Ingredients

  • 8 oz (225 g) pasta tubes (manicotti or cannelloni)
  • 1 tablespoon olive oil
  • 10 oz (280 g) frozen spinach, thawed and squeezed dry
  • 15 oz (425 g) ricotta cheese
  • 1 cup (100 g) shredded mozzarella cheese, plus extra for topping
  • 1/2 cup (50 g) grated Parmesan cheese
  • 1 large egg
  • 2 teaspoons Italian seasoning
  • 1 dash of crushed red chili peppers
  • 2 garlic cloves, minced (or 1 teaspoon garlic powder)
  • Salt and black pepper, to taste
  • 2 cups (480 ml) marinara or pasta sauce
  • Fresh basil, for garnish

Instructions

  1. Preheat oven to 375°F.
  2. Cook pasta tubes according to package directions until slightly firm. Drain and cool.
  3. In a bowl, combine ricotta, spinach, mozzarella, Parmesan, egg, garlic (or garlic powder), Italian seasoning, salt, and pepper.
  4. Spread about 1 cup of pasta sauce in the bottom of a baking dish.
  5. Carefully fill each pasta tube with the ricotta mixture using a spoon or piping bag. piping bag is always the best option but if you do not have one, you can use a large ziploc bag to mimic the bag or simuly use smaller spoon.
  6. Arrange stuffed pasta in the baking dish.
  7. Spoon remaining sauce over the top and sprinkle with extra mozzarella cheese.
  8. Bake for 20 to 25 minutes or until bubbly and golden.
  9. Garnish with fresh basil and serve warm.
