I love a good sandwich, especially these amazingly delicious and super easy Bacon Eggs and Cheese Croissant Sandwiches.

It is a comforting breakfast or you may eat it for brunch. Well, we prep it many times even for dinner. Wouldn’t you agree that sometimes breakfast for dinner hits the spot?

Just the other day before my oldest son, Aleks, went to work I made these sandwiches for him.

It was a perfect meal to keep him full until lunchtime. He is on the winter break so he is home from college for one more week.

I like spoiling my kids with good homemade food. To be honest, I think I just love feeding people.

Bacon Eggs and Cheese Croissant Sandwiches

So, if you into making your own croissant, be my guest and made that buttery pastry. However, you can pretty much get them these days in any grocery store bakery.

I got a boxful of smaller or mini Croissant from Kroger’s brand private selection. They were great for these sandwiches. Additionally, it saves you so much time.

Anyhow, I do have many sandwich recipes so my blog that I know you will love. I must recommend one of my favourites, which is similar to this one just by using bagel.

Bacon Eggs and Cheese Croissant Sandwiches

Brunch Bagel Sandwich – egg, bacon, cheese, avocado and lettuce.

Saying that I love bagels is an understatement. I really enjoy nice bagels sandwiches and my family is exactly the same.

I know perfectly well that this sandwich is nothing new, but I wanted to have it on my blog as an idea.

You know when you come and search for sandwiches and you see these beauties. You instantly know that you are craving it.

Scramble some eggs, crisp up your bacon in the air fryer, add a few slices of cheese and you got yourself an amazing breakfast meal.

Bacon Eggs and Cheese Croissant Sandwiches

Recipe

Bacon Eggs and Cheese Croissant Sandwiches are a perfect breakfast or brunch meal.

Prep Time 2 minutes
Cook Time 10 minutes
Total Time 12 minutes

Ingredients

  • 2 slices of hardwood bacon
  • 2 large eggs
  • 1 teaspoon butter
  • Pinch of salt and ground black pepper
  • 1 tablespoon chives, optional
  • 2 oz mild cheddar cheese, or any on hand
  • 2 small croissants or one larger.

Instructions

  1. Place bacon in the air fryer and crip it up for 10 to 12 minutes, depending on your taste, at 360 degrees Fahrenheit. You may also use bacon pre-set temperature on your air fryer. For oven baking: place bacon in the baking pan and bake for about 15 minutes at 350F or until it is crispy to your desire. *If you are baking in the oven, do not toss those drippings. Save them and you may make potatoes or chicken in it. So good!
  2. Meanwhile, make eggs. Crack two eggs in the cup and add salt, pepper and chives which are optional. Mix until the eggs are smooth. Preheat your skillet or frying pan with a dab of butter and at the lower temperature cook eggs. You could make something like an omelette and fold with cheese before adding to your sandwich or you may make scrambled eggs and toss some cheese on top to melt. You have both useful methods below.
  3. Now, open your Croissant just by slicing in half.
  4. Add cheese eggs then slices of bacon on top.
  5. You may heat it all together in the air fryer, microwave or oven for a couple of minutes or until Croissants are softer. Enjoy!

If you are heating sandwich in the air-fryer, use temp of 350F for 3-4 minutes. The time and results will depend on your air fryer.

If you are heating sandwich in the microwave, you will heat it for 20-30 seconds. The time and results will depend on your microwave.

If you are heating sandwich in the oven, you could preheat the oven to 375F, cover sandwiches with alum foil or similar and allow it to get sandwiches heated through for about 5-7 minutes. The time and results will depend on your oven.

Creamy scrambled eggs:

  1. The moment the eggs hit the pan, use a heavy-duty silicone spatula to rapidly swirl in small circles around the pan until the eggs look slightly thickened and very small curds begin to form.
  2. Then try changing from swirling in circles to making long sweeps across the pan so it could cook into larger curds. You may add a bit of shredded cheese on top and before adding in the sandwich.


Cheesy Omelette:

  1. Once the pan is hot, pour in the combined mixture in the pan. Use a heavy-duty silicone spatula to gently move cooked egg in from the edge of the pan to the middle, creating curds.
  2. Slightly tilt a skillet or a pan and rotate to make sure that any uncooked egg fills in any empty spaces that you just pulled in the middle.
  3. When the surface of the egg looks wet but does not jiggle or look too uncooked when the pan is shaken, it is ready for the cheese or any other filling.
  4. Add cheese on one side and fold the omelette in half with a spatula.
  5. Slice in half and you can use one half of the sliced omelette for each sandwich.

Notes

Double or triple the ingredients if you going to make more than one serving. Salt and black pepper technically you will only need a generous pinch of both.

Baked Sweet Potatoes are one of my favorite Autumn treats. It warms your heart and soul, and the pleasant aroma is just enchanting.

I did not grow up with sweet potatoes. The first time I tried sweet potatoes I was 18 or 19 years old.

That being mentioned, when I tried them I instantly fell in love with the taste, texture, and aroma.

It reminded me of these delightful winter squash that we had every fall season. It was not a pumpkin, but not a butternut squash either, somewhere in between.

Baked Sweet Potatoes

I dearly savored it when I was a little girl. I could not wait until squash slices come out of the wood-burning oven. Mmhmm! It was all I wanted and more. The 80s were special in every possible way.

Nevertheless, my kids are not enormous fans of the sweet potatoes, but they would eat a spoon or two. Well, I heartily enjoyed them mostly by myself through the season and I am entirely fine with it.

Typically, I carefully wrap them with alum foil and roast a couple of them to last me a few days. However, since many do not like to use aluminum making them just like this is just fine as well.

Baked Sweet Potatoes

I would recommend making them both ways; sweet and savory. As I said before, I make many of them for later.

I love adding a pat of butter in the hot sweet potato and drizzle with delicious maple syrup. I would rather have that over any dessert, plus it is quite healthy.

Baked Sweet Potatoes

Baked Sweet Potatoes

An easy and tasty recipe for delicious Baked Sweet Potatoes

Prep Time 5 minutes
Bake Time 1 hour
Total Time 1 hour 5 minutes

Ingredients

  • 3-4 pounds organic sweet potatoes

Savory Topping

  • sea salt butter, a tablespoon of each potato
  • dash of salt
  • dash of ground black pepper
  • a sprinkle of dried parsley
  • A drizzle of olive oil

Sweet Toppings:

  • sea salt butter
  • Maple syrup or honey
  • chopped nuts

Instructions

1. Wash them.

The worst way to ruin a sweet potato casserole or stuffed sweet potatoes is with a gritty texture. Scrub the skins lightly before preparing. Pat dry after with kitchen paper towel or just regular kitchen towel.

2. Line your baking sheet with parchment paper or silicone mats.

Sweet potatoes tend to get a little juicy while baking, so lining the baking sheet first ensures easy cleanup. From time to time I forgot to do it or don't have any parchment paper on hand, but it is so much easier to clean up when you do have it.

3. Poke holes!

The pricking technique is always used when baking regular or sweet potatoes—it reduces the baking time and ensures the potatoes won't burst while baking. Poke the potato skin with a fork or knife in a few places before you bake it. We can't predict which potato might burst so this is always a wise idea.

4. Bake until tender.

How can you tell when they’re done? Stick a fork into the thickest part of the potato, if there’s no resistance it’s good to go.

  1. Preheat oven to 425º. On a baking sheet, prick sweet potatoes all over with a fork.
  2. Bake until tender, 50 to 60 minutes, depending on the size of the potatoes.
  3. Let cool, then split the top open with a knife and top with a pat of butter.
  4. Season with salt and pepper dried parsley and serve. You may drizzle with olive oil just before serving.
  5. For the sweet option, add a pat of butter in each potato, then drizzle with maple syrup or honey, perhaps some chopped nuts or even chocolate and marshmallows.

If you are following a low carb lifestyle, then you probably heard of or made these yummy keto-approved waffles.

What are Chaffles-Low Carb Keto Waffles?

I know, by the name you would never tell what it is. I have no idea who gave the name. So Chaffles are waffles made with only shredded cheese and eggs.

You can add different herbs to enchant the flavor, but that is pretty much it. For the best results, I would have to suggest shredding the cheese yourself.

Chaffles - Low Carb Keto Waffles

You will still have marvelous waffles using pre-shredded cheese, but if you do it yourself it is honestly so much better.

I love making these when I am craving a good sandwich, or when I want to pack my kids a low carb lunch. Above all, they are just so tasty and easy to make, plus you only need 2 ingredients which most of us have in our fridge.

It is so easy to upgrade them like add a bit of almond flour, dash of sugar and vanilla to create a tasty low carb sweet waffles.

Although I prefer these savory over sweet because I’ve seen them and I really do not like the idea.

With that being said I have been testing other keto recipes that are full proof and absolutely amazing. I just don’t know which one to post, chocolate or regular. Ahh! Sweet decisions.

I used my regular size waffle maker, which is just fine. I believe any waffle maker would do. My kids really loved these and my husband asked for more.

Well, what’s not to like right? As my daughter, Anna, would say, it is a cheesy omelet made in a waffle form. Oh, and so delightful that I am so sure that you guys going to love.

So this is pretty basic keto breakfast or brunch. Bacon, eggs, and cheese. I should’ve made a few sunny side eggs ’cause I would love it with this. However, this was absolutely perfect.

I served it with some sour cream and just for the presentation, I added crumbles of feta cheese. It just looked like it belonged there.

Wouldn’t you agree? I just loved this plate so much. It hit the spot!

Ingredients

  • 2 large eggs, mixed
  • 1 teaspoon dried parsley
  • 1/4 teaspoon ground black pepper
  • 56g (2oz) Mozzarella Cheese shredded
  • 56g (2oz) Cheddar Cheese, shredded

Instructions

  1. Mix eggs, then add dried parsley and ground black pepper.
  2. Shred cheese and add to the eggs, mix well.
  3. Add egg and cheese mixture on to preheated waffle iron and close it.
  4. Depending on your waffle maker, wait until the light turns on.
  5. My waffle maker makes 4 square regular waffles at the time, which in this case is 2 servings.

Notes

You may use any cheese that you prefer. I enjoy this combo, but you can definitely test and see which one you like the best.
