These days I spend experimenting with low-carb bread recipes. So, that’s how these easy low-carb and I might add keto-friendly savory scones are born.

I dearly miss bread, so I had to come up with something to satisfy my bread cravings. When I just started with Keto, I was definitely doing a clean version, but two months into it I switched to more of a dirty keto diet.

Now, full 5 months into it, I am still doing intermittent fasting, and eating low carb but not as restricted. I must say that I do feel good!

So, I am planning to continue with this lifestyle because it helped me in so many ways. Not only that I lost weight, but my sleep improved, my mood, skin, hormones, etc. Also, got so much more energy. When I say that I feel good, I really do.

I tested so many low-carb bread recipes. Some were pretty successful like these Low Carb Savoury Scones, as well as Keto bread and mini keto bagels.

I am planning in the near future to play with the low carb tortillas because why not, right? All I need is a tortilla press and I am good to go. There is always something that I need. It is not even a joke.

Anyhow, I hope you guys like these scones. I am trying to add nutritional information under each recipe, BUT it will take some time since I am doing it manually. Well, there is no other way.

These days I spend experimenting with low carb bread recipes. So, that's how this easy low carb and I might add keto friendly savoury scones are born.

Prep Time 5 minutes
Cook Time 20 minutes
Total Time 25 minutes

Ingredients

  • 200 grams of Almond Flour, Flour Bob's Red Mill, 2 cups
  • 80 grams Flaxseeds Flour, Organic Flax Plus, approx. 3/4 cup
  • 1/4 teaspoon Kosher Salt
  • 1/4 teaspoon Baking Soda
  • 1 teaspoon Baking Powder
  • 2 Organic Whole Raw Eggs
  • 4 ounces Cream Cheese
  • 4 tablespoons Irish Butter Unsalted, Kerrygold

Instructions

  1. Preheat oven to 375 F/190 C and line your baking pan with parchment paper or Silicone non-sticking baking mat.
  2. Add salt, baking powder and baking soda to the almond flour and flaxseed meal, then mix it. 
  3. Add all the other ingredients and mix until everything is well combined. If you are doing low carb, especially Keto measures your ingredients.
  4. Oil or water your hands and make equal size dough patties, about 1/4 inch thick. Note that oiling or making your hands a bit wet will be easier to form these scones.
  5. Bake the scones for about 20 minutes. Serve warm!

Notes

After they are cooled down you may place them in the airtight container with the fitted lid and keep in the fridge. You may also heat these scones or toast before eating.

I make 6 because higher calories support my diet, but it can be easily adjusted to 8.

You cannot get a meal more simple than these Beef and Sauce Stuffed Spaghetti Squash Boats. Yes, it does take some time until the squash is cooked but that is pretty much it.

My husband and I devoured this one. Even though I did not use the largest spaghetti squash, we could not finish it so I say one of these serves four people. Especially if you serve it with salad or some type of bread.

We do not consume bread as before and still, this was a pretty satisfying lunch or dinner.

Now, there are a couple of things that you can add like sauteed peppers, celery or addition or onion.

You can chop everything and just sautee before adding meat to the pan. Also, you may like your own tomato or Italian sauce. It is totally versatile and you can use whatever you wish to add.

Beef and Sauce Stuffed Spaghetti Squash

Beef and Sauce Stuffed Spaghetti Squash

Ingredients

  • 1 medium Spaghetti Squash 2 to 3 pounds
  • 1 generous Pinch Salt and Black Ground Pepper
  • 1 drizzle Olive Oil

STUFFING

  • 1/2 tablespoon Olive Oil
  • 1/2 pound Ground Beef 80/20 or whatever you prefer
  • 1 teaspoon Onion Powder you can saute 1/4 of medium chopped onion instead.
  • 1 pinch Salt and ground black pepper each or to taste
  • 1 teaspoon Italian Herbs, Blend
  • 1 1/2 cup Pasta Sauce any sauce that you prefer
  • 1 teaspoon Dried Parsley for garnish
  • 1/4 pound Cheese, freshly sliced of shredded mozzarella, provolone, or mild cheddar cheese works

Instructions

  1. Cut squash in half lengthwise and scoop the seeds out using a spoon. Place squash, cut side down, in a baking dish. Fill pan with hot water to a depth of 1/2 in. Bake, uncovered, at 375 degrees Fahrenheit for 35-40 minutes or until tender. I use a knife or a fork to punch through on the side of the bowl. If tender the squash is done. Remove all the water out of not evaporated, then turn the squash halves on the other side.Add a pinch of Salt and pepper in each just to season it, drizzle with a drizzle of olive oil and allow it to roast for an additional 10-15 minutes at 375F.
  2. Meanwhile, make a beef sauce by sauteeing ground beef. Remove excess grease if you wish before adding spices and seasoning. To the ground beef add onion powder, Italian herb blend, salt, and pepper to taste. When the meat is cooked and not bloody add about 1 1/2 cup Sauce. I used Beef flavored sauce.
  3. When the squash is cooked and cool enough to handle, use a fork to scrape the squash making squash spaghetti stand.
  4. On the top of spaghetti squash add an equal amount of beef sauce on top, using fork mix it a bit coating spaghetti squash with the sauce, then add cheese. You can also take the spaghetti squash out completely and layer it like lasagna (sauce, squash, cheese, etc.) using skin as a bowl, but I prefer it this way.
  5. Place it back in the oven and bake uncovered, at 375 for 10-12 minutes or until the cheese is completely melted.Enjoy!

Notes

You may use ground, minced or diced chicken bites for this recipe.

You guys know that I was baking a homemade bread almost every single day. If not bread than some kind of rolls, focaccia or flatbread.

I am one of those people that would eat heartily bread with pasta. Yup! Guilty as charged… but that was it! It was a time for me to change.

Keto Bread- Easy and Delicious Low Carb Bread

Well, I am entering my fourth week and I feel freaking fantastic. I lost lots of inches, a nice chunk of weight for a beginner, not too much like some people, but it is going slow and steady which I like the most.

My sleep and energy level drastically improved, I no longer snore, I have far fewer cramps and no headaches. Overall, so far so good!

I know we all have different successes and even failures, some see amazing results in a shorter period of time and for some of us takes time. That’s okay. We are all different and unique.

What can I say? I have never felt better, however, yes, I missed bread the most so I made my own. We tried to experiment for a week with it, and I think this is it. I absolutely love this version.

Keto Bread- Easy and Delicious Low Carb Bread

The first one that I made was too eggy and buttery, so I dropped to six-room temp eggs, added ghee instead of coconut oil, and used a bit of sour cream to make it rise up a bit more.

My family wanted to support me so they join Keto Fun as well. So now, I need one fridge just for bacon and eggs because they literally ate over the weekend my week supply of both.

Also, they sincerely love this bread as well and it was gone for lunch. Like, seriously?! I could eat this bread all week long. LE SIGH!

Cook Time 35 minutes
Total Time 45 minutes

Ingredients

  • 200 g Almond Meal Roughly 2 cups
  • 1 teaspoon baking powder
  • 1 teaspoon Guar Gum or 1/2 teaspoon Xanthan Gum
  • 1/2 teaspoon Salt
  • 50 g Ghee softened
  • 30 g Unsalted Irish Butter room temperature/softened
  • 1 tbsp. Whole Sour Cream
  • 6 Large Organic Eggs Simple Truth, Cage Free, room temperature

Instructions

  1. Preheat oven to 375 F
  2. Measure everything, mix eggs, and softened ghee and butter.
  3. Combine one by one, start with almond meal flour, then add baking powder, salt, guar gum or xanthan gum; Mix it then add, butter/ghee, sour cream, and eggs.
  4. Line the baking pan with parchment paper or just lightly grease a nonstick baking loaf pan.
  5. Bake for 35 minutes, or until it is golden on the top.
  6. Take it out of the oven and slide on the cooling rack. Allow it to cool for about 10 minutes before slicing and eating.
  7. Store in the fridge for up to a week. Make sure it is in the airtight container or ziplock type of bag

Notes

Use Room Temp Eggs. Just leave them on the countertop for 15 minutes or you may drop them in the warm water for 5 minutes to warm up. The bread turns much better.
