No Bake Carlota de Limon Cheesecake is a simple and easy recipe for every occasion.

Ingredients

  • 1 can (14 ounces) Sweetened Condensed Milk
  • 1/2 (6oz) can Evaporated Milk
  • 1 - 8oz cream cheese, room temperature
  • 1/4 cup fresh Lime juice, strained
  • 1/4 cup lemon juice, strained
  • 30 Maria biscuits (cookies), approx.

Garnish:

  • 1/2 Lime, thinly sliced
  • 1/2 lemon, thinly sliced
  • 5 Maria cookies, chopped
  • Fresh mint leaves
  • Grated lime/lemon peel

Instructions

  1. Blend sweetened condensed milk, evaporated milk, and cream cheese. While blending, slowly add the lime and lemon juice little by little.
  2. In an 8- or 9-inch-square baking dish, add an even layer of creamy mixture then place a layer of cookies. Top with a layer of creamy mixture. Repeat layers with the remaining biscuits and cream mixture. Cover with plastic wrap and refrigerate for at least 4 hours or until firm.
  3. Decorate with lemon slices, chopped biscuits, mint leaves, and grated lime or lemon peel before serving.

Notes

  • You can use graham crackers or any other sweet crackers for this.
  • You can use lemon instead of lime, or use both like me.
  • Sugar is not necessary because we are using sweetened condensed milk.
