delight having with this roasted cauliflower and simple, classic guacamole.

The simplicity of this dish is absolutely amazing, but the complex combination that brings you sour with a hint of spiciness, along with savory smooth taste.

It is just a perfect, healthy and a delicious side dish. Bringing together power foods such as cauliflower, avocado, garlic, and lemon with an explosion of flavor that you will love when they are combined together in a unique way.

Guacamole over Roasted Cauliflower

Ingredients

  • 1 medium head Cauliflower fresh/medium size,
  • 1 tbsp. Olive Oil
  • Sea salt pinch

Guacamole:

  • 1 Avocado peeled/pitted
  • 6 cloves Garlic roasted and peeled
  • Lemon Juice from 1/2 lemon
  • 1/4 tsp. Chili Pepper powder more if desired
  • 1 tsp. Olive oil
  • Salt to taste 1/4 tsp.
  • Fresh Mint 1 sprig/6-8 leaf, or more + for garnish

Instructions

  1. Preheat oven to 375F.
  2. Wash cauliflower, then separate cauliflower into medium flower buds (it’s alright if some are smaller than the other). Toss the flower buds with the few pinches of sea salt (or any on hand) and olive oil (add garlic cloves to roast too), Roast for 30-35 minutes. After roasting, transfer the cauliflower buds on the kitchen paper towel to absorb extra moisture. Set aside.
  3. While cauliflower is cooling a bit (10 minutes), start with the Guacamole. Wash, open, and pit the avocado. You can use more than one, but ultimately one should be enough. Add all the ingredients, and peel roasted garlic cloves. Roughly chop garlic into smaller pieces before mashing them with the avocado. Season it with salt to taste. I had to add more than a few pinches until it reached my desirable taste. If you like guacamole smooth, then place everything in the food processor, and for a chunky version just mashes with a masher or a fork.
  4. You can mix guacamole gently with the roasted cauliflower, or serve it on the side, spooning it over the cauliflower when you serve it.
  5. Garnish with extra mint, and lemon slices/wedges.

Recipe Notes

Did you know that you can make an amazing pasta dish just by combining guacamole and pasta, adding shrimp or chicken to the mix is another level of deliciousness?! Recipe: Spaghetti in Avocado Sauce and Shrimps If you like more char look on your cauliflower, let it cook/roast for up to 45 minutes.

When I looked through my kitchen window this morning as coffee was dripping down in my mug, I thought it’s going to rain.

Gray clouds surrender the sky and it was rather dark but pretty enjoyable to just sit and look at the birds flying around and making beautiful noises.

I usually go outside with my cup of Joe and it was a comfortable and very peaceful morning, even with only a few hours of sleep that I had.

The smell and taste of coffee and morning crisp air always wake me up and give me that feeling of calmness; I connect with my thoughts, plan my day, go over the schedule and write down some things that are on my mind.

I love to write even though I am not very good at it, but I try. It is almost the same as if you give me a microphone and I start to sing! Then the sun just came out…out of nowhere! Le sigh! I wanted rain!!!

Spicy Tuna Salad

It was kind of day made for rain. If you didn’t notice before I really love rainy days! I love just to listen and relax while it’s pouring outside, Yiruma radio on Pandora is usually in the background, a book in my hands, and of course, coffee or a cup of tea is right next to me. I would say that is my perfect morning or evening.

When I have a really crazy busy day I make this Tuna salad. It is a quick fix, and my kiddos like it, at least my oldest two.

Do I really call it a recipe? Well, nah! But, today, I will call it “the crazy easy short-cut meal”…we all do it, right? Precooked chicken? Takeouts? Leftovers?

Whatever saves me, time man, I am all over it! From time to time I add some cooked beans to it… a very good combo with tuna.

Spicy Tuna Salad IS A PERFECT LUNCH!

Prep Time 10 minutes
Total Time 10 minutes

Ingredients

  • 3, 2.5 oz pouch Tuna StarKist
  • 4 baby Pickles diced
  • 2 tablespoons Onion chopped, optional
  • 2 tablespoon Avocado Mayo or any that you prefer
  • 1/2 tablespoon Sriracha
  • 1/2 tablespoon Lemon juice
  • Salt to taste if needed

Serve it with:

  • Pita Bread or Lettuce
  • Asian Coleslaw fresh
  • Sesame Ginger Vinaigrette or similar

Instructions

  1. Place Tuna in the bowl and mix with relish, avocado mayo, sriracha, and lemon juice. Mix well and taste to see if salt is needed.

  2. Add Sesame Ginger Vinaigrette on top of the Asian Coleslaw and toss it to coat it. Add as much as you wish to please your taste,.

  3. Preheat for about 10-second pita bread. Place tuna salad in the bread, add Asian Coleslaw on top. you may wrap it in the Low carb tortillas of Lettuce Wraps.You may add other toppings if desired.

Notes

I love tuna, and I love to dress it up especially with what I just wrote in the ingredient list. One of my personal favorites is from Starkist tuna from a pouch.

Now you have so many options and you can already get spicy, or lemon-flavored tuna, etc. but to tell you honestly I like it plain and I add what I like.
