Golden, crispy on the outside, and fluffy on the inside—these roasted garlic herb potatoes are the ultimate comfort side dish. Perfect with leftover meats, fresh salads, or just on their own, they’re easy to make, flavorful, and always a crowd-pleaser. Follow these tips for perfectly crispy potatoes every time!

Prep Time 10 minutes
Cook Time 30 minutes
Total Time 40 minutes

Ingredients

  • 2 lbs (900g) potatoes, washed and cut into cubes
  • 3 tbsp olive oil
  • 3 cloves garlic, minced
  • 1 tsp fresh rosemary, chopped (or ½ tsp dried)
  • 1 tsp fresh thyme (or ½ tsp dried)
  • Salt and freshly ground black pepper, to taste

Optional:

  • paprika or chili flakes for extra kick

Instructions

Oven:

  1. Preheat the oven to 425°F (220°C).
  2. Toss potatoes with olive oil, garlic, herbs, salt, and pepper.
  3. Spread evenly on a baking sheet lined with parchment paper.
  4. Roast for 30–35 minutes, flipping halfway, until golden and crispy.

Air Fryer:

  1. Preheat air fryer to 400°F (200°C).
  2. Toss potatoes as above.
  3. Cook in an air fryer basket for 20–25 minutes, shaking halfway, until crispy.

Notes

  • Cut potatoes into similar-sized pieces for even cooking.
  • For extra crispiness, soak cubed potatoes in water for 15 minutes before cooking, then pat dry.
  • Don’t overcrowd the pan or basket; air circulation ensures a golden crust.
