I LOVE the taco salad bowl. It is probably one of my favorite quick and easy meals. In addition to lettuce, beans, tomatoes, cheese, avocados and so on you can add any protein that you prefer and include any other topping.

Taco bowls are an ideal alternative to regular tacos since you can get all the tastes of a taco in one convenient dish. For those looking for a tasty dinner that is filling and healthy, this is an excellent choice.

Taco salad bowls are also a tasty and flexible dish that is suitable for any occasion. This is due to the ease with which you can alter them to suit your culinary preferences and dietary needs.

Just how have I never shared this before blows my mind? I simply can’t believe it!

Because my family and I adore it so much, I’ve started making it for us almost every week. I know, but you can never have too many taco days.

It is essential for us, though, on days when you have a little bit of everything and need to empty out your refrigerator before you go food shopping this Taco Salad Bowl is perfect!

Because you can add anything you want, taco salad bowls are also adaptable. Most frequently, taco seasoning is used on ground beef. We also add lettuce, tomatoes, onions, avocado, and a few pickled jalapenos.

Nonetheless, as I mentioned, you are free to include whatever you like.

Taco Salad Bowl Recipe

One of my favorite quick and easy meals is this Taco Salad Bowl which I am making at least once a week for years.

Prep Time 15 minutes
Cook Time 10 minutes
Total Time 25 minutes

Ingredients

Groundb Meat:

  • 1 pound ground beef
  • 1/4 onion, chopped

Taco Seasoning:

  • 1/2 tablespoon chili powder
  • 1 teaspoon sea salt
  • 1 teaspoon ground black pepper
  • 1 teaspoon ground cumin
  • ¼ teaspoon onion powder
  • ¼ teaspoon garlic powder
  • ¼ teaspoon paprika
  • ¼ teaspoon dried oregano

Salad topping:

  • 2 cups shredded letuce
  • 2 avocados
  • 2 tomatoes
  • 1/2 red onion, chopped
  • 1/4 cup pickled jalapenos

Addional Topping:

  • 1 cup salsa
  • 1 cup sour cream
  • 1 cup shredded taco cheese blend
  • Lime wedges

Optional:

  • 1 can beans, drained
  • 1 can corn, drained

Instructions

Cooking Ground Beef:

  1. Cook ground beef for 5 to 7 minutes depending on your skillet with a drizzle of olive oil.
  2. Add taco seasoning. If you do not want to use store-bought, combine all the herbs and seasoning in my ingredient list, which I would recommend because you control what is used in the actual seasoning.
  3. Stir well until the ground beef is no longer pink. Remove any additional grease left over from the meat. I like using 80/20 so there will be some fat left in the skillet.

Assemble the salad:

  1. Place about one cup for each bowl of shredded lettuce on the bottom of the bowl, place cooked ground beef in the middle, and just add whatever you wish to add around the meat; red onion, avocado, cheese, jalapeños, corn, beans, etc.
  2. You can follow my list as well. If you do not have something that is okay. The distinctively nutty flavor is enhanced by crunchy chips like multigrain tortilla chips with flax, sunflower, and sesame seeds.

Notes

If you are following a low-carb diet, then, of course, you should skip beans and corn, so the carbs will drastically go down, which is 14 Net Carbs instead of 33. 33 Net Carbs is still not bad, but if you like to stick to your goals you should not add beans or corn.

Watermelon, Cucumber, and Feta Salad

Don’t you just love refreshing salad? I love salads and eat them all year round, but I know this one is by far the most unique one. Do not discard it, please!

I know you are probably looking at these pictures and saying how would this even work, or it looks disgusting, but trust me it does work and it is pretty good. It is not the most filling salad, but it’s so pretty and refreshing as well. Sometimes we need to step out of our comfort zone and try something new.

To be honest, this is not a new recipe. You may find it in Mediterranean cookbooks and all over the internet, however, I wanted to add my own twists.

Watermelon, Cucumber, and Feta Salad

It will be most definitely served the whole summer long because I love watermelon, and I love the taste of sweet and savory flavors. Also, I added a generous squeeze of fresh lemon and a drizzle of olive oil.

I loved it!

Well, I am just thinking what else should I add to it; arugula, cherry tomatoes, perhaps a radish would go well too. I am not sure just yet, but I will be experimenting.

My family ate it but they were skeptical, however, everything was gone from their plates. It was B+ from them, and I was happy to hear. They are hard to please sometimes, especially if a dish is out of their comfort zone!

SALAD

Anyway, I feel like this would be perfectly served with teriyaki salmon or chicken, but if you want to keep it vegetarian my amazing grilled tofu is a fantastic replacement.

  • 2 cups of cubed melon ( 1 cup per serving)
  • 2 mini cucumbers (you may use Eng. cucumber)
  • Pinch of salt and pepper, or to taste
  • Springle of fresh mint (You may also use fresh basil)
  • Springle of fresh lemon thyme (if you have it add this herb, if not just omit)
  • drizzle of olive oil, any on hand but EVOO is the best for salads
  • 1/2-1 tbsp lemon juice
  • 1/4 cup feta cheese

Instructions

  1. Add everything except for feta in a large bowl and toss.
  2. Sprinkle with feta cheese. I didn't use crumbled version, but I did crumble it myself.
  3. Add to plate and enjoy!

Notes

Watermelon and cucumber work so well together. I feel like fresh mozzarella might work with this recipe too.

You can even grill watermelon slices before cutting them into cubes which would make this salad better.

If you by any chance have sriracha salt, please add that salt instead of any other. It gives you that extra kick.

Feta is salty so add enough salt to please your taste buds, but not too much.

If I could eat Heirloom Tomato Feta Salad with olive oil and herbs all year round I would be a very happy camper.

It is so fresh, sweet, savory, simple, pretty and most importantly delicious salad. One my favorite August salads when tomatoes are at the peak of the season; juicy and tasty!

When I was younger I hated cooked tomatoes or chunky tomatoes in meals. However, I absolutely loved eating tomatoes like an apple, just with a sprinkle of salt.

That is all I needed to survive hot summer days. I am still not a big fan of summer months, but I sure love its delicious produce; tomatoes, watermelon, peaches, cherries, cucumbers, etc., to name just a few of my favorite produce.

I know that most of the time you would see these tomatoes in a popular Italian dish, Caprese with mozzarella and basil drizzled with good olive oil. I wanted to make a conscious twist with Greek imported olive oil and feta cheese. Should we just call this one Greek Style Tomato Feta salad?

Heirloom Tomatos

Anyhow, you guys going to love it. Well, I am almost certain that you will. My daughter and I, we are huge tomato lovers, so we ate it until it was gone.

Heirloom Tomato Feta Salad

Heirloom Tomato Feta Salad

An easy and simple summer salad.

Prep Time 10 minutes
Total Time 10 minutes

Ingredients

  • 3-5 different types of tomatoes
  • Generous pinch kosher salt
  • Generous pinch ground black pepper
  • 1 teaspoon lemon juice, or balsamic vinegar if you prefer
  • 1 block or chunk feta cheese, 7-8 oz
  • 1 tablespoon olive oil
  • 1 teaspoon dried oregano
  • Fresh Oregano for garnish, optional

Instructions

  1. Wash tomatoes then using sharp knife make about 1/4 inch slices. You don't want them too thin but not to thick either. Depending on how many serving you want, you can totally use half of each tomato since some are pretty large. I was serving 4 people so I used all of it. If you have any leftovers you can bake a galette or add on pizza.
  2. Season tomatoes with salt just before serving, and before adding cheese. This way the salt will not start breaking the tomato slices. Same goes for any addition of acidities like vinegar or lemon juice. Do it right before serving.
  3. Now take the cheese out of the box and slice into cubes. Use some kitchen paper towel to dry them a bit if needed.
  4. Add Cheese son top of the tomatoes, drizzle with olive oil, then add a sprinkle of dried oregano and garnish with fresh oregano.
  5. You can use only one, but dried have its own aroma and fresh brings even more freshness which is the perfect combo for this salad.

Notes

You can add some olives or parsley.
