I have always enjoyed croquettes, but with the addition of everything bagel seasoning, this classic French delicacy just got a facelift.

At this moment in time, these beauties are loved all over the world, and every country likely has its own version of croquettes. My Potato and Beef Everything Bagel Croquettes are just a bit different and I love it!

Potato and Beef Everything Bagel Croquettes

Potato and Beef Everything Bagel Croquettes

Simple and easy recipe for amazingly delicious Potato and Beef Everything Bagel Croquettes

Total Time 1 hour

Ingredients

Mashed Potatoes

  • 1 box Our Family mashed potato, read the instruction on the box; Water, butter, salt, and milk
  • 1 large egg, optional

Ground Beef

  • 1 tablespoon oil + for frying
  • 1//2 pound ground beef, 20/80
  • 1 teaspoon onion powder
  • 1/2 teaspoon garlic powder
  • 1 teaspoon kosher salt or to taste
  • 1 teaspoon dried parsley

Assembly

  • 1/4 cup all-purpose flour
  • 2 large eggs
  • 1 1/4 cup plain breadcrumbs, more if needed
  • 2.5 oz Our Family Everything bagel seasoning

Instructions

    1. Follow instruction on the back of the mashed potato box.
      You would need 4-6 servings, depending on how many serving you are planning to
      make. 2 patties are enough per person. You can make 15-16 equal-sized
      croquettes.
    2. Heat a skillet with oil and sauté on the medium-high heat.
      Cook until the meat is completely cooked through, 5-7 minutes. Keep stirring
      and breaking the meat into small chunks. If you have any leftover grease,
      please drain it out before mixing it with the mashed potatoes. You may add one
      egg in the mixture, but it is not necessary.
    3. Wait for a few minutes until the meat is a bit cooled then
      add to the mashed potato bowl. Using a wooden spoon or similar mix together
      very well the mixture. Taste and see if it needs any more salt or pepper. If
      the mixture is too warm to work with refrigerating for 20 minutes and then make
      croquettes.
    4. Make patties between 2 oz to 3 oz. You may use the scale to
      measure. Not necessary, but sometimes handy if you wish your croquettes to be
      the same size. You may also make bite-size croquettes as shown on the pictures.
      They are about the size of a golf ball.
    5. Make patties and place on the tray lined up with parchment
      or wax paper. Cover with it as well and place the tray in the fridge for 30
      minutes so the croquettes could chill. You may prep them overnight as well.
    6. After chilling, place three plates; flour, mixed eggs,
      breadcrumbs with everything bagel seasoning.
    7. Drench into the flour on both sides as well as around, dip
      in the egg mixture then into breadcrumbs mixed with everything bagel; set aside
      and back on the tray. Continue until everything is complete.
    8. Now, you may place it back to the fridge if you do not plan
      to fry these right away or just heat the oil and fry.
    9. Line paper towel on the plate or cookie rack.
    10. Heat about 1 cup of oil for frying.
    11. Never over crowed the frying skillet. Fry 3 or 4 croquettes
      at the time at medium-high heat. Fry for a minute then flip and fry again until
      you reach a deep golden color.
    12. Take out and set on the lined up kitchen paper towel.



Notes

You may make these meatless and use mushrooms or just
chives to create an amazing appetizer.

I tried these with egg and without it. I like it both ways. Adding one egg makes it somewhat more creamy on the inside. It is really not neccecery but you may use it if you would like to test it yourself.

These hold well in the lunch boxes for school or work.

Our Family Everything bagel seasoning contain sodium so please be aware of that before adding too much salt into your croquettes.

As much as I love a good takeout over the weekend, I really don’t see the reason why people don’t make “takeouts” at home because they are so simple.

Just like so many amazingly delicious Asian-influenced meals that I’ve shared over the years, this one is as easy as it sounds and so delicious. After I cook it, my wok goes in the middle of the table and it would be completely clean in less than 20 minutes. My family is obsessed with meals like this. They are super simple and extremely delicious.

You can most definitely use chicken or pork instead of beef. It really comes down to what you have in your fridge or prefers. Also, If you do not eat a meal I am suggesting adding organic tofu.

Easy Beef and Broccoli

Easy Beef and Broccoli Recipe

Ingredients

  • 1 lb Beef thinly sliced
  • 3 tbsp. Soy Sauce lite
  • 1 tbsp. Oil
  • 1 tbsp. Fresh Ginger
  • 1/2 tbsp. Garlic
  • 2 cups Water
  • 1 tsp. Salt
  • 390 g/13 oz Broccoli
  • 1 tbsp. Oil
  • 1/2 tbsp. Garlic

Sauce:

  • 1 tbsp. Soy Sauce Lite
  • 1 tbsp. Oyster Sauce
  • 1/2 tbsp. Sesame Seed Oil
  • 1/2 tbsp. Chinese Cooking Wine / or Mirin - Japanese rice wine
  • 1 tbsp. Cornstarch or all-purpose flour

Garnish:

  • 2 Green Onions
  • Toasted Sesame Seeds

Instructions

  1. Slice beef into thin, bite-size pieces. Asian stores carry already thinly sliced cuts, but if you are unable to find it, slightly freeze your beef and against the grain, and with the sharp knife slice beef.
  2. Marinate: 3 tbsp. Soy Sauce lite, 1 tbsp. Oil, 1 tbsp. Fresh Ginger, and 1/2 tbsp. Garlic. Mix it together to coat. Marinate beef for about 15 minutes (you can go up to 30, but make sure to place it in the fridge if you going to marinate longer).
  3. Cut the bottom of the broccoli, and diagonal slice them. You can use florets or use the whole, just cut about an inch off the bottom.
  4. Boil 2 cups of water, season with salt, and drop broccoli in. Blanch broccoli for about 1 minute. We want crispy broccoli, so as soon as that minute pass, drain and either submerge under cold iced water or wash under cold water.
  5. Heat skillet over medium-high heat, add oil and garlic. Saute garlic for 20-30 seconds, then add marinated beef.
  6. Cook meat for about 5 minutes or until it is completely done.
  7. Meanwhile, mix together sauce: 1 tbsp. Soy Sauce Lite, 1/2 tbsp. Sesame Seed Oil, 1/2 tbsp. Chinese Cooking Wine / or Mirin - Japanese rice wine, 1 tbsp. Cornstarch or all-purpose flour.
  8. Pour the sauce over cooked beef. Cook for about 2 min or less, until it thickens
  9. Add broccoli and toss everything together.
  10. Garnish with chopped green onions and toasted sesame seeds. You can also drizzle some sesame oil as well.

I have been working hard these days especially after reviewing several recipe requests.

With Fall weather already approaching, and football season is here, I thought to share my ultimate comfort finger food, FRIED CHICKEN WINGS.

As much as I really love hearty soups during this time, sometimes a girl gotta have some soul food, right?

Well, I do have kind of a love-hate relationship with fried food. I am aware whatcha gonna say: “Sandra, you’re posting the healthiest smoothies, then heading in the whole different direction!?”

To be honest, we got to indulge sometimes with something like this, plus mashed potatoes, gravy, and collard greens. I mean, who can say NO to that? Not ME, that’s for sure.

Fried Chicken Wings

Anyhow, let’s talk about Fried Chicken Wings. The coating is light, but the skin is incredibly crisp, overall lightly seasoned with just a little kick from chilli powder.

The meat is juicy and tender. Only question remaining, who wants some?

Jokes on the side, it is DA BEST chicken wings that I have made.

1. Delicious. ✓ 2. Addictive. ✓ 3. Crispy. ✓ 4. Juicy ✓- And did I say DELICIOUS? ✓✓✓ Oh, yes!

Fried Chicken Wings

Recipe

Delicious fried chicken recipe.

Prep Time 10 minutes
Cook Time 20 minutes
Total Time 30 minutes

Ingredients

  • 20 chicken wings approx. 3.5 lbs., family pack.
  • 1 1/2 cup/s Cornstarch
  • Peanut Oil or any other with a higher smoking point. For the regular DEEP pan/pot w/ a lid, use between 48-72 FL OZ (1.4L-2.1L) -ALSO it depends on the size of your fryer.

MARINADE:

  • 1/4 chopped Onion OR 1 tbsp. Onion powder.
  • 1 teaspoon Garlic powder
  • 1 teaspoon Chili powder
  • 2 teaspoons salt
  • 1 tbsp. Oil

Instructions

  1. Using a sharp knife, separate carefully the wings at the joint. Remove the toe of the wing and Wash the wings under cold water, as well as the board and knife. You can cut the tips of the wings and discard if you wish. A safe cooking internal temperature for chicken wings is 165°F
  2. In a large mixing bowl, add the ingredients for the marinade. Mix everything to combine. Add chicken wings, and mix, massage, and get all the wings coated with the seasoning.
  3. In another clean bowl, add about 1 1/2 cup of cornstarch. Dip each chicken wing/piece into the cornstarch, shake a bit, then place on the plate. Discard the cornstarch after you are done!!!
  4. Preheat your oil to 375F (190C). And fry in batches. Deep fry the wings until about 90% cooked, about 10 minutes. Drain oil using a wire basket or a wire rack for a few minutes, then drop the wings for the second time, and deep fry it until the wings are crispy, approx. 3-5 more min. The wings should be deep golden brown. Drain oil again in a wire basket or a wire rack for a few minutes before digging in.
  5. Serve immediately!

Notes

You can use Deeper pot/pan with a fitted lid. If you use the lid, the temp., of the oil will not cool as easy, and the chicken will cook faster. Oil: Use any oil with a higher smoking point such as Peanut oil, coconut and olive oil. I used before corn and canola oil and it burns faster,

Use air fryer but results might wary.
