It is getting already humid over here in the music city, and I do not like it at all.

I like Spring, and Fall time and humidity is something that I cannot handle, period.

Cajun Shrimp Lettuce Wraps

I am a swimmer, have been my whole life, literally. So having that pool is like nothing to me if I can’t relax, swim or play with my kids. 

It gets so incredibly crowded, but hey, everyone is trying to cool off. Besides, there are always rivers and lakes, right?!

Back to food talk. I have been trying to eat more seafood and include fresh veggies on our weekly menu. It is working wonderfully. We are all more energetic.

Anyhow, we love shrimps. I do not make them too often. However, a couple of times a month with our pasta, zoodles (zucchini noodles).

Sometimes in sandwiches or taking a healthier road and serving them in the lettuce.

Cajun Shrimp Lettuce Wraps

Also, if you never tried shrimp and grits you are missing out. Well, since doing low carb or ketogenic diet, I am trying to find substitutes such as cauliflower mash. I know it is not the same, but it tastes great.

I just love easy, healthy and fuzz-free meals? You can make them for parties, appetizers or as a salad topper. I mean possibilities are endless!

Yield: Serves 4

Cajun Shrimp Lettuce Wraps

Cajun Shrimp Lettuce Wraps
Prep Time 10 minutes
Cook Time 15 minutes
Total Time 25 minutes

Ingredients

  • 2 lbs. Large Shrimps tiger shrimps, Louisiana shrimps, etc.
  • 1 tablespoon Lime juice
  • Cajun Seasoning to taste
  • 1 tablespoon Olive oil
  • Lettuce such as butterhead lettuce

Garnish

  • Sesame seeds
  • Dry parsley
  • Green onions
  • Fresh Parsley

Homemade Cajun Seasoning

  • 1 teaspoon Sea Salt
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon ground black pepper
  • 1 teaspoon dried oregano
  • 2 teaspoons paprika
  • ½ teaspoon cayenne pepper

Instructions

  1. Wash, peel and devein shrimp.
  2. Add about 1 tablespoon of lime juice (you may sub it with lemon juice), then season it with Cajun Seasoning.
  3. Heat the skillet with one tablespoon of oil, and carefully add shrimps.
  4. Cook for 3 to 4 minutes, remove from the skillet and set on the kitchen paper towel.
  5. Serve it with lettuce, and garnish it with sesame seeds, dry parsley, green onions and perhaps fresh parsley.

Notes

You may use chicken strips if you cannot eat shrimps. Equally delicious, but it takes just a bit more time to cook. You may use Store-bought Cajun seasoning.

Salads, salads, and more salads…  Summer is coming shortly, so I thought to share one my absolute favorite summer salads.

This salad appeared on my blog many times, but always as a side. I’ve never blogged about it. I think it deserves its own, individual blog-post.

I mean, I was there, first to try everything before anyone ever did, and those beaten fruits and vegetables ended up in my kitchen. That’s why I always say, there is no ugly produce.

I will be quite honest with you; since working with fresh produce at the farmers market a very long time ago, nothing would bring me greater joy than seasonal produce.

We can use pretty much everything, even if it is a little beaten on the side.

I tried avocado a couple of years back and fell in love, I talked about it in a few posts before, but everything else I have been eating forever, and I must add it’s one amazingly delicious and refreshing salad.

My daughter and I, we both place an enormous bowl of this salad in front of us and with crunchy bread, we complete it up in a matter of minutes.

Yeah, that’s how much we love it.

Usually, I serve it when we grill, and family and friends gather. It goes perfectly with BBQ, trust me on that one.  

With 20 plus years in my sleeve since I started eating and making this salad, I suppose it’s safe to say that you will not like it, but love this one.

SUMMER SALAD

Ingredients

  • 1 English Cucumber
  • 3 Tomatoes
  • 1/4-1/2 Red Onion if it’s smaller 1/2 onion
  • 2 Scallions
  • 1 Avocado
  • 1/4 cup Italian flat-leaf Parsley, roughly chopped
  • Salt to taste

LEMON VINAIGRETTE:

  • 1 Lemon ripe
  • 2 tablespoons Olive Oil
  • Salt and Black Pepper to taste

Instructions

  1. Chop and slice all the ingredients and season with a pinch of salt.
  2. Mix, Lemon dressing, and season according to your taste.
  3. Drizzle lemon dressing over the salad, and lightly toss. -Read the notes

Recipe Notes

If you are bringing a salad to work-lunch, do not add dressing, pack it in the little jar or container. I would suggest getting avocado just a tad harder if you are not planning to eat it right away.

If I don’t hear at least 15 times daily “I am making a smoothie“, it will rain axes.

Seriously, some commercials get stuck in my kids’ brains and they just keep repeating same sentences over and over again. It gets pretty annoying, to say the least.

I make smoothies probably 5 times a week, for a whole family. It’s something we made it as a routine. I really love that idea very much. It’s like raw vitamin packed glass of goodness.

Anyhow, I never used raw Aloe Vera before. Even though it is quite disgusting to scoop out a flesh or a gel that is inside of the leaf, I add a bit in our smoothies. It mask it well with other delicious and nutritious ingredients.

On the other hand, my husband could eat it raw. Just like that without any hesitation.

Kale, Aloe Vera, Banana, and Strawberry Smoothie 


If you never tried raw Aloe Vera, well, it is slimy and bitter. Very bitter, but fantastic for your body. Sometimes, we do overlook the taste as well as the slimy flesh when we now how healthy it is.

How to peel Aloe Vera:

Cut the aloe Vera leaf in sections, then with the sharp knife, carefully slice it in the middle, lengthwise.
Slice the flesh off with the knife or scoop it, if you wish and store in the lidded jar or airtight container. Keep it in the fridge and use as needed.

Ingredients

  • 6 strawberries
  • 1 large banana
  • RAW aloe Vera – A couple of slices of aloe Vera gel.
  • 1 cup Organic Aloe Vera Juice
  • 1/2 cup Greek Strawberry Yogurt
  • 2 cups Kale
  • Handful ICE-CUBES
  • Sweeten to taste

Add-ins options:

  • Flaxseeds
  • Hemp Seeds
  • Chia Seeds

Instructions

  1. Blend everything for about 2-3 minutes, or until well blended and smooth. I used NutriBullet
